Making homemade gluten-free pizza recipe has always been comforting to me. In a lot of cases, you’ll make the gluten-free pizza crust recipe in about as much time as it would take to get delivery or run to the store, so it’s not that much of a time sacrifice when you think about it.
Plus, homemade gluten-free pizza has such a unique taste, something you can’t get from a delivery. And a lot of times, I prefer the taste of homemade gluten-free pizza.
Understand The Importance Of Yeast
In any recipe, yeast can be used to help give rise to your dough. Yeast creates gas that, when cooked, allows your dough to expand. This air helps the inside of your pizza crust stay soft and chewy, while the heat from the oven creates a browned crispy outside. Because there is no gluten, gluten free dough often lacks the structure that most wheat flours provide. The amount of yeast needed to create that structure will vary per recipe, and many recipes may call for other ingredients that may not commonly be found in pizza dough to help create that structure.

Tips For Making These Pizza Rolls
This recipe is as easy as can be. The only real labor is in rolling out the dough and cutting it into rectangles, then filling each separately.
We do have a recipe for muffin-style gluten free pizza bites here on the blog, which is made in a muffin tin. Thats the recipe to choose if youre not interested in rolling out dough. No shame in that game!
Resist the urge to overfill the rolls. If you stuff them too full with sauce, it will leak everywhere. If you put in too much cheese, the same thing with happen. The leaked cheese is still delicious as it bakes on the pan, but the rolls will be empty!
You can use shredded cheese instead of diced cheese, but I find that shredded cheese is harder to keep in place during filling and shaping. You get more density of cheese in the center of the roll when its diced.
Be sure you slice those two vents in the top of each roll before baking. The rolls puff up nicely in the oven, and the steam will find a place to escape on its own if you dont provide an exit.

Par Baking Pizza Crusts
Who doesnt love the convenience of pulling a frozen pizza out and shoving it in the oven? Well next time you make this recipe , make two and freeze one! My gfJules Pizza Crust Mix actually makes 2-3 large pizzas already, so if youre not in the mood for two large pizzas today, youll be set, because you can easily par bake one and freeze it for later!
Heres how:
Follow the instructions for making, spreading and rising the pizza just as you would normally, but then bake it at 450F for only about 5 minutes, or until the dough has puffed and is starting to look a bit dry but not brown.
Remove the crust to cool to room temperature and then either cover with toppings or not, your choice. Either way, at that point, wrap the pizza well with plastic wrap twice. This will prevent freezer burn. If you know youll be keeping it in the freezer for a few weeks or even a month, Id suggest another layer of foil, as well.
When youre ready for gluten free pizza next time, preheat your oven to 500F, then remove the foil and plastic wrap. If you havent already topped it previously, add sauce and toppings now.
Place the frozen gluten free pizza on your favorite pan or pizza stone and place it in the preheated oven, baking until the crust is browned and your toppings are melted, at least 10 minutes.

These are authentic deep dish pizzas, straight from Chicago and ready for baking. The pizzas are 9 inches in diameter, which is smaller than standard frozen pizzas, but the thickness makes up for it.

DiGiornos gluten-free frozen pizza was only fare in my opinion. The crust is ultra thin, and I personally wanted something more substantial from my frozen pizza.
It has an overall delicious and savory pizza taste, I just wish it had a thicker crust. The Nima Sensor is all smiles, which means this pizza is definitely safe and gluten-free!
Other Ways To Cook Gluten Free Pizza
Ive also used a portable pizza oven when I offer samples at gluten free shows. My favorite so far is the Presto Pizazz® Pizza Oven. This handy gadget is fun to watch in action and takes any guess-work out of rising and baking a pizza.
Another option is to simply cover a baking sheet with parchment paper sprayed with cooking oil and bake the pizza in a round or rectangular shape on that. Whichever pan or method, this recipe can make a thin or thick crust and will make your whole family happy.
Particularly when using a regular baking sheet though, dont make the center of the crust too thick or use a very watery pizza sauce, as it will be harder to get that part of the pizza nice and crispy on the bottom.

Using Expandex Modified Tapioca Starch For Chewier Gluten Free Pizza Dough
For a complete discussion of how Expandex adds value to this recipe, please scroll up a bit. If you dont have or dont want to use Expandex, you can use 2¾ cups all purpose gluten free flour and make up the remaining ¼ cup of flour with regular tapioca starch/flour.
Tapioca starch will help a bit to make the recipe chewier, although not as much as if you used Expandex. There is no need to add more water to your dough if you arent using modified tapioca starch.
