Mini Wedge Salads With Homemade Blue Cheese Dressing
Everything is cuter when it is small. Puppies. Babies. Love Handles. Mini Coopers. They just ooze cuteness. I for one am not impressed when my food is small. I mean, yes it could be considered adorable to have a stack of tiny silver dollar pancakes. But it is only adorable to my mind. My stomach thinks it looks ridiculous. So I was hesitant to call these Mini Wedge Salads. Each salad is actually a good size, it just so happens they are smaller than a traditional huge head of lettuce wedge salad. And yes, gosh darn it, these are in the same category as baby chicks super cute.
These are perfect for appetizers, because you could even cut these up in half again, so they are more small bite sized. They arent heavy but the flavor of bacon and blue cheese is classic. I almost called these California Wedge Salads because of the avocado. We here in on the West Coast add avocado to everything. I know if you live in other states, avocado might be scarce. And Im sorry about that. I will try to pool my money together to send you some. Not to rub it in but avocado is one of my most favorite ingredients. It is so creamy, full of healthy fat, and brightens up any dish. Avocado and bacon, goes together like blue cheese and bacon. Thus making x +y = m. Pretty much all three ingredients go together well.
This bacon comes out bueno in the microwave. Shout out to K.A. for not using this anymore!

Research Analysis And Cca Acceptability
Enzyme-linked immunosorbent assay kits use color change and antibodies to determine the identity of a substance. According to Anca’s report, analysis of blue cheese samples conducted by Koerner’s laboratory used three different commercial ELISA test kits to determine the gluten content of blue cheese fermented using products that did and did not contain a glutenous base.
The process involved testing five blue cheese and mold samples total, with three made with mold cultured on gluten-containing media and two samples of mold cultured on wheat-based dextrose. Each sample was then tested three times using each of the ELISA tests. As a result, no detectable levels of gluten were found in any of the samples.
The Canadian Celiac Association has added blue cheese to its “Acceptability of Food and Food Ingredients for the Gluten-Free Diet” pocket dictionary, meaning that it should not bother even people with celiac disease, much less those with gluten intolerance or those on a gluten-free diet for health concerns.
Is Blue Cheese Dressing Vegetarian
One type of blue cheese called Stilton is most often vegetarian and free of rennet. Rennet is a complex set of enzymes produced in the stomachs of ruminant mammals. Versions of Stilton blue cheese that contain the traditional rennet are clearly marked, but most do not contain this nonvegetarian ingredient.
With that being said, most brands of dressing on the market simply list blue cheese as an ingredient without specifying the type of blue cheese used therefore, it can be hard to tell if the product is truly vegetarian.
The best way to guarantee your blue cheese dressing is in fact vegetarian is to make your own using rennet-free stilton blue cheese. Try the Keto-friendly recipe above, you wont be disappointed.

Does Blue Cheese Dressing Cause Weight Gain
Salads are a dieters best friend when it comes to weight loss, however, if you put the wrong dressing on your salad, it can defeat the purpose. Those thick, creamy dressings like blue cheese, ranch, and Caesar, are often super high in calories, fat, sodium and even sugar.
While fat-free salad dressings help cut the fat, they often contain high fructose corn syrup and titanium dioxide. Titanium dioxide is a chemical used in processed dressings to whiten their color. This ingredient has been linked to some negative health effects.
The upside of blue cheese dressing is that the flavor is quite strong, so you can get away with using less of it on your salad. Shop smart for your dressing by comparing the nutritional labels of different brands before you buy your blue cheese dressing. One great brand that we can get behind is because it only contains 35 calories, 3.5 grams of fat, and only half a gram of sugar per tablespoon.
Ultimately, the healthiest dressing to use on your salad is one that you make yourself homemade with fresh ingredients, like extra virgin olive oil, balsamic vinegar, lemon juice, herbs and spices.

Cheeses That May Have Gluten
The FDA allows processed and packaged food to be labeled gluten-free if it contains no wheat, rye, barley, or any crossbreeds of these grains. Gluten-free foods may have also been processed to remove gluten. It must contain less than 20 parts per million gluten to be considered gluten-free.
That’s the lowest amount of gluten that can be detected with available scientific tools.
Its important to read the labels of any cheese and cheese products. Some cheeses and cheese products may have certain ingredients added in. These can include:
Cottage cheese. Cottage cheese doesnt usually have gluten. But some brands may use modified food starch or wheat starch.
Blue cheese. Most blue cheese is gluten-free. Mold spores are added to the milk mixture to make blue cheese. These spores are sometimes grown on rye or wheat bread. But blue cheese rarely contains more than 20 ppm gluten. So it should not trigger a gluten allergy.
Shredded cheese. You can usually find several different types of pre-shredded cheese at any grocery store. The cheese itself is almost always gluten-free. But manufacturers may use a starch with gluten to prevent the shreds of cheese from sticking together.
Cheese spreads. These are often gluten-free. Some brands may use gluten to help with the consistency of the spread. Check the label.

Ingredient Notes & Substitutions
- Blue cheese – use a cheaper kind, like a generic “blue cheese”. Note that some blue cheeses are not vegetarian.
- Mayonnaise – use a store bought kind, it’s not worth it to make your own for this one. I like Hellman’s mayonnaise*.
- Fresh lemon juice can be substituted for a bottled kind, but the fresh one gives a better taste.

Is Blue Cheese Gluten
There are many stories about how blue cheese came to be. They all involve cheese, bread and a cave. The basic tale is this: someone left a piece of bread in a cave where the cheese was being aged. The bread became moldy and the mold spread to the cheese. Someone came back to the cave days or weeks later, and yum yum yum moldy blue cheese! An industry was born. They began to purposely inject cheese with bread mold during processing, leading to the creation of blue or green-veined cheeses such as Roquefort, Gorgonzola, Cambozola, and Stilton.
Do veined cheeses contain gluten? This question comes up a lot when people have to change their diet due to celiac disease, gluten intolerance, or a wheat allergy. After conducting my own blue cheese investigation, I have the answer: some blue cheeses do contain gluten, but most do not.
Some blue cheese is still made the old-fashioned way using bread mold. However, most cheeses produced in the U.S. today are not started with a bread mold because its not efficient or economical. Cheesemakers can now buy liquid blue mold that is made in a laboratory . These do not contain gluten.
Yup, thats right. You can eat blue cheese. Just make sure it is one of the gluten-free ones listed below. I will update this list as I get more information.
