One thing thats really fun about puff pastry is that it can make any meal go from mundane to fancy. And something that is always a hit at dinner parties is a vol-au-vent. Vols-au-vent are individual puff pastry shells that can be used to contain all sorts of foods for a fun presentation. I especially like these to serve chicken or shrimp salad, and for filling with fresh fruit and whipped cream for a simple yet pretty dessert.

Vol-au-vent means blown by the wind in French. The name refers to the lightness of the puff pastry after baking. These little guys are easy to makeand you can make them early in the day and then serve them for dinner. You can also shape them and then freeze before baking. You can then whip them out when you need them and bake them straight from the freezer.

Of course, you can just use them because theyre yummy and they look pretty. And, dont forget the dessert optionsyou can fill them with all sorts of things, like: pudding, fresh strawberries and whipped cream, ganache , sauteed apples w/cinnamon, etc.Individual Pastry Shells , Gluten-Free

1 recipe of Puff Pastry, Gluten-Free Cold water for sealing the dough1 large egg mixed with 2 tsp water for egg wash Extra tapioca flour for rolling out the dough

What Is Gluten Free Rough Puff Pastry

Puff pastry is made by creating layers – this is called ‘laminating’ the pastry.

As it cooks, the butter between the layers of pastry melt, causing the pastry to puff up.

You may have seen this on Bake Off, with bakers talking about how they’re making a ‘rough puff’ instead of traditional puff pastry.

In short, ‘proper’ puff pastry is made when you place a flattened block of butter in the middle of the pastry and then fold it into the layers.

But rough puff pastry is a little easier and a little less technical.

You simply ensure there are lumps of butter throughout the pastry dough, so when you fold the layers, this marbles through the pastry.

This creates a gorgeously flaky pastry – the perfect kind for sausage rolls, apple turnovers, cheese straws and even Greggs-style steak bakes.

It’s also very easy to do and requires very little technical skill – if you have a rolling pin, you can do it!

That will give the pastry a chance to puff first before setting.
