    The first thing youll notice about this recipe is that instead of all-purpose flour, I made this carrot cake with almond flour. Ive eaten my share of carrot cakes and carrot-cake inspired recipes , and I think the almond flour actually makes carrot cake taste evenbetter.

    Almond flours subtle, nutty flavor was made to be incorporated into carrot cake, which traditionally calls for nuts anyway. Its as if the two were destined to be together all along.

    Almond flour is heavier than all-purpose flour , so my biggest obstacle with this recipe was ensuring the carrot cake came out tender and fluffy, not dense. Beating the eggs for several minutes first proved to be the trick, a tip I picked up from Bon Appetit.

    The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.

    If you scoop the flour directly out of the bag with a measuring cup you may get too much flour than the recipe calls for because of compacting. Also use a measuring cup made for dry ingredients, not a glass pyrex measuring cup that is made for measuring liquids.

    I’ve made this cake so many times that I’ve made it with Better Batter classic gluten free flour blend, Cup4Cup gluten free flour blend, and my Better Than Cup4Cup blend. They all work beautifully.

    It’s a relatively forgiving recipe, unlike for example our perfect gluten free vanilla cake, which is so simple that it must be made with just the right gluten free flour blend, sifted. Steer clear entirely of gf flour blends with very gritty rice flour, like Bob’s Red Mill, but you might even be able to make this cake successfully with King Arthur Flour Measure for Measure.

    Can I Make This Gluten

    You can make the carrot cake layers even weeks ahead by wrapping them tightly and freezing them. You can even store it at room temperature, wrapped tightly in plastic wrap, up to 1 day in advance too!

    You can also make the frosting in advance and store it in the refrigerator for a few days. Keep in mind that it will be solid once fully chilled, so you will need to let it warm up at room temperature for about an hour, and then mix it again with your mixer to reach the proper texture for spreading.

    My carrot cake cupcakes have been a long time fan favorite recipe on my site, so I though it was time to give you a layer cake version that holds up to being frosted and decorated.

    This gluten-free carrot cake recipe is SO moist and delicious. While it makes the perfect dessert for Easter, its a great recipe for any occasion really. Its so versatile.

    This carrot cake uses warm spices, such as cinnamon, nutmeg, cloves, and ginger, to offset a luscious cream cheese frosting. This is seriously the best gluten-free carrot cake. Its no wonder its one of my most popular gluten-free cakes amongst my friends and family!

    Tips For Baking The Best Gluten

    • As a shortcut, I keep applesauce snack cups in my pantry. They are ½ cup portions.
    • As a shortcut, you can buy bagged shredded carrots. I use an OXO grater to grate the carrots.
    • To keep this super moist cake from sticking to the bottoms of your pan add parchment paper before spraying with gluten-free non-stick cooking spray. Trace the bottoms of the cake pans with a pencil and cut them out with scissors to have them fit perfectly! Doing this step also makes removing the cakes from the pan super easy.
    • Bake the cakes on the middle rack.
    • Check the centers of the cakes with a toothpick to see if its done. This carrot cake will have a little cake stuck to the toothpick because its super moist, but it should not be wet.
    • Also, the cakes will start to pull away from the side of the pans a little when they are finished baking and the edges will start to brown. Please watch your oven because all ovens are different. You do not want to over-bake a gluten-free cake, because it will cause it to be a drier cake. If you underbake the cake, the centers will be gummy. My 9 cakes took 40 minutes to bake.
    • Allow the cakes to completely cool in the pans before frosting. Once the cakes are completely cooled I cover the cake pans with plastic wrap and refrigerate for several hours, up to overnight before I frost the cake. I like carrot cake served really cold.

    How Did I End Up Making Gluten

    The first is that carrot cake isnt the most popular flavor in my house, but clearly theres a good chance Id end up eating the entire thing. So I figured Id make cupcakes based on this Flourless Carrot Cake from Diethood. At least then I could portion it out a little at a time, instead of sitting down with the whole cake.

    The second problem was that while this recipe makes a fabulous cake, its probably not meant for baking in cupcake liners because it pulled away from the liners and sank and just looked very un-cupcake-ish. Delicious, but the crumbled cupcakes ended up in these Carrot Cake Cheesecake Parfaits.

    Then I thought about the Deep Dish Hot Fudge Brownies for Two and Deep Dish Chocolate Chip Cookies for Two that I had made, and I knew what I had to do. A little math, a little mixing , and voila two little gluten free carrot cakes!

    Also, is it even a carrot cake if it doesnt have cream cheese frosting? A simple blend of cream cheese, Greek yogurt, vanilla, and sugar makes a creamy and tangy topping for those lovely little cakes that isnt as super sweet as some other cream cheese frosting recipes.

    Carrots + Greek yogurt = LUNCH! Am I right?

    Although it’s often assumed that a recipe for a cake can be used to make cupcakes, and vice versa, it isn’t always the case. Since each cupcake is its own portion, there’s a much larger surface area that is exposed to the heat of the oven.

    When I baked the original cupcake recipe as a cake, it was just too fragile. It tasted great, but the cake cracked when I frosted and layered it. Adding 1/4 cup more flour to the recipe before baking it as a layer cake was the perfect fix.

    I’ve successfully made cream cheese-style frosting dairy free by using 4 ounces Daiya nondairy cream cheese, 8 tablespoons nonhydrogenated shortening, and 6 tablespoons Earth Balance nondairy butter in place of the butter and cream cheese.

    I find that nondairy cream cheese has a strong taste that can become unpleasant if used in large amounts, so I don’t use a whole 8 ounces of it in place of 8 ounces of conventional cream cheese.

    An easy gluten free dairy free alternative to making your own frosting is to buy a can of Pillsbury brand cream cheese frosting. It’s gluten free, and contains no dairy ingredients .

    I’m all about an easy and reliable recipe. Sometimes there’s just no need to reinvent the wheel. That’s why I love boxed cake mix! I find that the combination of a good boxed cake mix with homemade frosting often gets the best reviews. That’s why we’re starting with a box mix for these super delicious carrot cake cupcakes! I used Krusteaz brand gluten-free yellow cake mix for this recipe.

    You’ll need:

    • The box mix and the ingredients listed on the back of the box. For me, that was butter, milk, and eggs.
    • Freshly grated carrots. Please grate them yourself, they have much more moisture than the pre-shredded carrots! I use my beloved Cuisinart food processor to shred them, but a box grater would work just as well, arguably with a bit more elbow grease.

    When I make this recipe, I typically will double the frosting recipe. The recipe you see in the card is for just 1 serving of frosting which normally will coat the entire cake but if you want to use that like a crumb coat, make another batch of frosting.

    That means you would want 2 batches of frosting so that you could let the crumb coat harden and then do another layer of frosting.
