How To Make Healthy Rice Crispy Treats

Similar to traditional rice crispy treats, this option uses just a few steps.

STEP ONE

We start by melting together our honey and almond butter. Youre going to want to let the ingredients melt together, but also cook for a bit to help the sugars in the honey start to caramelize. This will also help the cereal all hold together.

STEP TWO

From there, youre going to pour the warm liquid over the rice cereal and stir it all together with a rubber spatula.

STEP THREE

The final step which can be a bit sticky is to transfer the rice crispy dough into a baking pan. Since this recipe isn’t getting baked, you’re going to have to press it into the pan with your hands. You want to press it down really firmly so that everything will stick together as it chills.

Erewhon was the first brand of gluten free crisp rice cereal that I tried. In fact, I used to develop recipes, along with a lot of other bloggers, for Erewhon. They paid bloggers fairly at a time when almost no one else did, which I think speaks well of the brand in general.

UPDATE: In June 2020, they announced that they have discontinued the Erewhon brand of cereals and granola. Erewhon brand cereals are nice and simple, and were always good quality. Ill miss them! And Im actively looking for a replacement.

While they last, here are the other details about Erewhon:

  • Price you should expect to pay: Around $4.50, but it can be much more expensive.
  • Availability: Poor! Theyve discontinued the Erewhon cereals, so they will be harder and harder to find.

Ideas For Jazzing Up Your Rice Crispy Treats

Last but not least, let’s talk about some ways that you can make these rice crispy treats a bit more interesting. Here are some of my favorite ways to jazz up these gluten-free rice crispy treats:

  • Peanut butter: if you’re a peanut butter lover, feel free to swap the almond butter with peanut butter. That should give you a subtle peanut butter flavor!
  • Chocolate: want to make them a bit more decadent? A drizzle of chocolate should do the trick! Simply melt some dark chocolate and either drizzle them or spread them on top. Let the chocolate cool and then slice them into squares!
  • Cake batter: want something a little more whimsical? Swap the almond butter for cashew butter, mix in some sprinkles and then finish them off with a drizzle of coconut butter and more sprinkles. Now that I’m thinking about it..should I make these for the blog?! Let me know in the comments!

When Crisp Rice Cereal Isnt Just Rice

Since rice is naturally gluten free, you might wonder, are Rice Krispies are gluten free ? Conventional Kelloggs Rice Krispies are made with malt syrup, derived from barley, which is a gluten-containing grain. They are most definitely not gluten free.

In 2011, though, Kelloggs introduced a gluten free variety of their famous snap, crackle and pop Rice Krispies that was sold in conventional grocery stores all over the U.S. However, they were discontinued in the U.S. just a few years later. The gluten free variety is, however, still available in Canada.

When they were first available in the U.S., my gluten free son had only had Erewhon brand crisp rice cereal, and theyre great. Ive used them for baking for years.

But I had a fondness for Kelloggs brand, as I grew up eating them, so I bought a box. They were, well, pretty much the same as I rememberand tasted very similar to 3 of the 5 brands below.

Fortunately, now there are tons of brands of gluten free crisp rice cereals available for purchase. Some are a little more precious than others and are a bit more expensive.

Cereal is pretty expensive, in general, though . Ive always found cereal to be a poor investment for the mornings nutrition.

But its fast and always ready when you are. As long as its low in sugar and high in whole grains, Im fine with it for my kids.

Growing up we had them around ALL the time. Aaaand then I kind of forgot about them over the years.

But, were fixing that today with this dreamy dairy free version.

Which adds that delicious buttery flavor without the actual butter.

{Side note you can absolutely use dairy free butter as well. Dealers choice).

Make Your Own Rice Krispies Treats Without Gluten

You can easily make your own gluten-free rice crispy treats without gluten .

Simple gather a gluten-free brown rice cereal of choice, marshmallows and butter .

Next, melt the butter in a large bowl in the microwave for a few seconds, then add the marshmallows and continue microwaving the mixture until the marshmallows are completely melted, about 60-90 seconds .

Vegan marshmallows may take longer to melt in the microwave, and they dont melt as evenly.

Next, add your brown rice cereal to the melted marshmallow mixture and mix well. Its sticky but you got this!

Now youll want to add your sticky mixture to a greased casserole dish. Press down the mixture as best as you can with your spatula, but then use wax paper to help you press the mixture solidly in place by hand.

Allow the mixture time to cool and set in place.

Once cool, you can cut the treats into squares and eat!

If you love chocolate, add a chocolate drizzle on top of your crispy rice treats. Why not?

Simply melt one cup of chocolate chips along with one teaspoon of avocado oil and then use your spoon to gently drizzle the chocolate all over the treats.

Thats more like it agree?

I could not wait for the chocolate to set in place , so I dug in right away. You can see the chocolate isnt quite set but thats okay it still works!

Golden Rule To Making Gluten Free Rice Krispie Treats

Golden rule that will allow you to make huge batches to small individual batches. Whatever the amount of butter you use just use equal amounts of marshmallows and rice cereal.

You get me? When Im making this myself and I know Im going to be the only one eating it Ill make it with the 2 ratio. I actually love these for a travel treat. They store perfectly in saran wrap.

Easy Rice Crispy Treats Without Marshmallows

Since I know there are so many people who are also avoiding refined sugar but still want healthy treats, these rice crispy treats are literally perfect.

They’re made without any marshmallows!

Are you vegan? If so, you can swap the honey with brown rice syrup. I don’t think maple syrup or agave will work because of the consistency, but brown rice should do the trick!

Are Rice Krispies Gluten Free

Kelloggs Rice Krispies cereal is not gluten free because it contains malt flavoring, which is a flavoring derived from barley. Barley is not gluten free. Gluten is a protein found in wheat, rye, and, you guessed it, barley.

Its unfortunate that Kelloggs added gluten to what should have been a naturally gluten-free rice cereal, but alas it did.

You might recall that Kelloggs once came in a gluten-free version however, Kelloggs discontinued production of the cereal in March 2015 citing manufacturing constraints.

If you missed out on the Gluten-Free Rice Krispies before they were discontinued, I found them on , but hey, if you want to try them there are a few boxes left!

Arent Rice Crispy Treats Already Gluten Free

Youd think so, but youd be WRONG!! When I was first diagnosed with Celiac I didnt realize, like most of you probably didnt either, that gluten is in nearly Evvvvverything! Especially things you wouldnt think itd be in . Most cereals are made with malt, or barley malt, which is made fromyou guessed itbarley. And we cant have barley.

After that initial shock of not being able to eat things like RICE cereal, I began to find alternatives. Like tamari for soy sauce. And Aldis store brand rice crispies for Kelloggs Rice Krispies, which are naturally gluten free .

But What About Rice Krispies Treats

If you can’t eat gluten, Rice Krispies Treats are also off the table. Like the cereal, Rice Krispies Treats or bars are made with malt flavor and are therefore not gluten-free.

But these desserts are super-easy to make right at home without the gluten. For starters, you’ll want to choose gluten-free rice cereal as your base . But keep an eye on the marshmallows, too. Common marshmallow brands, like Jet-Puffed, are generally free of gluten ingredients, formulated with mostly corn syrup, sugar and cornstarch.
