How Did Katz Get Started

In early 2006, Mrs. F Katz had tried to find gluten-free products in the market. She had two kids who suffered from gluten intolerance. She had to be careful and selective in what she chose due to the harmful effects some foods and products would have on her kids.

However, what she found in the stores wasnt great, and they always lacked the taste of gluten-containing food. Especially when it came to things like desserts: cakes, doughnuts, pies, etc.

Mrs. F Katz wanted to do something. So, she started to bake to put smiles back on your kids faces. She worked very hard and tried out a wide range of recipes to get the gluten-free items tasting just right. She tried wheat substitutes and added different flavors to make it unique and tasty. After many batches of testing and tasting, she was finally happy with the outcome. And over time, the recipes became even more refined. And this is how Katz Gluten Free came to be.

How To Store Your Newbie Gluten Free Bread For Later

This loaf lasts a couple of days at room temperature. I usually slice up half of the loaf. Wrap each slice in plastic wrap or wax paper. Flash freeze the wrapped slices then place them in a freezer bag. When I need a slice I simply defrost one overnight in the fridge. Frozen slices can be warmed up in the oven or toaster as well.

With a few adaptations you can also make dinner rolls.

    My original recipe uses Schar Mix B Flour. In North America I believe this flour mix is called Schar Naturally Gluten-Free Classic White Bread Mix. I get excellent results with this bread mix every time.

    Overall Im quite pleased with the end result of this gluten free loaf. I do find that the bread is a bit wet / gummy compared to the other loaves and I suspect its because the Bobs Red Mill mix contains xanthan gum. For this reason I prefer this Gluten Free Bread with Bobs Red Mill One to One Flour toasted.

    The recipe is basically the same as the original. The only change I made was to use 2 tablespoons psyllium husk.

    Easy Gluten Free Bread
