How To Make Fresh Gluten
After watching Sara Kate Gillingham make pasta, I knew what would bring some joy into my day: a plate of fresh gluten-free pasta and some alone time.
There was just one problem. All my previous attempts at fresh gluten-free pasta ended up too gummy or gritty. Yet I wanted to try again. Part of me wonders if this yearning was a bit of self-sabotage, a desire to make something I thought would flop. Another part of me thinks it was hope.
Instead of putting together a complex flour blend, I simply scooped some brown-rice flour and added a little tapioca starch and xanthan gum to it. After whisking them together, I added two eggs and stirred everything together with a wooden spoon. It was by far the simplest fresh gluten-free pasta recipe Id ever attempted. The dough looked so beautiful that I couldnt help but smile. I rolled it out and cut it into fat ribbons.
After a quick boil in salted water, I strained the noodles. They had plumped up nicely during cooking, but didnt look bloated and werent falling apart at the edges, two issues Id dealt with before when testing gluten-free pasta recipes. Inspired by Pennys video, I sautéed a little garlic in a lot of butter, grated some Parmesan, and finished the pasta with a little lemon zest.
I couldnt believe it: this fresh gluten-free pasta recipe worked.
Can You Substitute Tapioca Starch
If you cannot find Tapioca starch you can swap it out for arrowroot starch 1:1. These alternative flours take the place of gluten in this recipe and add elasticity to the dough which is super important for rolling out the pasta with ease. Additionally, if you would like to make the pasta even lower in carbohydrates, you can use 1 1/2 cup of almond flour, 3/4 cup tapioca starch, and 3/4 cup arrowroot starch.

Can You Make Pasta With Almond Flour
Absolutely! Pasta made with almond flour is packed with protein and much more nutritious than traditional pasta. Almond flour alone is brittle and difficult to make into homemade pasta. Even if you’d managed to form noodles, they’d likely crumble into pieces in the boiling water. That’s where tapioca flour/starch and sweet rice flour come in as the magic super hero sidekicks. They work together to bind the pasta together. Sweet rice flour gives it the pliability and chewy texture reminiscent of traditional semolina wheat pasta.
If you’ve ever made homemade pasta before, you’ll notice that the dough for this gluten-free almond flour pasta is much softer and sticker than traditional wheat pasta dough. If you increase the ratio of almond flour, the oils from the nuts are extracted out as the pasta rolled try to squeeze the dough through them. Instead, keep the dough softer but dust it generously with tapioca starch.

He first made it one Sunday evening in May 2018. We didnt own a pasta maker and my husband and I watched in awe as my son mixed up a dough and then rolled and cut pasta with a knife. We literally couldnt believe our eyes and after sneaking a taste were blown away!
We bought him a pasta maker a few weeks later for his birthday and hes been making pasta with a pasta machine ever since! He makes it without a recipe and by taste and feel. And each time I share it to Instagram stories I get so many requests for the recipe, I flip a bit.
SO a few weeks ago, when we had February break and a staycation, I asked my son to recreate his pasta so that we could measure and write down directions. We made it twice that week and today we are finally sharing the recipe!
One caveat: there may be a learning curve in making homemade pasta. You start to get a feel for what the right texture and dough thickness is. So give it a try, play with it and let me know how it goes.

How To Cut Gluten
My dough is made just like regular pasta, by hand, incorporating the eggs into the flours. After the dough begins to form a ball I knead it gently and allow it to rest under a damp towel.
Once youre ready to cut and cook the pasta, you want to cut the dough into 4 pieces and work with one piece at a time. Gently roll the dough out as thinly as possible then cut into strips with a knife or pizza cutter. Since this dough has no gluten it will not bend and stretch just like regular pasta dough. For this reason, I cut the pasta into shorter noodles, about 6 inches long, as I found this made them easier to work with. After cutting the pasta you want to gently separate the strips of dough and cook off in salted boiling water, as you would any fresh pasta.

Add flour and salt to a large bowl. Make a well in the flour and add all of the eggs and the extra yolk. With a fork, start beating the eggs in the well, while slowly incorporating the flour in as you go.
Keep mixing with a fork until a dough starts to form and mixing with a fork starts getting too difficult! At that point, turn the dough and any remaining bits of the mixture out on to a floured cutting board.
Slowly start to reduce the thickness of the roller until you reach your desired pasta thickness. On our rollers, we generally stop at 4 or 5.

This lentil pasta is also a great source of protein and fiber, and the flavor is more neutral because its made with both lentil and quinoa flour. The longer noodles fare especially well when cooked al dente, given a rinse, and added to a simple skillet sauce for this cleaned-up carbonara or aglio e olio.
Semolina: Coarse Durum Wheat Flour
One of the most popular flours for making pasta is semolina flour, which is a coarsely ground flour made from a particularly hard variety of wheat called durum. In fact, the word durum means hard , in reference to the amount of force it takes to grind it. This hardness also happens to correspond with its protein content, which is around 13 percent .

The solution: Use semolina flour and water to make your stuffed pasta. It’ll be yellow AND it will hold together when you cook it.
