Why Just Egg Is My New Favorite Plant
This vegan egg substitute is delicious and boasts a similar nutrition profile to eggs. Here’s how it stood up in a taste test.
I became vegan five years ago, but I have been wary about eating eggs for a lot longer. Don’t get me wrong, I wanted to be the person who orders an elegant eggs benedict at brunch or whips up a glorious shakshuka for dinner, but no matter how many chances I gave them, eggs never sat well with me. That wouldn’t be such a big deal, but I like so many of the things that eggs are in-like, say French toast. I’ve tried several different egg-less and otherwise vegan recipes over the years, and I’ve never been able to get it to work quite as well as the egg-based versions.
Enter the JUST Egg-a mung-bean based liquid egg substitute with a mostly similar nutrition profile-varying mostly in sodium, saturated fat, and cholesterol content. And while we aren’t overly concerned with the dietary cholesterol content of eggs at EatingWell, it doesn’t hurt that JUST Egg is cholesterol free.

Nutritionally, a large egg and a serving JUST Egg are very similar. They deliver almost the same amount of protein and fat and vary slightly in sodium and protein amounts.

What Ingredients Do I Need For Vegan Breakfast Tacos
There are a ton of ways to customize the ingredients in breakfast tacos, but we like to keep things as simple as possible. Heres whats in it:
- Tortillas: Either corn or wheat tortilla will do.
- JUST Egg: Well be scrambling up our vegan egg just like you would a traditional egg and spicing it up with taco seasoning.
- Refried beans: Im partial to refried black beans but you can also use plain black beans, pinto beans or even lentils. If youre using store-bought beans, just make sure theyre vegan.
- Avocado: Every type of taco needs avocado, whether its sliced or made into guacamole.
- Salsa: I usually top mine with extra spicy red salsa . But pico de gallo, salsa verde or mango berry guacamole would a fun twist!
- Skillet veggies: Thinly sliced peppers of any color, jalapeño and onion cooked up real quick on the skillet adds extra color, flavor and kick!
Thats it! Extra toppings include roasted potatoes, diced tomatoes, fresh cilantro, sliced serranos, shredded greens, vegan cheese and/or sour cream and if you have time, vegan chorizo would also be good!

How Do I Scramble Just Egg
JUST egg scramble is so easy to make because it cooks up just like a chicken egg.
To make it, just pour desired amount of JUST Egg into a hot sauté pan, then gently pull the mixture across the pan with a rubber spatula and turn over towards the center, forming large, soft curds. Continue pulling and lifting the cooked egg towards the center of the pan until the mixture looks completely cooked and none of it looks liquid. Add spices, remove from heat and enjoy.

The texture of Just Egg is spot on exactly how traditional scrambled eggs would look and feel. Its soft and almost melts in your mouth.
The taste of Just Egg is unique. It tastes lightly seasoned and a bit sweet. Not exactly the same as eggs, but when you are thinking about plant based meat/protein based substitutions, Just Egg nailed this product.
It definitely, in our opinion, needs some black pepper and also, a tip we learned, it tastes much more egg like when you add a bit of black salt to the recipe. Because of the mild flavor of the Just Egg itself, there is so much you can do with the eggs to help aid them in taking on the flavor of the dish you are creating.

Just Egg Releases New Plant
JUST Egg expands its product lineup with the introduction of a new plant-based Folded Egg Patty made with mung beans, just like their liquid egg.
JUST Folded Eggs look and taste like real eggs, theyre fluffy and moist, and can be prepared in a number of ways: baked, pan-fried, or toasted.
To make them, you can throw them in the toaster for 6.5 minutes, microwave them wrapped in a paper towel, or toast them in a toaster oven for 15 minutes at 350 degrees.

Why This Gluten Free Marble Cake Is So Great
This gluten free marble cake has a fine, but incredibly tender crumb, and has all the best tastes of chocolate and vanilla in every single bite. Its not just a simple gf vanilla-and-chocolate cake in a bundt pan, though.
Oh no no no. This is so much better than any regular gluten free cake.
The texture of this gluten free marble cake is like a cross between the dense, smooth crumb of a gluten free pound cake, and the open and airy crumb of a gluten free vanilla cake. Its not exactly a marbled pound cake recipe, though.
