While researching pop tart search result trends, I noticed a large number of people searching “pop tarts are ravioli.” What the heck?! I then laughed for five minutes before I, too, googled it and discovered that it’s a popular meme. I’ve crossed the age threshold when my kids have to explain trends to me like I’m 90. JK, my oldest is three. She called them cookies – she has no idea what defines a pop tart. She’d weigh into the debate with: “pop tarts are frosted cookies.”
As if there’s any actual debate, my vote is: pop tarts are not ravioli. The argument in favor seems much more convincing when you’re talking about regular pop tarts. A plain dough filled with something delicious and topped with some sort of sauce. Who cares if it’s savory or sweet, right?
In the world of gluten-free pop tarts though, the flour blend to make a gluten-free pastry dough and that which makes a pasta dough are drastically different. I mean, never mind the obvious part about how you’d never drizzle sugary icing over ravioli.
Though, come to think of it, I once did just that. I set out to make “dessert ravioli” out of pastry dough that instead baked up into mini hand pies. So, I digress, maybe pop tarts are ravioli after all.
Are Pop Tarts Gluten
Ingredients: 2 cups gluten free multi-purpose flour. 8 tbsp vegan butter, cold and chopped into ¼ inch pieces. 3 tbsp palm oil shortening. 6 tbsp water, ice cold. 2 tbsp almond milk. 1 tbsp + 3 tsp sugar. ½ tsp salt. 12 tbsp strawberry preserves.
The best part is that these pop tarts are not only gluten-free, but vegan as well.
The two main non-vegan ingredients found in most Pop-Tarts are milk, which can also be found in the form of whey, and gelatin. Sadly, every frosted Pop-Tarts flavor contains gelatin in the frosting, but there are still three very delicious, unfrosted Pop-Tart flavors that are vegan-friendly.

Did You Know That Icing Sugar Isnt Vegan
Honestly, I was pretty horrified to find out that some sugar isnt vegan. Geez. How is sugar not vegan? Apparently, in the processing of sugar, a lot of companies use bone char as a decolorizing filter. Bone char is cattle bones. Gross. Although I am not highly educated on this topic I do know that there are some companies that do sell completely vegan sugars. I was happy to see that my go-to brand Wholesome has all vegan sugars. Their powdered sugar is vegan so you can have your gluten free pop tarts frosted without worrying about what the heck bone char is.
The Breakdown Of These Raspberry Pop Tarts
While we are on the subject of cool, I think its pretty unique and amazing to make your own jam. You may have noticed that Im kind of obsessed with chia jam. I love having it on my toast in the morning. But when I was brainstorming for this recipe I thought why not throw chia jam in as the filling!? The chia jam is next level.
The first batch of raspberry pop tarts that I made, Adam said the filling needed to be sweeter. I first tested it with just 2 tbsps of maple syrup and then tested it with 4. He obviously liked the recipe best with 4 tbsps, cause he has such a sweet tooth. A very picky sweet tooth. But you can adjust the sweetness yourself. I would suggest starting with less, and then you can always add another tablespoon or two during the blending process when you add the chia seeds. Remember there is a sweetened glaze on top of these gluten free pop tarts so that will increase the sweetness factor.
The gluten free pastry that is used is crispy, yet flaky and soft on the inside. Its actually quite easy to roll out and it is quite forgiving. The filling on the inside is made of three simple ingredients and complements that flaky pastry perfectly. And that hibiscus glaze on top is Adams favourite part. Its basically the last part of the recipe that completes these vegan pop tarts.
Is gluten free pastry a little fincky? Yes. But DONT be intimidated. If you follow the steps in the directions you will be ok! Promise. This vegan pop tart recipe is SO WORTH IT.

I like to use all sorts of fun colored sprinkles and even have been known to mix up 2 different fruit flavored icings and swirl them together. The store-bought shelf-stable breakfast pastries of my childhood are anything but healthy. Their homemade gluten-free pop tart counterparts, however, are made with whole grains and real ingredients. Tips And Tricks For Making A Giant Pop Tart
- You want the butter to stay cold. I like to freeze mine before putting it into the food processor.
- Roll out your rectangles of pastry dough and pop them into the freezer for at least 15-20 minutes. I think it is easier to handle the top layer without it breaking this way. If it breaks, thats okay too. Just piece it back together. Youre covering it with frosting after all.
- Poke LOTS of holes in the top before baking. The first time, I only cut a few holes in the top of the dough to let steam escape and my pastry puffed up a lot. The more holes the better in this case.
- Let the pop tart cool before you place the glaze on top so it doesnt run off the sides.

How To Make Homemade Gluten
TO MAKE THE GLUTEN-FREE PASTRY DOUGH
- Chop the butter into small chunks and place in a small bowl. Put the butter, shortening, and water into the freezer for about 5 minutes or until really cold.
- Add the gluten-free flour, sugar, and salt in a large bowl and stir to combine the ingredients.
- Add the butter and shortening to the flour mixture and mix until the butter and shortening are incorporated into the flour. I use my stand-up mixer with the paddle attachment, but you can use a hand mixer or a pastry cutter.
- Add in the eggs, water and apple cider vinegar and mix until the dough starts to form and all the ingredients are combined. The dough will be sticky.
- Shape the dough into a ball, wrap in plastic wrap and refrigerate for at least 45 minutes.
TO ASSEMBLE THE PASTRIES
- Preheat your oven to 350°F.
- Unwrap the dough ball, cut the dough ball in half and place the half onto parchment paper lightly floured with gluten-free flour.
- Shape the dough half into a rectangle. Lightly flour the pastry with gluten-free flour, and using a rolling pin, roll out the dough to about Â¼-inch thick.
- Using a pizza cutter, cut the dough into a 9-inch by 8-inch rectangle.
- Cut out the dough into 3-inch by 4-inch rectangles. I used a ruler as a guide.
- Place the dough rectangles onto a parchment-lined baking sheet.
- Repeat the steps with the other half of the dough ball to make 8 more rectangles. These will be the tops of the pastries. You will have 16 rectangles in total .

Recipe Step By Step Directions:
Step 1: Add your dry ingredients to a large bowl and whisk to blend them all together.

Step 4: In a small bowl, whisk your wet ingredients together.

Step 9: Layout a piece of wax paper and place the dough ball on top. Optional: sprinkle a little flour on the wax paper to prevent sticking.
Step 10: Roll the dough to ¼-inch thickness. Use a pizza wheel to cut the uneven edges off. Cut into evenly sized squares or rectangles.
Step 11: Place jam or filling in the middle of a square. Spread it around but leave a good amount of dough around the edges. This is important so you can seal the edges together.
Step 12: Place a square the same size over the jam.
Step 13: Use a fork to press the edges down all around the square.
Step 14: Gently move each pop tart to a parchment paper-lined baking sheet.
Step 15: Brush the top of each pop tart with milk or egg wash.
