Tips For Making Gluten Free Tortillas

Gluten Free SOFT FLOUR TORTILLAS | How To Make Gluten Free Soft Tortillas

Make sure to spoon the flour into the measuring cup then level otherwise youâll end up with dry dough.

Donât overmix the gluten free flour tortilla dough.

Use room temperature water or warm water for this recipe.

Itâs best to use a wooden spoon when stirring in the water.

Cast iron skillets work best when making tortillas. I donât recommend non-stick pans.

How To Make Gluten Free Tortillas

You dont even need a blender or food processor, just a bowl, a whisk, a pan and youre good to go.

STEP 1: Put all ingredients in a medium bowl and mix with a whisk.

STEP 2: Pour a little oil into the pan and wait for the oil to warm up slightly. Then pour some batter into the pan and fry each tortilla on both sides for about 2 minutes. Thats it!

Ingredients In Soft Gluten Free Flour Tortillas

Ive seen recipes all over the net calling for baking powder or Expandex modified tapioca starch in homemade gf flour tortillas. This recipe is adapted from one of the many classes I took on Craftsy. It calls for only three ingredientsflour, salt, and a fat, such as lard, shortening, or butter. Water is considered a freebie. I modified it to be gluten free and it works beautifully!!

I rarely, if ever, have shortening on hand. But I ALWAYS have butter in my fridge so thats what I use for these flour tortillas. If you have lard or shortening, feel free to use either of those as I know lard is the traditional fat in authentic flour tortillas.

So Whats The Difference

  • Tacos are soft or hard tortilla shells, often filled with meat, sometimes also cheese and veggies. Since I am a vegan, I dont fill my tacos with meat, I add all kinds of veggies, avocados, chickpeas, and a delicious sauce.
  • Quesadillas are tortillas with lots of cheese and sometimes also veggies like corn, mushrooms, and potatoes. They are often folded in half and grilled.
  • Burritos are large tortillas stuffed with beans, meat, veggies, cheese, and often also rice. They are tightly wrapped so you can eat them on the go.
  • Enchiladas are folded tortillas filled with chicken, cheese, and baked in spicy salsa.

Make A Corn Tortilla With A Tortilla Press

If you have a tortilla press or made a tortilla press yourself here is how you use it to make tortillas.

  • Take a piece of baking paper or cut a freezer bag open and place it on one side of the tortilla press
  • Place a dough ball in the center of the tortilla press on the baking paper
  • Close the tortilla press to flatten the dough
  • Open the tortilla press. Place your hand on the tortilla and turn it upside down so you can peel the plastic or baking paper away
  • Make certain you have a skillet or a cast-iron griddle on high heat so you can cook the tortilla straight away

How To Freeze Gluten Free Tortillas

To freeze gluten free tortillas, first let them cool the room temperature. Once they are cooled, place a piece of parchment paper in between each tortilla, and place them in a zip lock bag or airtight container in the freezer for up to 3 months.

If you have a food saver, theyâll keep for up to 6 months in the freezer.

Rolling Out The Gluten Free Tortillas

Easy Gluten Free Flour Tortillas!!!

To prepare the gluten free tortillas:

  • Place a dough ball onto a lightly floured surface and dust its top with more flour.
  • Use a rolling pin to roll it out into an approximately round tortilla. Make sure to rotate it frequently to prevent it from sticking to the surface and also to maintain the round shape . As necessary, dust the surface and the top of the tortilla with more flour.
  • The final tortilla should measure about 9 inches in diameter.
  • You want the tortillas to be very thin, about 1mm this will make them easy to use as wraps, while also ensuring that they will puff up while cooking in the pan.
  • I usually roll the tortillas while cooking them at the same time . However, you could roll out all the tortillas first and then cook them. In that case, stack them with pieces of baking/greaseproof paper between them to prevent sticking and cover with a dish towel to prevent them from drying out.

    How To Store These Tortillas

    These tortillas taste best when served straight away. As it doesnt take a lot of time to make that is recommended.

    You can make them ahead of time and store them:

    • Fridge put them when completely cooled in an airtight container or ziplock bag. You can keep them for a day or two
    • Freezer you can also store them in the freezer after they are completely cooled. Store them separated with parchment paper then also them in an airtight container or ziplock bag

    Dont I Need A Tortilla Press To Make Tortillas

    I used to own two tortilla presses, one 6 inch and the other 8 inch. I found them useless to me . Maybe it was just my inexperience, but rolling them with a rolling pin worked better. You CAN use a large round cookie cutter if you want them cut them into perfect circles, but I myself like the rustic look.

    You can roll the tortilla dough right onto your counter, constantly picking up and moving the dough so it doesnt stick . But I like to roll mine out onto a parchment circle like this . I keep these on hand for all kinds of uses, not just lining cake pans. They can be reused over and over again, and they help in this instance by allowing you to move the parchment without picking up the tortilla dough. Theyre not absolutely necessary . But my preference is definitely parchment.

    Over a decade ago during my new gluten sensitivity diagnosis, I tried my hand at some homemade gluten free tortillas, but honestly the abundance of store bought gluten free tortillas has sky rocketed as gluten free has become more popular, so I chalked up tortillas as one of those store bought conveniences that I would take advantage of. There is a variety of gluten free tortillas out there, but as I shopped with my friend, we found that there were NONE with healthy ingredients that were made in dedicated gluten free facilities. NOT ONE! This really frustrated me! Itd been a long while since I tried my hand at homemade tortillas, but I really wanted to create something that my friend could safely use for her girls. Gluten free flour blends have REALLY improved in the last 15 years, and I had a feeling Namaste would be a really good candidate to trial with tortilla making.

    What Isnt Included On The List

    There were a few brands of tortillas that I purchased after reading very good online reviews, served to my children for taste-testing purposes and even ate multiple times myself. And they were absolutely awful. I just could not recommend them at all.

    Those brands were mostly of the alternative variety, include Mikeys Paleo tortillas, Nuco Paleo coconut wraps, Wrawp organic veggie wraps. I will eat nearly anything, and I literally could not choke these down. All three of these brands smelled strange, and one had a very disturbing aftertaste that burned our mouths.

    Food For Life brand brown rice wraps arent included in this list because theyre absolutely fine, but the Trader Joes brown rice tortillas seem to be largely the sameand for a lower price. Both are kind of an old-school gluten free tortilla/wrap since theyre relatively stiff and chewy, but serviceable.

    I also didnt include Udis gluten free flour tortillas. I tried them years ago and they were terrible. I was going to give them another try, but cant find them anywhere. I wonder if they were discontinued?

    Bfree Quinoa And Chia Wraps

    I first tried BFree products when you recommended that I try their packaged gluten free bread. As a general rule, I dont care for products with psyllium husk as an ingredient , but BFree uses it more effectively than others.

    These wraps are soft and chewy, very flexible and are generously sized. They dont taste strange to me at all, but the quinoa and chia formulation wont appeal to everyone as its very natural seeming.

    The problem with BFree is their availability. The only viable source for me is, and they recommend freezer-safe shipping when ordering frozen products, especially in the warmer months. That increases the shipping cost and pressures you to purchase other products at the same time for economies of scale.

    That lack of availability means that I wasnt willing to purchase their plain wraps, as I could only find those in a large quantity on for a really awful price. I wasnt willing to commit to that, and I think most people would feel the same.

    How Long Do These Gluten Free Wraps Last

    If you use the recipe as stated with gram flour, the wraps will have the best shelf-life. While they are best when freshly cooked, these tortillas can be eaten as they are several hours after making . Left over night and beyond however, they will start to deteriorate in texture.

    Having said that, I have eaten them as they come 24 + hours after making and they have tasted pretty good. And if popped in the microwave for a few seconds to heat through, the flexibility and texture returns to just cooked levels, holding well even after cooling.

    I Cant Eat Gram Flour What Is The Best Alternative

    Homemade Soft Gluten Free Tortilla | Easy recipe

    Although the Gluten Free Wraps with gram flour came out the best, I appreciate that not everyone likes or can tolerate gram flour. So, if you cant eat it, what are the best alternatives?

    In testing, the flour tortillas which took the silver and bronze rated spots were the ones made with sorghum flour, millet flour or buckwheat flour. Wraps using the white teff flour were further down the list, but also made a reasonable alternative. I wouldnt recommend wraps made with all starch flours.

    Making The Tortilla Dough

    To make the gluten free tortilla dough:

  • Whisk together the gluten free flour blend and salt.
  • Make a well in the middle of the dry ingredients and add the oil.
  • Then, add the psyllium gel .
  • Use a wooden spoon to mix all the ingredients together until the dough starts coming together.
  • Then, give it a thorough knead by hand. I like to squeeze the dough through my fingers and work my way around the bowl. Make sure that there are not patches or clumps of dry flour.
  • The final dough should come away from the sides of the bowl and be very springy to the touch. It shouldnt be too sticky. Dont worry if doesnt have a perfectly smooth surface so long as its homogeneous with all the ingredients well combined and no clumps of flour or psyllium gel, youre ready for the next step: portioning out and pre-shaping the dough.
  • How To Make Gluten Free Tortilla

    In a bowl combine melted vegan butter, gluten free all purpose flour, water, and season with salt. Knead with your hands until a homogeneous dough is formed. Then roll it into a ball.

    Divide the ball into 8 equal parts. On a pre floured surface form into tortillas.

    I used an 8 inch pan to make these tortillas. So please make sure you form them not too small or too big for this, if you would like to reach my size.

    Otherwise feel free to use your favorite size. But keep in mind you will get more than 8 tortillas at a smaller size or less than 8 at a bigger one.

    Now heat the pan without vegan butter or with just as you like. Both ways will work beautifully. Bake tortillas for 1 minute on each side. So 1 minute flip, then other side.

    Enjoy them warm or let them cool down, both ways are delicious.
