This quick bread recipe is light and slightly firm. It’s not heavy or stodgy like a traditional wheat flour loaf. The texture is more like a soft cake.

Almond flour doesn’t behave like wheat bread flour , because there is no gluten to make the bread stretchy or soft.

So in order to make basic almond flour bread behave like regular wheat flour, eggs are used for structure, protein, and air.

I also use psyllium which absorbs water many times its own volume. It also helps give structure and volume to a low-carb bread recipe and adds plenty of fibre.

Tips When Making Vegan Keto Bread

  • You can use other types of baking pans for this recipe. It is important to grease your pan and line it with parchment paper to ensure the bread does not stick. To make it easier for you to pull out the bread after baking, leave some parchment paper hanging on the sides of the pan.
  • The dough will be very sticky and watery once the ingredients are mixed. You have to be patient until the fiber absorbs the liquid and it firms up.
  • After kneading, shape and place the dough in your baking pan, but do it gently. Do not press or flatten the dough too much or you will end up with dense and dry bread.
  • The baking time depends on the size of the pan, the oven, and the temperature used. Its always best to check for doneness by inserting a skewer in the center of the loaf. If it comes out clean, then you can pull it out from the oven.
  • If its not yet done but you see the top part browning too much, you can loosely place parchment paper on top to prevent it from further darkening.
  • Let the vegan gluten-free bread cool completely on a rack after baking before slicing so it does not lose its shape.

Ingredient Notes And Possible Alternatives

  • Almond flour: as stated in my inspiration recipe, its best to use blanched almond flour for a lighter and fluffier bread. However, I have tweaked this a bit and used a mixture of almond flour and almond meal for a little more texture.
  • Almond meal: this is made from whole raw unpeeled almonds and is coarser in texture compared to almond flour. You can easily make it at home by adding almonds into your food processor or blender. Then blend them into flour.
  • Coconut flour: unlike wheat or grain flour, this is very low in carbs and high in fiber.
  • Ground flaxseeds: help in binding the ingredients together.
  • Psyllium husk: this is an important ingredient to retain moisture and prevents the bread from being too crumbly, giving it that chewy bread-like texture. Its a great keto-approved and vegan substitute for eggs.
  • Baking Powder: as the main leavening agent.
  • Apple cider vinegar: will aid in activating the baking agents. You can use other types of vinegar.
  • Sunflower seeds: this is optional but will add more texture to your bread! You can also use sesame seeds.
  • Warm water
  • Salt

How To Create Air Pockets In Almond Flour Bread

Some people ask why low carb bread doesnt rise like wheat bread. Unfortunately, almond flour just doesnt work the same way as wheat flour. But, you can still do everything you can to help this bread rise:

  • Create air in the batter before baking. Mix it very well, aiming to create air bubbles! You can even try a hand mixer if you want to, though its not required. But overall, the more you mix the batter, the better it will rise.
  • Use fresh baking powder in the low carb bread recipe. If its older, it wont work correctly.

    Natures Harvest is another bread youll see on the shelves in most grocery stores. Its baked by a large commercial bakery that also bakes other popular brands such as Thomas muffins and SaraLee bread.

    You need only four ingredients to make this simple, delicious, gluten-free low-carb bread which is high in protein. What is really nice that you can cut as thin slices as you want since this bread holds well together. Quite often gluten-free bread tends to be crumbly and break easily because its the gluten which holds the bread together and its hard to find a proper substitute for that.

    This bread is dense not only what comes to the texture, but its also dense in nutrients. Even its dense, its not dry and crumbly but deliciously moist.

    Tips for making the bread

    This bread rises beautifully in the oven, so be sure to pour the batter in a big enough pan. I think its the whey protein which causes that puffing effect. This effect I found by accident when tried to turn peanut butter cookies into protein bars by adding whey protein powder and some more eggs to the batter. I put the ready batter in a far too small pan the bread rose unexpectedly much and dripped on the bottom of my oven. Not a nice mess to clean Be sure to beat the batter well enough, that guarantees the proper rising of the bread.

    Tips for variation

    For me this simple, delicious low-carb bread is the single best reason to buy almond butter. Naturally, other nut and seed butters work as well. The variations are infinite, for example:

    This almond bread recipe is super easy! Just a few easy steps:

    • Prep. Preheat the oven and line a loaf pan with parchment paper.
    • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
    • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

    TIP: Mix well here to create air bubbles! This will help your bread rise.

    • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

    TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

    Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

    Can I Make Almond Flour

    Yes, you can make almond flour, ground almonds, or almond meal in your food processor.

    One cup of whole almonds produces about one cup of almond flour.

    You can use whole almonds with the skin on, and so your almond flour will have tiny brown flecks and will be higher in fibre. Or you can use blanched almonds that have had the skins removed. You will have finer cream-coloured ground almonds.

    Simply put the whole almonds in a food processor with the blade attachment. Close and lock the lid securely. Pulse at high speed until you can see ground almonds.

    Be careful not to process the almond meal too much otherwise you will end up with almond butter. It is lovely to make your own homemade keto almond butter, but it’s not what you need when you want homemade almond flour.

    Important!! I used a small loaf tin like this one – it is about half the size of regular loaf tins. Low carb breads tend to be extremely filling as they are nutrient-dense, that’s why this smaller size is just perfect. If you want to use a full-size loaf tin, you would need to double the recipe and increase the oven time by probably around 15 minutes or so.

    If you do not have a small loaf tin and don’t want to double the recipe, you can make Keto rolls instead of almond bread. Let the dough rest until the chia and psyllium have absorbed all moisture before you attempt to handle the dough!
