Yogurt Fruit & Granola
This is another fallback idea for my kids. They love to make a parfait of yogurt, fruit, and granola in their lunch. I pack it all separate and they love to add the fruit and granola to their yogurt at lunch time. Just make sure that your granola is certified gluten-free!
I actually really love this Paleo granola because it has low sugar levels and doesnt contain oats and other grains. Thrive Market makes a bunch of Paleo granola flavors as well: the pumpkin pie one is totally one of our favorites!
The Alternative: Zucchini Noodle Salad
- 1 teaspoon apple cider vinegar
- Pinch of salt
Using a spiral slicer, slice zucchini into thin noodles. On a cutting board cut noodles to desired length. Toss all salad ingredients in salad bowl. Blend dressing ingredients together in blender and drizzle desired amount over salad.

I do NOT recommend:
- expensive bento boxes theyre usually too small for anyone older than toddlers and way too pricey especially if you have multiple kids as I do

Quick Salads For Healthy Lunches
Fall Harvest Chopped Salad Top a mix or romaine and spinach with sliced apples, pumpkin seeds, pecans, and chopped rotisserie chicken. Drizzle with a balsamic dressing.
Cobb Salad Top romaine lettuce or other greens with a hard boiled egg, deli turkey, tomatoes, and bacon crumbles. Drizzle with dairy free ranch dressing.
Buffalo Chicken Chopped Salad Toss cooked chicken in your favorite buffalo sauce. Top romaine or other greens with the chicken, cucumbers, tomatoes, carrots, avocado, and celery. Mix ranch dressing with buffalo sauce and drizzle on top.
Spinach and Strawberry Salad Top lettuce and spinach with cooked chicken, sliced strawberries, avocado, and walnuts or pecans. Drizzle with a balsamic vinaigrette.
Chopped Asian Salad Combine romaine, carrots, red cabbage, almonds cooked chicken , mandarin oranges, and cilantro. Drizzle with peanut sauce and gently toss to combine.

Why does summer go so fast and winter goes so slow? And as long as were asking questions, what should you pack in your lunchbox if you are gluten free and dairy free?
I cant answer the first three questions, but I can help out with the last question!
Ive gathered up twenty-five easy, healthy, and tasty recipes that are perfect for packing in a lunchbox. Whether you are packing lunches for work, or school, or field trips, there are sure to be some recipes here that youll love!
This post is for you, but its also for me! I needed a little lunchtime inspiration over here as well. When we have to pack a lunch, we tend to turn to the same things again and again. Salmon salad, sesame free hummus and crackers, veggies, granola barswe generally have those on repeat over here.
Whats In This Simple Pantry Chickpea Salad
- No Salt Added Chickpeas: these beans are a major staple in our house! You can usecanned chickpeas , which are already cooked in the can making this an easy recipe to open and prep. I like these chickpeas which are low in sodium so the recipe doesnt get too salty.
- Mayonnaise: I like to usethis dairy free mayo to keep this recipe plant-based, but you can use whatever mayo that you would normally use in recipes. If you dont normally like mayo, trya dairy free version its creamy but still plant based.
- Relish: to give the dish a little sweetness! I like thisChicago style relish which has a nice crunch and as a Chicagoan myself, I love thebright green color of this relish in my mac salad!
- Whole Grain or Dijon Mustard for a really nice flavor and texture, you can use either whole grain mustard, stone ground, or dijon or keep it classic with yellow mustard.
You can use condiment packets if you have those on hand, just make sure to have a plan if you open a new jar of condiment if you dont have power you wont be able to refrigerate. We keep ice packs and some cooler on hand in case we need them.
