Natural Products Expo East 2021

After a Pandemic Pause, Natural Products Expo East returned in 2021, much to everyone in the industrys relief. Ive been spoiled by having Expo East in my Baltimore backyard for several years, so my personal excitement level was dampened a bit, knowing it would not return to my adopted hometown. Oh, and I suppose I should also mention that the Philadelphia Convention Center is just across the street from the Reading Terminal Market, one of the largest oldest public markets in the United States. So what if it was voted #1 Public Market in America? Baltimores Public Markets are still older, predating the Declaration of Independence by more than a decade. Just saying.

But back to The Reading Terminal. It is actually amazing and I love it. You should visit.

Its absolutely stuffed full of produce, seafood, crafts, restaurants and even a cool bar, but what draws me every time is Fox & Sons Fancy Corndogs. Odd, right? Well, I seek out Fox & Sons because of the Funnel Cakes and because the entire stall is gluten free! SO worth the trip!

Have you ever noticed that most of the recipes out there for homemade protein bars are so specific? I am a fan of baking recipes being specific, since baking is chemistry. But these are no-bake.

Those other recipes either rely on one specific type of protein powder, call for a million different funky ingredients Ive never heard of, or they are one flavor and one flavor only. So frustrating!

How To Make Gluten

Lemon bars have a shortbread bottom and custardly lemon topping. Youll need a good 1:1 gluten-free flour blendto make both the shortbread and custard topping.

To make the shortbread base, combine all the crust ingredients in your mixer. Youll need a 1:1 gluten-free flour blend, sugar, and softened butter.

Mix the ingredients together well, using your mixer, and youll wind up with a crumbly crust, that, when pressed together, forms the solid base for your lemon bars.

You can see below how I press the mixture in place to form an even layer of crust.

Youll bake the shortbread crust for 17-18 minutes until its set and only par-baked.

While the crust is baking, prepare your lemony custard topping.

Combine all your filling ingredients, including sugar, eggs, 1:1 gluten-free flour blend, baking powder, fresh lemon juice, and lemon zest.

Once the crust is par-baked , pour the egg mixture over the crust and place it back in the oven to continue baking.

Bake for another 18-20 minutes until the lemon topping is set and the edges are only slightly brown.

Be sure to allow the mixture to fully cool before cutting into it, and definitely before topping it with powdered sugar. If you put the powdered sugar on top of warm lemon bars, it will be absorbed into the lemon topping and wont look as pretty.

I usually allow the lemon bars to cool for a full hour at room temperature, then put it in my fridge for a few hours or overnight before I cut into it.

Some Favorite Flavor Combinations For Homemade Granola Bars:

The possibilities for homemade soft granola bars are nearly endless! You could make a different batch every week for months without running out of flavor combinations! All you need is about 1/2 cup mix-ins for each batch. Some of our favorite combinations are:

  • Chocolate + Dried Cherries = 1/4 cup dried cherries + 1/4 cup chocolate chips
  • Coconut + Macadamia Nut = 1/4 cup unsweetened shredded or flaked coconut + 1/4 cup chopped macadamia nuts
  • Chocolate Strawberry = 1/4 cup chocolate chips + 1/4 cup chopped freeze-dried strawberries
  • Vanilla Almond & Sea Salt = Sub 2 Tbsp. honey for maple syrup + 1/3-1/2 cup sliced almonds + 1/4 tsp coarse sea salt
  • Coconut Chocolate = 1/4 cup unsweetened shredded or flaked coconut + 1/4 cup chocolate chips +1/4 tsp coconut or almond extract
  • Cherry Almond = 1/4 cup dried cherries + 1/4 cup dried almonds + 1/4-1/2tsp. almond extract.

Gluten Free Lemon Bars

If you asked me how many protein and/or energy bars I’ve tried, I’d be at a loss. Builder, Luna, Kind, Power Crunch, Lära, Zing, Pro Bar, Amazing Grass, pure, and plenty of others that I can’t remember. There was a period of time where I would find myself at the checkout with 3-5 different brands and flavors. Occasionally, I could almost see the cashier’s confusion in bubble thought form above her head. “Can’t this chick make up her mind?” And no, I couldn’t. I never found one that won me over 100%.

Then we made our own. Each bite starts with a chewy brownie crust, followed by a thick, creamy, peanut-butter-flavored layer. The light chocolate drizzle and sprinkle of hemp seeds adds a hint of sweetness and a crackling finale to the bars. At 16 grams of protein each, you can consider me a repeat customer.

Two bowls, a food processor, and a parchment-lined baking pan are the only necessities for this recipe. With just a few, fool-proof steps, these come together in under 20 minutes. Chill them for an hour and you’ve got snacks for at least a week’s time.

I admit, I have a soft spot for homemade granola bars, but these serve another set of needs. Where our granola bars are sweet, fruity, and light, these are hearty, filling, and indulgent .
