Theyre perfect when youre just starting out on a gluten free diet, and you want to bake something simple that you absolutely know will be a success. I always recommend starting out with a drop cookie recipethis recipe to be exact.
I have made them countless times for a roomful of gluten-eaters. Theyre still the first dessert to disappear at a dinner party, and that is just, well, fun.
What Do These Soft Gf Choc Chip Cookies Taste Like
These particular chocolate chip cookies remind me of Archway brand chocolate chip cookiesthey come in a cardboard sleeve, covered in plastic. The thin choc chip cookies and the oatmeal cookies were always my favorite.
For a short time, Archway did make a couple varieties of gluten free cookies, but they were very thin and crispy. Nothing against thin and crispy chocolate chip cookies, but the Archway brand cookies that I miss are the soft-baked homestyle cookies.
These cookies bake up evenly, like Archways. That means that, unlike our thick and chewy gluten free choc chip cookies, these cookies dont even have any crisp edges.
Can I Freeze The Cookie Dough
Yes!! I actually like to keep frozen cookie dough balls in the freezer so I can bake up a batch of cookies whenever the mood strikes.
Freeze the scooped-out cookie dough in an airtight container or ziplock bag, this prevents the dough from drying out in the freezer. You can keep them frozen for about 1-2 months. Bake them directly from frozen as per the recipe below, just adding 2-3 minutes to the total baking time to compensate.
Note that the longer the cookies are in the freezer, the less they will spread during baking.

How Do You Keep Gluten Free Chocolate Chip Cookies Soft
These cookies are the perfect soft, flat, chewy texture as soon as theyre cool enough to be stable. Pick one up, bite into it, and feels like you just dipped it in a glass of milk.
You can keep your soft cookies that way by freezing any cookies that you dont plan to serve that same day. Just be sure to place them in a well-sealed, freezer-safe container.
Even once theyve been in the freezer for a long time, they wont freeze solid. Let them sit at room temperature and enjoy them defrostedor pop them in the microwave for 15 seconds or less.
My Gluten Free Chocolate Chip Cookies Spread Too Much And Were Flat Like Pancakes
You might not have allowed enough time for the dough to chill in the fridge.
This is a really important stage in the recipe as it not only allows the dough to harden up a bit so theyre easier to roll into balls, but its also important for baking them.
If the dough is warm before it goes in the oven, itll spread a lot quicker and result in flatter cookies!

How Do Gluten Free Weed Cookies Taste
The only flavors battle with the terpenes in your cannabis coconut oil, is vanilla and chocolate chips.
Because the chocolate chips are studded the batter, instead of being melted into it, they don’t cover up the terps too much.
The vanilla doesn’t mask the herby marijuana flavors either, but instead the flavors swirl together in a graceful dance. You can taste the terpenes, but they aren’t unpleasant in these gluten free edibles.

How To Store Homemade Chocolate Chip Cookies
- To store: Pack your leftovers in a bag or container, and theyll keep for up to one week. You can store them either in the fridge or at room temperature.
- To freeze: If you want to save a few sneaky pieces more than one week, you can freeze them! Just make sure to place parchment paper in between each cookie and store in a freezer-safe bag or container. They will be good for up to 3 months.
- To defrost: Just let the cookies come to room temperature before eating.

Tips For Making The Best Gluten
- Dont skip the step to soften the butter. Take the butter out of the refrigerator and allow it to soften on the counter for 15-30 minutes. If you are using dairy-free or vegan butter you should not need to soften it.
- I always use a greased cookie scoop. I use a 1 Â½ tablespoon cookie scoop.
- I also like to use Reynolds Kitchens Cookie Baking Sheets. It has a smart grid that makes it super easy to line up your cookies on your baking sheet. I buy it at Walmart.
- If you want your chocolate chip cookies to be gooey, the trick is to not over-bake them .
- If you want your cookies to be more fluffy, chill the cookie dough for 30 minutes.
What Can I Use Instead Of Oat Flour
If you cant use oats, another great option is almond flour. These two are a great swap for one another in most instances. Although, almond flour isnt as absorbent as oat flour.
Try to use super-fine almond flour for best results. Just make sure the cookie dough is easily scoopable and holds its shape. If the dough is too thin, add a couple extra tablespoons of the all purpose gluten free flour blend.

How Do You Keep Gluten Free Cookies From Spreading
If your gluten free cookies are spreading too far, you may need more gluten free flour.
Even if you use the amount of gluten free flour called for in yoru recipe, each different gluten free flour blend absorbs liquid differently, meaning you may need a little more or a little less gluten free flour depending on your blend.
Other things that can cause your gluten free cookies to spread too much is if your cookie dough is too warm.
If your gluten free cookies are spreading too far, you can try chilling your gluten free cookie dough for 30 minutes to an hour, and then bake them.
I usually only have issues with this if I’m baking cookies on a warm day, or if my butter is much to soft.
Can I make gluten free chocolate chip cookies without xanthan gum?
Yes you absolutely can make these cookies without xanthan gum.
I like the additional structure that xanthan gum gives this gluten free chocolate chip cookie recipe, but because of the melted butter and the egg yolks, these cookies are great without xanthan gum.
They will be a little bit softer and more crumbly, but it will be only a very slight difference.

It took me quite a few months to perfect the recipe I tested out all the possible ingredient ratios, using different proportions of white and brown sugar, testing them with and without extra egg yolks and this recipe is the culmination of all those experiments.

This Is The Recipe You Memorize
These cookies are so easy, use such basic ingredients, and the recipe is very easy to memorize. The first few times, youll want to double-check to make sure youre remembering everything right.
But remember that all standard drop cookies have flour, baking soda, and salt. Next up are granulated and brown sugars , then butter , eggs and vanilla .
Chilling The Cookie Dough
This is another important step that you cant skip! Chilling the dough allows the dry ingredients to fully absorb the wet ingredients, creating a more robust dough that will spread more evenly when baked.
Pre-scoop the cookie dough using a large cookie scoop. Dot the tops with a few extra chocolate chips and transfer the uncovered dough to the fridge. They must chill for at least 2 hours, but its OK if they chill for longer.
If you need to let them chill overnight, allow them to sit in the fridge uncovered for 2-4 hours, then wrap the tray in plastic wrap and continue to let them chill overnight. This prevents the dough from drying out.

Ingredients For The Best Chocolate Chip Cookies
Unlike other gluten-free cookie recipes, theres no strange add-ins like gums, stabilizers, or extra sugars. Just clean, wholesome ingredients! Heres what you need.
- Coconut Oil: Im using refined coconut oil so it wont taste too coconut-y, but you can also use butter or ghee.
- Coconut Sugar: My go-to sugar option for baked goods.
- Egg: Just one large egg is needed for this recipe!
- Vanilla Extract: An essential baking ingredient for a touch of sweetness.
- Almond Flour: Yep, no complicated flours here just almond flour!
- Sea Salt: A pinch to enhance the chocolatey goodness.
- Baking Soda: For a little fluff and improved texture.
- Chocolate Chips: I like to use semi-sweet chocolate chips, but you could also use milk chocolate.

Do I Need Weighing Scales To Bake Your Gluten Free Chocolate Chip Cookies
In short yes! And I wouldnt advise attempting any of my recipes without them. One of the worst things you can do in any baking recipe is alter the quantities by mistake or on purpose.
Why? Well, youre sort of just gambling with the recipe and praying that it turns out ok. And Ive generally already done the hard work there for you!
A lot of work went into fine tuning ratios and quantities so I wouldnt mess around with them unless you really know your stuff.

Note About Ovens And Oven Temperatures
All my recipes are tested and developed with a conventional oven. If you are baking with convection , please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

What I like most is the varying amounts of chocolate in each bite, which is a bonus result of using two types of chocolate chips/chunks. You never know how much chocolate will be in each bite a feast for your eyes and mouth indeed!

Is Corn Starch Gluten Free
Before some research, I didnt realize that Corn Starch is also gluten free! YES! Even though it looks like white flour, its absolutely GF. As we said earlier, Corn Starch can help to make your cookies extra soft and chewy, so I love adding a bit to baking.
