PEANUT BUTTER GRANOLA BARS | A Healthy, Gluten-Free Vegan Snack Recipe

These bars are not your traditional crispy granola bar. The texture is soft + chewy with just the right amount of sweetness. The flavor depends on the nut or seed butter you use and also the add-ins you choose.

We like them best cold out of the freezer, but they can absolutely be packed in a school lunch box. The texture will just be a bit softer.

My Favorite Homemade Granola Bars Recipe

Sometimes you really just need a snack that gives you some power to manage the day. So its very useful to have a simple granola bar recipe on hand thats perfect to make ahead and store in the fridge to enjoy in those situations.

Unlike most store-bought granola bars, my homemade bars are gluten-free, vegan, and made with wholesome ingredients. They are rich in nutrients, vitamins, healthy fats, and are naturally sweetened. Plus they are incredibly delicious and even kids love them so they are the perfect snack for the whole family!

What I also love about this simple crunchy and chewy granola bar recipe is that it can be adapted based on your favorite dried fruits, nuts, seeds, or even chocolate. So you can basically add whatever you like or have on hand!

Safe + Fair Blueberry Cinnamon Granola

Ingredients: Oats, brown rice syrup, cane sugar, sunflower oil, dried blueberries, brown rice, millet, cinnamon, sea salt.

Safe + Fair commendably excludes eight of the top allergens from its granola recipe. While this nut-free, vegan pick doesn’t serve up a high calorie count, it’s too high in sugarwith brown rice syrup and cane sugar listed as the second and third ingredients. Gluten-free Healthy Chewy Granola Bars chocked full of oats, sunflower seeds, cranberries, flax seed, and chocolate chips, sweetened with honey!

I know that the arrival of January always brings that big push to get organized, start new routines, and eat healthier foods. None of that is really something I pay much mind to, really.

I try to stay consistent in the healthy eating department, and the thought of placing those other two things on myself at the beginning of a new year seems overwhelming and a lot of unnecessary pressure.

I did, though, recently have to start going through the contents of all my childhood belongings and keepsakes, as my parents won’t be able to store them anymore.

Talk about overwhelming.

My pre-digital camera childhood has been boxed up with pictures and negatives neatly in their jackets, bead necklaces, medals, diaries, and a couple of old teeth. .

I had forgotten how easy smart phones and “the cloud” have made it to save and catalogue special memories and moments.

Faced staring at box mountain the other day, I suddenly felt at a loss on what to put in the keep pile and what should finally, finally be discarded.

How do you even begin to decide which memories stay in your possession and which ones go?

While I’m still figuring out the answer to that question, let’s move on to something much simpler.

Can You Freeze Granola Bars

Yes! These freeze beautifully and are perfect for keeping in your freezer stash of snack!

How to freeze: Place the bars on a baking sheet and put them in the freezer for about 30 minutes to flash-freeze. Then, transfer the bars to freezer-friendly bags, squeeze out all the air and seal. Freeze for up to 3 months and thaw overnight in the fridge before enjoying.

How To Make Granola Bars

Lets get into the basics of making homemade granola bars. Variation recipes may differ, but this is the general process for each one. Be sure to follow the step-by-step instructions or watch the video below to see how easy they are to make!

  • Prepare Pan: Line an 8×8-inch pan with parchment paper, leaving a slight overhang for easy bar removal, and set aside.
  • Combine Wet Ingredients & Flavorings: In a large saucepan over medium heat, melt the almond butter, honey and coconut oil together. Bring it to a gentle boil, while stirring, then allow it to boil so the mixture thickens. Remove from heat. Stir in vanilla, cinnamon and salt .
  • Add Dry Ingredients & Water: Stir in the oats, followed by the crisped rice cereal, the shredded coconut and finally the water. Mix until everything is well combined.
  • Assemble in Pan: Transfer the mixture to the prepared pan. Using a flat spatula, press down very firmly to flatten, until tight and compressed. Press in the whole almonds and any optional add-ins.
  • For Baked Bars: Bake the bars in a preheated oven at 325°F for 21-25 minutes. Allow the bars to cool completely at room temperature, or chill them in the freezer for 15-20 minutes. Slice into even bars and serve.
  • For No-Bake Bars: Place the bars in the freezer until hardened, about 1 hour. Once the bars are set, use the parchment paper to lift them from the pan. Slice into even bars and serve.

    Refined Sugar Free Sweeteners

    Making these homemade granola bars without honey was easy, thanks to pure maple syrup.

    Using pure maple syrup helped hold the bars together, provided ample sweetness and also left a light maple flavor.

    Other refined sugar free sweeteners which work include brown rice syrup and agave nectar. Be wary if you use agave nectar, as it is a little weak, and may need a tablespoon or two more to hold together.

    Are Rice Krispies Gluten Free

    Gluten

    No, Kelloggs brand rice krispies are not gluten free because they have malt which contains gluten. I still call them rice krispies in the recipe for those that dont need it to be gluten free, and because that is the general term by which people know this type of cereal by. I purchase the Malt-O-Meal Crispy Rice which is gluten free. Its also perfect in my allergy-friendly rice krispies!

    Why Homemade Grain Free Granola Bars

    Most store-bought granola bars contain chemicals and additives that I am just not comfortable giving to my daughter. However, when I make my own, I can control what goes into her body and honestly, these couldnt be easier.

    All you need ffor these grain free granola bars is coconut oil, honey, your choice of nuts, fruits, and nut butter and whatever else you want to throw into your bars. You can mix up the ingredients in under 10 minutes. Its super easy and lots of creative fun!

    Homemade Granola Bar Tips

    Dont forget to chill. These bars need time to set up in the fridge so dont cut them right away. Give them a good hour or even overnight before slicing and eating the bars.

    Store them in the fridge. Speaking of keeping things cool, youll want to store these in the fridge in a container for about a week. You can freeze them, just wrap them in a bit of wax or parchment paper before storing in the freezer. And make sure to let them thaw in the fridge or countertop before eating. Dont chip a tooth over these frozen granola bars.
