    In the past, gluten free foods have been notoriously bad. Today theyre not perfect either, but they are getting much better.

    The problem with creating gluten free imitations of foods like bread and biscuits is that gluten is an essential ingredient for making breaded foods what they are.

    Gluten is a gluey-type protein which sticks ingredients together to create stretchy and sticky doughs that can make bread, pizza bases, biscuits and other baked goods.

    Xanthan gum is a super sticky thickening agent that can be used as a replacement for gluten in our favourite baked goods.

    After a light bit of googling it soon becomes apparent that xanthan gum is a very polarising ingredient in gluten-free products. Coeliacs or people with a gluten intolerance tend to have very irritable digestive systems and there is a lot of reports of people experiencing the same kind of reaction with xanthan gum that they might experience with gluten.

    It is also worth knowing that the original fermentation process to create xanthan gum is often begun using glucose, sucrose or lactose but in some cases a wheat based medium is used to grow the bacteria.

    What Is The Best Type Of Yeast To Use In This Gluten

    This recipe uses instant yeast or rapid rise yeast. I use Fleshmans Rapid Rise Yeast. It is important to use the rapid yeast and to make sure it is at room temperature.

    Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm water because yeast is a live organism and thrives in a warm environment.

    Heat the water just until it feels warm to the touch. Or use a thermometer to check the waters temperature. The ideal temperature for instant yeast is 100°110°F. If the water is any hotter than that, it could kill the yeast and your bread will not rise.

    If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture. Add the honey to the warm water and stir until it dissolves.

    Then add the yeast to the water mixture and allow to sit for 5 minutes until bubbly. This is not a necessary step. This is only needed if your yeast is not new or fresh.

    I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.

    All studies show that it is safe to consume for adult humans. However theres a disturbing bit of data which you can read about here regarding a milk thickener containing xanthan gum which was given to babies under 12 months which has led to it not being recommended for infants.

    However most health professionals agree that for adults it is safe to consume up to 15g a day and since a little goes a long way it is unlikely that youll ever get anywhere near that limit.

    Recipe Notes & Substitutes

    • Some readers replaced the buckwheat flour with oat flour or sorghum flour and the bread still turned out amazing.
    • Rice flour works great in this bread recipe, but feel free to experiment with lentil flour, teff flour, sorghum flour, or quinoa flour.
    • You can use arrowroot flour instead of tapioca flour/starch. Cornstarch or potato starch will most likely work as well.
    • Chickpea flour is the same as garbanzo bean flour. It adds plant-based protein and I love adding it to bread. Some readers had success using oat flour instead.
    • Psyllium husk powder is the most important ingredient in this recipe and cannot be subbed by any other ingredient. Make sure to use psyllium husk POWDER. If you have psyllium husk , you can blend it in a blender or electric spice/coffee grinder until its a fine powder.

    • While I recommend you use SAF Instant Yeast to cut the rising time, yes, you can use regular, active dry yeast in this recipe. Use the same amount of yeast called for, but go ahead and proof the yeast in the warm water with a bit of sugar. Then you are going to need to extend the rising time for the rolls by at least double what I have listed here.
    • I do not recommend using any flour blend with coconut flour in it! I tried this recipe with Gluten Free Mamas Coconut Flour Blend as well, but alas I didnt have good results. I wouldnt recommend using any flour blend with coconut flour in it for this recipe. The problem is that coconut flour really absorbs the liquids in a recipe, and mine turned out like hockey pucks.
    • Yes, you can make this egg-free if you need to. I have tried GFMs egg free option and it worked well & tasted great! Gluten Free Mama recommends this egg free option: ¼ cup water + 1 Tbsp. ground flaxseed. Simmer water and flaxseed over medium low heat for about 5 minutes until thickened. Stir frequently. Allow to cool. This is equal to one egg.
    • Yes, you can make this dairy-free if you need to. Substitute the 2 Tablespoons of butter for a good dairy-free margarine or Spectrum organic shortening, melted. You can also either not brush the finished rolls, or brush with a good tasting dairy-free margarine.
