If you dont want to make a giant pop tart thats okay! You can make smaller pop tarts with this recipe.

The recipe will make about 6 smaller sized pop tarts. Just cut the dough into 12 equal rectangular pieces and make sure to pinch around the edges with a fork to seal the jam in the pop tart.

You may need to lower the bake time to about 20-25 minutes, rather than the regular 40-45 minutes that this giant pop tart recipe requires.

I’ve been gluten free for 2 and a half years now after finding out I had an intolerance to wheat. If you are gluten free as well, you understand that there are no good tasting pop tarts from the knockoff gluten free companies. In my opinion, all of them have fallen short of Kellogg’s original design and taste. It seems that all other competitors can not get it right.

The substitution just doesn’t work for them and often tastes awful. Although understandable that these “breakfast” tarts might taste different without wheat, the GF recipe is not perfected by knockoffs and the taste never gets better, as I can explain, usually GF foods get more savory and tasty the longer you live without the wheat.

So Kellogg, I and the others who are signing this wish for you to work on a GF pop tart. One that will make us not wish we want to die internally because we miss the “real deal”. Let us have the real deal but without the wheat.

The Strawberry Chia Jam Filling

For the strawberry filling, youll essentially be making our sugar free and keto chia jam. The chia seeds are an awesome way of adding extra fiber and nutrients to your favorite berry jam, while thickening up the lot without the need of extra sugar.

And I also like to add a handful of raspberries to liven things up a notch. But you can always do all strawberries, or any berry of choice really!

The batch also makes a little extra than what you need for the pop tarts themselves. But trust me, youll want to have it around. Its awesome with a little yogurt and even with chia pudding .

Gluten Free Pop Tart Filling Variations

Strawberry Filling – This gluten free pop tarts recipe includes a strawberry filling.

Raspberry Filling – Simply swap out the strawberry jam for raspberry jam.

Cinnamon Sugar Filling – Add ½ cup packed dark or light brown sugar, 2 teaspoons ground cinnamon, and 1 tablespoon all-purpose gluten-free flour to a small mixing bowl and mix until combined.

You can also swap the jam out with other flavors of jam to make these gluten free pop tarts just the way you like them. We’ve used apricot and grape in the past because that’s what we had on hand.

Who are we kidding? Gluten Free Toaster Pastries? Who even says that? Its like saying facial tissues or adhesive bandages when we all know were talking about Kleenex and Band-Aids. So, I say, cut the pretense and call these the real deal, because this recipe makes gluten free poptarts!

Pop Tarts are one of those childhood pleasures that we never give up as we age. Offer any grown-up one, and youd be hard-pressed to find one who would turn you down.

Go gluten free, and you start craving all those kinds of things that were so taken for granted before, no matter what your age or status in life.

I love taking those gluten-filled favorites and converting them to gluten free. Every time, I feel like Ive scored a victory in some undefined playbook of gluten v. the good guys/girls! So score one for the good team with this gluten free poptart recipe and do your whole family a favor by making these treats this weekend.

Dont be afraid that gluten free poptarts are complicated or difficult to make, either. They most certainly are NOT! In fact, Ive made this dough in advance, refrigerated half, and days later come back to make more poptarts another day. Its super fun, super easy, and of course, super yummy.

And now that there are no Glutino gluten free poptarts being made anymore, theres all the more reason to make your own .

Why Do You Add Cornstarch To The Jam Filling

While you could skip the step of adding cornstarch to the jam filling, I think its a great addition to this recipe.

Adding cornstarch to the filling makes it a thicker, stiffer consistency which is perfect for a giant pop tart. I have also tested it without the cornstarch step and the recipe will still work and taste good. The jam filling will just be more liquidy when you take a bite.

As a note, you should add the cornstarch to the jam while its warm. Also, the reason you first stir together the cornstarch and water before adding to the jam is that otherwise the cornstarch will clump up and there will be large white chunks in your filling.

How To Make Gluten Free Pop Tarts

  • In a small mixing bowl, mix together the jam and cornstarch set aside.
  • Make the pie crust per the directions, and roll them out into rectangles. Slice each pie crust rectangle into 3 even strips lengthwise, this will create 6 long strips total between the two pie crusts.
  • Place a heaping tablespoon of the jam mixture onto the bottom half of each strip, leaving about ½ of space around the edges. Brush the edges around the jam with the egg wash.
  • Fold the pastry in half. Use a fork to seal the seams. If any cracks appear in the pastry try to pinch the dough together to create a seal and prevent jam leaking during the baking process. Repeat for the remaining pastry strips.
  • Poke steam holes with a fork in each pop tart and transfer them to the baking sheet. Brush the top of each pastry with the egg wash.
  • Bake for 20-22 minutes, or until the pastry is golden brown and cooked through.
  • Allow to cool completely before adding the glaze.
  • For the glaze: In a medium bowl, mix together the powdered sugar and milk. Add more or less milk for consistency. Drizzle the icing over the gluten free pop tarts. If desired, decorate the tops with sprinkles before the icing sets up.

    How To Store And Refresh These Gluten Free Pop Tarts

    The finished pastries can be stored in a sealed glass container at room temperature and should maintain their texture for at least 3 days. Storing something in a glass container maintains texture, although a plastic container tends to make anything crispy become soft and weepy.

    For longer storage, try piling the prepared pastries in a freezer-safe container . Theres no need to freeze them first in a single layer, as theyre very stable at room temperature. Once the glaze is completely set, it shouldnt be damaged in storing them.

    To refresh them, do just what you do with a Kelloggs Pop Tart: pop it in the toaster oven! Theres no need to defrost the pastries if theyve been frozen. But remember that, if theyre frosted, that part gets super hot so be careful with those fingers!

    As a child of the 1980s, I ate Pop-Tarts for breakfast every single morning before school. At first, I thought that they had to be toasted. Theyre called toaster pastries, after all. The day that I discovered that they were still quite delicious right out of the package was the day I could sleep about five minutes later every school morning.     • 3/4 cup granulated sugar
    • 8 tablespoons unsalted butter, melted and cooled
    • 1 teaspoon pure vanilla extract
    • 1 egg , at room temperature, beaten

    • 3/4 cup seedless strawberry jam or jelly

    For the glaze

    • 2 cups confectioners sugar
    • 1 tablespoon lukewarm water, plus more by the half-teaspoonful

  • Prepare the crust: Heat your oven to 350 degrees F. Line a large rimmed baking sheet with unbleached parchment paper, and set it aside.

    Recipe Step By Step Directions:

    Step 1: Add your dry ingredients to a large bowl and whisk to blend them all together.

    Step 2: Dump in the cold butter chunks. Again, use vegan butter if you are dairy-free.

    Step 3: Use a pastry blender to cut in the butter.

    Step 4: In a small bowl, whisk your wet ingredients together.

    Step 5: Pour the wet ingredients into the dry ingredients.

    Step 6: Mix the ingredients the best you can. You don’t want the dough too wet so it will take a bit of effort.

    Step 7: I like to do the final mix by hand. It helps to really get the bits of dough all into one ball.

    Step 8: Wrap the dough in plastic wrap and refrigerate for 30-45 minutes. Getting it cold will help you get those flaky layers!

    Step 9: Layout a piece of wax paper and place the dough ball on top. Optional: sprinkle a little flour on the wax paper to prevent sticking.

    Step 10: Roll the dough to ¼-inch thickness. Use a pizza wheel to cut the uneven edges off. Cut into evenly sized squares or rectangles.

    Step 11: Place jam or filling in the middle of a square. Spread it around but leave a good amount of dough around the edges. This is important so you can seal the edges together.

    Step 12: Place a square the same size over the jam.

    Step 13: Use a fork to press the edges down all around the square.

    Step 14: Gently move each pop tart to a parchment paper-lined baking sheet.

    Step 15: Brush the top of each pop tart with milk or egg wash.

    How to Make Gluten-Free Pop Tarts

    That was just the strawberry filling. We soldier on.

    For the ingredients in the pastry dough, we start with Water and White Rice Flour . Some may have a small concern over the arsenic levels in rice, but I dont share that concern so long as the rice is eaten in moderation.

    Palm Oil is an ancient oil thats good for you, but unfortunately its usually not sourced well. Without contacting the manufacturer, we have no way of knowing if this type of palm oil is destructive to rainforests and orangutan habitats.

    Modified Potato Starch, Resistant Corn Starch, and Modified Tapioca Starches are all isolated starches used to give the white rice flour a better texture more ideal for pastry dough. Both potato and tapioca starch are traditional and can be collected in your own kitchen. But resistant corn starch is likely from GMO corn, and it cant be casually made without a laboratory.

    The Eggs, unfortunately, do not come from pasture-raised hens. Nor are they even organic. This means the eggs likely come from hens raised not only in confinement, but stacked on top of each other in cages so small they hardly have room to turn around. They are likely battery hens, and perpetuate a type of cruelty to chickens that I find offensive. They are also routinely fed anti-microbials and arsenic and have their beaks cut off to keep them from aggressively harming the chickens that share a cage with them.

    And lastly, we once again have the ambiguous Natural Flavor.
