Dish By Dish Tips/tricks:

  • The Gluten-Free Bread Dough Will Be Wet and Sticky: Dont be alarmed when you see that the bread dough is wet and shaggy and sticky and shapeless strangely resembling cake batter as opposed to the firm and shapable traditional bread dough. It is completely normal and desired to have a wet bread dough when making gluten-free baked goods, because this will ensure a moister crumb once baked. Please DO NOT add more flour in an attempt to make the dough drier or more manageable. Gluten-free bread dough, unlike normal bread dough, does not required kneading, so it doesnt matter that you cant shape it with your hands since it will go straight into the loaf pan and take the shape of the pan.
  • Extra Fiber and Binding Power: If you want even more fiber and more binding powder, you can mix in 2 tablespoons of psyllium husk powder with the dry ingredients.
  • Add Flavor with Other Flours: If you would to add a bit more flavor and texture, you can replace 1/2 cup of the GF all-purpose flour blend with brown rice flour, sorghum flour, millet flour, buckwheat flour or almond flour.
  • Pan Size Will Determine the Height of Bread: I like using an 8 x 4 loaf pan because the bread rises slightly more in this smaller pan. If you use a larger pan , just note that the dough will spread out more and as a result will not rise as high compared to baking in a smaller pan.

Give Your Gluten Free Challah Bread Dough Time To Rise

Yeast bread dough rises faster in warm temperatures closer to 80°F that arent drafty. It rises more slowly in colder temperatures.

It also must be covered properly as it rises, so the moisture in the dough doesnt evaporate. If the moisture evaporates, the dough will be too stiff and the yeast will not grow properly.

Does It Matter Which Gluten Free Flour Blend You Use In This Gf Challah Recipe

Yes! It matters a lot which gf flour blend you use. And it matters that you add the additional 75 grams of tapioca starch/flour.

I highly recommend that you use Better Batter as the all purpose gluten free flour blend. It actually took me years to develop a reliable gluten free challah bread recipe without using our gluten free bread flour, so it could be easyand dairy free.

Dont use Cup4Cup gluten free flour here, even though it is one of my favorite blends. Its simply too high in starch to produce proper bread that holds its shape as intended and browns properly here.

This recipe relies even more than usual on true precision in ingredient selection, and in measurement accuracy. For reliable results like the photos that taste amazing, you must use the flours specified, and you must measure by weight.

Difference Between Gluten Free And Wheat Free

Homemade Gluten Free Bread Recipe Made EASY! (in Bread Machine)

There are a few differences between gluten free and wheat free. One note to make is that it is possible for someone to be on a wheat free diet and not need to be on a gluten free diet. However, if someone is on a gluten free diet for health issues, it is also necessary for them to be on a wheat free diet. ALL wheat has gluten in it.

A gluten free diet is necessary for people suffering from Crohn’s Disease, Celiac Disease, Irritable Bowel Syndrome , bloating, gas, and allergic reactions to gluten. A wheat free diet is usually associated with an allergic reaction to wheat itself. A wheat allergy might include skin irritations, rashes, hives, nasal congestion, and digestive tract issues among other symptoms.

Because gluten is in all wheat products, anyone with digestive problems related to gluten should also avoid wheat products. Some of the benefits of going gluten free and wheat free are better digestion, weight loss, more energy, and a potential reduction in inflammation caused by rheumatoid arthritis and fibromyalgia. A gluten free diet has also been shown to help some children with autism.
