Allergy Friendly Pancakes: Gluten-Free, Dairy-Free, Egg-Free

As Ive mentioned before, basic ingredients like flour and butter vary tremendously from one country to another. So my parents in the US tested these, and they were great.

I also tested these with US all-purpose flour and German butter. So now you know you can make these with confidence!

Because all-purpose flour is really different from country to country I normally wouldnt recommend using a recipe that was developed using flour from a different country.

However, Ive had really good experiences with pancake recipes. I think its safe enough to try these eggless pancakes, no matter where you live.

Im pretty confident this would work perfectly with Swedish flour just use the normal vetemjöl. If you are using German flour, Id recommend half Type 405 and a half Type 550.

I Dont Have Baking Powder

Then you, unfortunately, need to find a different recipe. Baking powder and soda arent interchangeable, and theres not really a perfect sub.

Ive tried the subs Ive seen listed online in various recipes. They work okay, but I want you to have perfect pancakes and not just okay!

Please, please, please dont just use baking soda in place of the baking powder. It wont work.

And if you make these pancakes and leave a nasty comment about how soapy they are its because you accidentally used baking soda instead of powder. )

I slightly adapted this recipe using oil because I didnt like melting butter, and eventually switching to dairy free milk and we never looked back. Why would we when it literally takes 2 extra minutes to measure out ingredients instead of paying for pricey pancake mix.

Maybe pancake mix isnt that pricey, but its still something I dont need to spend money on. Plus, I almost always have all of these ingredients in my pantry.

Back when I started experimenting with turning my favourite recipes into plant-based and/or gluten free versions, this recipe for easy vegan gluten free pancakes was one of the first I came up with.

Come to think of it, it may have actually been the first!

This was quite a few years ago and since then, the recipe has not changed at all. I make these pancakes often and they have become one of the most requested things to eat here at breakfast

I took these shots almost 4-months ago but held on to them. If you follow me on Instagram, you would have seen a sneak peek.

I held on to the shots because I thought, hmmthis is *just* a pancake recipe. Does the internet really need another pancake recipe?And the answer is YES. It does.Because these easy vegan gluten free pancakes are special.

Theyre special because they are everything you would expect a pancake to be, but maybe NOT what you would expect a vegan AND gluten free pancake to be. They are light, fluffy, and theyre delicious.

Then, that waffle recipe served as the base for all my other waffle recipes. Funny how developing recipes work!

Can I Make These Pancakes Dairy

Yes. This gf pancake recipe works with buttermilk, dairy-free buttermilk , milk, or dairy-free milk.

I like to use buttermilk or a dairy-free buttermilk to make these gf pancakes because it makes them thicker but you can make gluten free dairy free pancakes using dairy free milk or my mock-buttermilk.

For thinner pancakes use milk, or a low fat dairy-free milk.

These gluten-free pancakes are a staple in our house. We tend to whip up a batch weekly, saving some in the freezer for later.

My girls like to enjoy them for breakfast and use them to make sandwiches. This might sound weird, but have you ever used gluten-free pancakes to make a sandwich? It’s pretty tasty.

Why Are Gluten Free Pancakes Gummy

If any of your gluten free recipes come out gummy, there are a few things to look at. If youre gluten free only, you probably have a gluten free pseudograin thats causing gumminess. Cassava flour for example can get quite gummy. If youre also egg free, your egg substitute may be to blame. Gumminess is usually a sign that theres too much of something.

For example, our recipes containing cassava flour are cut with tiger nut flour to reduce the gumminess. It works like a charm every time.

  • Cassava flour-Cassava flour is the closest flour to wheat flour. It is sticky and has a similar texture, however not all brands are created equally. That is why I only use Ottos. This recipe has only been tested with Ottos therefore I do not suggest using another brand.
  • Tapioca flour-Tapioca flour is a great thickening agent in paleo cooking. Think of it as similar to corn starch.
  • Baking soda-Baking soda will help these pancakes stay fluffy!
  • Banana-Banana will help keep these pancakes moist, you can substitute for canned pumpkin if desired.
  • Apple cider vinegar-ACV is a good texture enhancer.
  • Maple syrup-Maple syrup is my sweetener of choice when it comes to AIP baking.
  • Coconut milk-Coconut milk will help keep these pancakes moist.
  • Water-Water will help prevent the pancakes from getting too thick.

Every once in awhile my kiddos talk me into chocolate chip pancakes. I prefer to not stir them into the batter, but wait until Ive poured the batter onto the hot griddle and drop a few in each pancake before flipping. That way, I can make sure they land where I want, versus clumping in once corner of the pancake, or just ending up at the bottom of my mixing bowl. I have actually never added fruit like fresh blueberries or bananas because I dont like them in my pancakes, but I would assume you would do the same. How Do I Store These Gluten Free Vegan Pancakes

You should wait until the pancakes have cooled completely before storing, otherwise the moisture trapped inside will make them more gummy. I like to store mine in a Ziploc baggie in the fridge, or some other type of airtight container. You can either warm them in the toaster oven or microwave until reheated to your liking.

How To Make Pancakes

This is so easy! Begin by mixing all your wet ingredients together in a small mixing bowl. Melt the butter of your choice, add the milk and egg of your choice, and give it a good stir. Add the splash of vanilla and the sugar. Set aside.

In a medium sized mixing bowl add your flour, salt, and baking powder. Stir in your wet mixture until everything is well combined. This batter will be thick! If you like your pancakes a little thinner, you can add a few more tablespoons of milk. The thicker the batter the fluffier the final pancake!

Pour batter onto a hot griddle or skillet pan. I like large pancakes so I use about ¼ cup of batter per pancake. Gently spread the batter out so it is an even circle. Let cook on the first side until the bubbles pop in the center, about 3-4 minutes. Flip and let cook for another 3 minutes.

Keep pancakes warm on a plate under a towel or in a 200F oven. Serve hot with butter and syrup!

How To Make Gluten Free Pancakes

Paleo Vegan Almond Pancakes

Always follow the recipe first when making easy gluten-free pancakes. Dont work with substitutions until you know how the recipe works.

Once your batter is ready, heat your pan or electric griddle. I received an electric griddle last year and its been my best friend since.

  • Add all dry ingredient to a large mixing bowl.
  • Whisk until combine.
  • Add the wet ingredients.
  • Stir just until combined. Some lumps will remain.
  • Ladle ¼ cup of pancake batter onto your hot griddle, or pan: measure out about ¼ cup of gluten-free pancake batter onto your hot oil-pan or electric griddle. Use the back of the measuring cup to help spread the batter some.
  • Cook for 2-3 minutes, or until bubbles form around the edges. When the edges are golden brown and the bubbles are popping up through the center of the pancake, use your spatula and take a peak to see if they are brown to your liking. Then flip the gluten-free pancake and cook for another 5 minutes or so. Always check for doneness before you remove your pancake from the pan or griddle.
  • This gluten free pancakes recipe is super simple to make. If you find that your pancake batter is too thick to spread, most likely you added too much flour or your buttermilk was too thick.

    Simply add water a tablespoon at a time until you get the desired consistency.
