Gluten Free Graham Crackers
  • 1 1/2 cups any combination of gluten free flours
  • 1/2 cup organic cocoa powder
  • 1/2 cup organic cane sugar
  • 1/2 tsp. baking soda
  • 1/2 cup organic palm shortening and/or coconut oil
  • 6 Tbsp. honey
  • Heat the oven to 350*F. Cut three pieces of parchment paper the size of baking sheets.
  • In a large bowl, cream the shortening/oil and sugar.
  • Add the cocoa powder. Blend well .
  • Add the flour, baking soda, salt and honey. Blend well.
  • Using a spoon or your hands, check if the dough is moist enough/holds together well. If the dough is still crumbly slowly add water, 1 Tbsp. at a time until dough will hold together when squeezed with your hand.
  • Place 1/2 of the dough onto one of the pieces of parchment paper. Place another layer of parchment paper over top
  • Roll the dough between the parchment paper until it is 1/4 thick. Remove top paper.
  • Using a pizza cutter or a knife, cut the dough into squares.
  • Place the cookies onto a baking sheet.
  • Repeat this process for the second half of the dough.
  • Bake the cookies at 350 for about 15 minutes.
  • After removing the cookies from the oven, run the pizza cutter/knife along the cut lines again.
  • Allow the cookies to cool completely. They will crisp as they cool.
  • Store in an air tight container in the cupboard or in the freezer for long term storage.

    The crust in the photo at the top of this post is the baked graham cracker crust. Its very stable, even at warm room temperature, although a no-bake graham cracker crust is most stable when chilled.

    I like having the option of using a baked graham cracker crust in desserts that need some extra stability from the crust. Thats often the case with no-bake recipes like our smores pies, but it can come in handy when youre making something quite small, like our cheesecake cookie cups.

    A no-bake graham cracker crust simply will not work in a standard miniature muffin tin . It will fall apart as you try to get each crust out of its well of the pan.

    The smallest size well from which I have ever successfully removed an intact no bake cookie crust is 6 well cake panel pan from USA Pans . And even then, youll need to add an unbleached parchment paper sling to the bottomand dont chill the crusts too much or they will become brittle and crack when you try to remove them.

    The best feature of the baked crust is its flexibility. Because its so stable, you can use it to make very small confections, and even lift it right out of a pie plate after its been baked and cooled.

    Then, fill the crust with something warm or cold. Just be sure not to overbake the baked crust and it will cut easily with a fork when you serve it.

    How To Make Gluten

    These 1-bowl graham crackers start with whisking together everything but the flours and ground flaxseeds.

    We keep them naturally sweetened with maple syrup and coconut sugar and include molasses and cinnamon for a more subtle sweetness and graham cracker flavor. Baking soda helps them rise, sea salt enhances all the flavors, and melted coconut oil makes them crunchy and snap-able just like the real thing!

    Next we stir in the flours. We used mostly oat flour to keep them whole grain and wholesome! Arrowroot starch adds a little lightness and ground flax seeds add fiber and omega 3s.
