Shortbread cookies are a special type of baked good. They are named Shortbread because they do not contain any eggs and have a short list of ingredients.
Shortbread has a higher ratio of butter to flour than most other cookie recipes. This makes them particularly dense and delightfully crumbly when eaten.
Substitute Vegan Butter For Dairy Free Gluten Free Cookies
Dairy free baking substitutes have come such a long way in recent years. My favorite butter substitute is vegan butter from Miyokos Kitchen brand or Melt brand. Theyre coconut-based.
If you cant have coconut, or you cant find those brands of vegan butter, try Spectrum brand nonhydrogenated vegetable shortening. It has no moisture, so you may need to add a drop or two of water to achieve the proper raw cookie dough consistency.
Be careful about using Earth Balance buttery sticks in cookie recipes. They have tons of moisture, and tend to make cookies spread a ton.
Substitute Chia Eggs For Each Egg To Make Egg
If a cookie recipe has, at most, 2 eggs, you should be able to make it using a chia egg for each. Its the easiest substitute to make that still has a high chance of success.
To make 1 chia egg, place 1 tablespoon ground white chia seeds in a small bowl. Add 1 tablespoon lukewarm water, mix, and allow the mixture to sit until it becomes gel-like.

Last I Tried Tate’s Bake Shop Gluten
I’m a big fan of anything made with ginger, whether it’s straight gingerbread, ginger ale, or savory dishes with a ginger component. I think it’s a wildly underrated ingredient and it should be used in recipes more often!
The Ginger Zingers come in a cute, old-timey lunch sack-type bag, and the packaging is simple and classic. Definite A+ on branding.
However, I was disappointed to see that many of the cookies were broken when I pulled the plastic sleeve out of the bag.
Cool Your Cookie Sheet Between Batches Of Gf Cookies
Baking cookies calls for rotating baking sheets in and out of the oven. After youve baked a batch of cookies on a baking sheet, let the cookies firm up before you transfer them to a wire rack.
And let the baking sheet cool completely before you put new raw cookies on it. Otherwise, youll overbake the cookies.

Pro Tip For Measuring Gluten
I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.
Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe because the flour often gets compacted in the bags.
Dont Grab Your Hot Cookies Right Off The Pan
When your cookies have just finished baking, theyre almost always fragile. Remove them from the oven, and place them on a heat-safe, cool surface.
Theyll continue to bake a bit as they cool . If theyre crisp cookies, theyll only fully crisp once theyre cool.
If theyre soft cookies, theyll fall apart completely if you try to move them right away. A short 5 to 10 minutes on the baking pan, and you should be safe to lift them with a spatula and place them on a wire rack.

When measuring your gluten-free flour, you must spoon the flour into the measuring cup. Do not dip the measuring cup into the flour.
Measuring the flour using a spoon will make your flour measurement correct. Too much flour will make these cookies too dense and floury tasting.
The number of cookies that this recipe makes is dependent on the size of your cookie cutter. I used a 1.5 inch scalloped round cutter and made 24 cookies.
