Real coconut cream with allergy friendly gluten free Vegan Oreos and no ice cream maker required, makes this Mint Cookies N Cream a big hit. Oreos and ice cream seem like an awesome combination. Creamy vanilla dairy free ice cream with loads of chocolate oreo chunks and hints of mint is hard to believe its free of the 8 most common food allergen. If you suffer from a dairy allergy, this could be your new go-to recipe this Summer.

Lets face it, with hot n humid weather approaching there will be days ice cream could be in order. If youre like me, you dont have an ice cream maker . Whats better and easier than to just mix your favorite add-ins and freeze? And theres no room for the H word here and thats why ice cream is a treat to be enjoy once in awhile

  • How Many Cookies Should I Add

    You can add as many or as few cookies as you like. Much of the sweetness in this ice cream comes from the creamy filling in the cookies so the more cookies you add the sweeter it will be.

    I added 12 cookies to this recipe and found it to be quite sweet. If you like your ice cream on the sweeter side I’d say this is a good amount and if you like it less so I would opt for fewer cookies.

    You can customize the texture to your liking as well. The cookies may be completely pulsed or you can leave some of them in larger chunks if you enjoy the texture.

    I like a bit of chunky cookie texture so that’s the route I went with this recipe.

    How To Make Paleo Oreo Cookies

  • Make the cookies: In a large bowl, add the softened coconut oil, maple syrup and vanilla and use a fork to mix until combined. Place a large mesh sieve over a large mixing bowl and sift in the baking soda, almond flour, coconut flour and black cocoa powder. Stir well to combine and transfer to the fridge to chill for 10 minutes. Use a rolling pin to roll the dough out onto a piece of parchment paper and flatten to about 1/8 thickness. Use a round cookie cutter to cut into Oreo cookies. Transfer to baking sheet and bake in preheated oven for 10 minutes. Remove from oven and cool completely before filling.
  • Make the cream filling by combining the coconut butter, maple syrup and vanilla.
  • Assemble: Spread cream on top of a cookie then place another cookie on top to form a sandwich. Clean up any excess cream. Chill in the fridge for 30 minutes.

    I screamyou screamwe ALL will be screaming for this ice cream! Thats right, a cookies n cream ice cream that is gluten free and dairy free. A dream come true for me. Cookies n cream ice cream was always my favorite flavor of ice cream as a kid. I love the abundance of chunks of chocolate sandwich cookies that get soft from the vanilla ice cream. Yum to the max!

    I made this special treat to celebrate back-to-school last week. Every celebration is better with ice cream. My kids thought I was the coolest mom on the block when I served it to them in a gluten free ice cream cone. This ice cream is dangerous, like for real. It is so, so, so creamy and tastes just like the original. Ive found my new favorite. Cookies n cream ice creamget in my belly!

    Easy Peasy No Churn Ice Cream

    GLUTEN FREE COOKIE Ice Cream Sandwich!

    For this gluten free, no churn ice cream I started with chopped up Goodie Girls Chocolate Creme Cookies. These cookies taste just like I remember Oreos tasting, but of course, they are gluten free and are also made in a peanut free facility. You can buy them in boxes or snack packs.

    I love the snack packs! For this recipe, you will need 2 snack packs or 16 cookies.

    You take all these crushed up cookies and add them to your no churn ice cream mixture. The no churn mixture is made up of whipped heavy cream and condensed milk.

    Once the gluten free no churn cookies and cream ice cream is all mixed together it goes into the freezer for a few hours or overnight. So simple.

    Why Make Your Own Oreo Ice Cream

    Given its popularity, there are a multitude of brands of Cookies and Cream Ice Cream available to buy. So why would you bother making your own?

    If you are Coeliac or gluten free, its a no-brainer! Despite its general popularity, finding a gluten free version of this iconic ice cream is pretty much impossible. But even if you are not gluten-intolerant, heres a few more reasons why making your own makes perfect sense

    • Its way cheaper to make than to buy
    • Making it using my No Churn Recipe is SO simple, even the kids can knock up a batch.
    • You get to make it YOUR way. According to the Washington Post, one of the most important factors to a good ice cream is getting the ratio of mix-ins just right. But is that ratio really the same for everyone? I think not! So
    • When making your own Cookies and Cream Ice Cream you can easily adjust a) the amount of cookie pieces mixed-in AND b) how finely those cookies are crushed. I think my recipe gives a perfect balance, but if you dont agree, adjust as you wish.

    Can I Make This Recipe Gluten

    It is gluten-free, though nobody would know just by tasting it trust me!

    Ice cream sort of goes into hibernation Ive found. Those ice cream shops that are pulsing with throngs of confection-seeking consumers go dormant when the mercury hits below a given point. The same stores spring to life again when the sun beams and the temps hit close to 60 no matter what time of year. I start to dream up new flavors of ice cream to make at home and this latest is an all-time favorite: Cookies and Cream Ice Cream .

    When we became gluten-free over 10 years ago, the exit of certain foods were remarkably noticeable. Saying goodbye to Cheerios and Oreo McFlurries were huge for my daughter who was five at the time. The stripping of traditional wheat pasta from our dinner table was a blow to my husband, who was not going gluten-free but still suggested we become a gluten-free kitchen. My son was 2 at the time and still not talking much so weathered it the best of all.

    Ingredients You Need For Dairy

    Like most no churn ice cream recipes, this one is simple to customize and starts off with:

    • coconut cream we like to buy the one from Trader Joes or you can spoon out the thick part of chilled full-fat coconut milk
    • full-fat coconut milk be sure to buy the canned full-fat coconut milk and not lite coconut milk from a carton
    • cashew butter is what gives this ice cream the best cheesecake flavor without traditional cream cheese. However, if you dont have cashew butter, you can sub another nut butter such as almond butter or even homemade cashew cream
    • maple syrup for vegan ice cream OR you may also sub with honey, agave or your favorite low carb keto liquid sweetener such as liquid monk fruit sweetener, stevia or Lakanto sugar-free maple syrup

    For the homemade Oreo cream filling

    • coconut butter you want it softened
    • pure maple syrup
    • vanilla extract

    Preparing The Cookie Dough

    Start preparing the cookie dough by sifting and combining the dry ingredients. Sifting the dry ingredients prevents the formation of flour lumps in your cookies.

    Next, cream the butter, sugar, and cream cheese using a stand-alone mixer with the paddle attachment at medium-high speed or using a hand-held blender. It takes about 3 to 4 minutes for the butter, sugar, and cream cheese to reach a fluffy and light texture.

    At this stage, reduce the speed of the stand-alone mixer to low and add one whole egg. Wait for about 30 seconds and then add the egg yolk and increase the speed to medium-high. Adding each egg separately allows the eggs to incorporate and prevents the batter from curdling.

    Afterward, add the dry ingredients slowly to the wet ingredients. After the ingredients are well combined, add the chocolate M& Ms and mix gently with a spatula.

    Cover the M& M cookie dough tightly and let it chill in the fridge for a minimum of two hours.

    Gluten Free Cookies And Cream Cookies

    Cookies and Cream used to be one of my favorite ice cream flavors but that is now off the table so I love to try and add that flavor to things like cookies or cake. It may seem weird to take a cookie and make another cookie with them but these are so good and so much better than just the chocolate sandwich cookies on their own. If you are looking for something fast to whip up but want to make a change from the classic chocolate chip cookies then these are absolutely perfect. They have very few ingredients and come together before you know it.

    How To Make Cookies And Cream Ice Cream

  • MAKE THE ICE CREAM: Place the coconut cream, almond milk, nut butter, sweetener and vanilla into a Vitamix or a high-speed blender. Blend on high for 30 seconds, or until smooth and the mixture is combined.
  • ICE CREAM MAKER INSTRUCTIONS: If you have an ice cream maker, have it ready and the bowl chilled prior to starting. Pour the blended mixture directly from your blender into the ice cream maker while it is moving. Churn for 20-25 minutes until it becomes a firm ball or the ice cream maker stops rotating.
  • WITHOUT AN ICE CREAM MAKER: If you dont have an ice cream maker, pour the mixture into ice cube trays for 2 hours, or until frozen. Blend frozen ice cubes in a high-speed blender until smooth.
  • TRANSFER TO ICE CREAM CONTAINER: Spoon half of the ice cream mixture into a 9 x 5 loaf pan or 2-quart ice cream container. Crumble half of the Oreo Cookies on top.
  • Pour in remaining half of the ice cream then top with remaining paleo Oreo cookies.
  • Cover and freeze for at least 4 hours or overnight.
  • REMOVE FROM FREEZER TO SOFTEN: When ready to serve, remove from freezer and allow to stand at room temperature for at least 20 minutes to slightly soften.
