Natural Products Expo East 2021

After a Pandemic Pause, Natural Products Expo East returned in 2021, much to everyone in the industrys relief. Ive been spoiled by having Expo East in my Baltimore backyard for several years, so my personal excitement level was dampened a bit, knowing it would not return to my adopted hometown. Philadelphia would have to do.

Fortunately, I found Philly to be full of life and excitement lots of great museums, culture and restaurants, including Vedge, where we were lucky enough to score reservations one night! so I suppose Ill just have to get used to it!

Oh, and I suppose I should also mention that the Philadelphia Convention Center is just across the street from the Reading Terminal Market, one of the largest oldest public markets in the United States. So what if it was voted #1 Public Market in America? Baltimores Public Markets are still older, predating the Declaration of Independence by more than a decade. Just saying.

But back to The Reading Terminal. It is actually amazing and I love it. You should visit.

Its absolutely stuffed full of produce, seafood, crafts, restaurants and even a cool bar, but what draws me every time is Fox & Sons Fancy Corndogs. Odd, right? Well, I seek out Fox & Sons because of the Funnel Cakes and because the entire stall is gluten free! SO worth the trip!

Now is the part of the story where I actually get into the good stuff: the NEW GLUTEN FREE PRODUCTS you came here to read about. And there is some good stuff!

Two Recipes Endless Options

Maple Pecan Granola Bars (gluten

Have you ever noticed that most of the recipes out there for homemade protein bars are so specific? I am a fan of baking recipes being specific, since baking is chemistry. But these are no-bake.

Those other recipes either rely on one specific type of protein powder, call for a million different funky ingredients Ive never heard of, or they are one flavor and one flavor only. So frustrating!

How To Make Gluten

Lemon bars have a shortbread bottom and custardly lemon topping. Youll need a good 1:1 gluten-free flour blendto make both the shortbread and custard topping.

To make the shortbread base, combine all the crust ingredients in your mixer. Youll need a 1:1 gluten-free flour blend, sugar, and softened butter.

Mix the ingredients together well, using your mixer, and youll wind up with a crumbly crust, that, when pressed together, forms the solid base for your lemon bars.

You can see below how I press the mixture in place to form an even layer of crust.

Youll bake the shortbread crust for 17-18 minutes until its set and only par-baked.

While the crust is baking, prepare your lemony custard topping.

Combine all your filling ingredients, including sugar, eggs, 1:1 gluten-free flour blend, baking powder, fresh lemon juice, and lemon zest.

Once the crust is par-baked , pour the egg mixture over the crust and place it back in the oven to continue baking.

Bake for another 18-20 minutes until the lemon topping is set and the edges are only slightly brown.

Be sure to allow the mixture to fully cool before cutting into it, and definitely before topping it with powdered sugar. If you put the powdered sugar on top of warm lemon bars, it will be absorbed into the lemon topping and wont look as pretty.

I usually allow the lemon bars to cool for a full hour at room temperature, then put it in my fridge for a few hours or overnight before I cut into it.

Gluten Free Candy List

Halloween is just around the corner, and while non-food treats are a wonderful safe and all-inclusive way to celebrate, you might also want to find some candies that are safe for your child to eat. I have compiled a list of gluten free candy listed by manufacturer that I based on information provided on the manufacturer websites or that I received via email or on the phone from their customer service department.

**Please remember that ingredient lists can change at any time, so its always best to read the ingredient labels and call the manufacturer directly if youre unsure. Additionally, sometimes the ingredients on a mini version of a candy are processed differently than the regular size version so dont just assume that a mini version is gluten free without double checking. If you have multiple allergies, Celiac Disease Foundation has a great candy list that breaks many candies down by the top 8 allergens.

Hersheys offers a ton of gluten free candy, though most of it also contains dairy and may contain tree nuts and peanuts. Ive copied below the latest gluten free candy list on their site and here is a link to Hersheys website that lists their gluten free products.

No Bake Gluten Free And Vegan Protein Bars

Gluten Free Lemon Bars

If you asked me how many protein and/or energy bars I’ve tried, I’d be at a loss. Builder, Luna, Kind, Power Crunch, Lära, Zing, Pro Bar, Amazing Grass, pure, and plenty of others that I can’t remember. There was a period of time where I would find myself at the checkout with 3-5 different brands and flavors. Occasionally, I could almost see the cashier’s confusion in bubble thought form above her head. “Can’t this chick make up her mind?” And no, I couldn’t. I never found one that won me over 100%.

Then we made our own. Each bite starts with a chewy brownie crust, followed by a thick, creamy, peanut-butter-flavored layer. The light chocolate drizzle and sprinkle of hemp seeds adds a hint of sweetness and a crackling finale to the bars. At 16 grams of protein each, you can consider me a repeat customer.

Two bowls, a food processor, and a parchment-lined baking pan are the only necessities for this recipe. With just a few, fool-proof steps, these come together in under 20 minutes. Chill them for an hour and you’ve got snacks for at least a week’s time.

I admit, I have a soft spot for homemade granola bars, but these serve another set of needs. Where our granola bars are sweet, fruity, and light, these are hearty, filling, and indulgent .

The Homemade Protein Bars Were Better Than Packaged

My kids couldnt get enough of these bars. They had even gotten good enough that my husband mentioned them out of the blue one day.

My kids had started asking, Are those bars hard to make? Thats code for please make them again.

They have the soft texture of a brownie, and theyre not too sweet. For something more cookie-like, give my classic protein cookies or my peanut butter protein cookies a try. 🙂

I also get are these bars good for you? Thats also code for can I eat them all day every day and be healthy? I also get the same sort of questions when I make my protein pancakes!

What Are Gluten

Gluten is a protein found in wheat, barley, and rye. Although gluten is not a problem for most people, some individuals with food allergies, Celiac Disease, or other sensitivities may not tolerate it. Gluten-free grains and seeds include sorghum, quinoa, gluten-free oats, teff, amaranth, and brown rice.

Why I Love Em

These gluten-free lemon bars have a lot going for them.

For starters, the crust is soft, flakey, and buttery. You bite into it and the crust just melts in your mouth.

Furthermore, the custardy topping is sweet and lemony and has a wonderful texture that is hard to describe. You can taste the fresh-squeezed lemon and lemon zest bits. People will go crazy for your lemon bars I promise!

Top them with a sprinkle of powdered sugar for an elevated taste and appeal.

I cut my gluten-free lemon bars into 16 small squares, allowing each person to enjoy 5-6 bites of sweetness. Eat em slow and savory all the flavors that sing in your mouth.

Anyway you slice them, Im certain you will love these gluten-free lemon bars and it will be a go-to dessert recipe when youre asked to bring a non-chocolate dessert.

Protein bars are a daily staple in my snacking life. Since Ive started working out regularly, Im in need of a healthy high protein snack several times a day.

Ive moved away from buying expensive high protein energy bars from the stores, for several reasons.

  • They were super EXPENSIVE!
  • The ingredient list on packaged snack bars was not impressive
  • The serving size was minuscule
  • THEY DIDNT EVEN HAVE MUCH PROTEIN!
  • Sorry for yelling, but reallyhow do you a snack bar high protein if it only has 2 grams?

Ive tried most packaged protein snack bars on the market and lets just say there have been some duds. Some of the bars I tried had a gritty taste and texture, and others were so soft, they were like chewing gum.

Lets not talk about one particular protein bar which was like edible punishment

Ever since then, homemade protein bars have been a staple in my diet. The beauty of making your own homemade bars is that you know exactly what goes into them. It may seem cumbersome and time-consuming to making healthy no bake protein bars, but really- It could not be any easier and they take 5 minutes!
