My recipe for Gluten Free & Dairy Free Victoria Sponge Cake is absolutely foolproof. Plus its simple to make and tastes heavenly! This basic Victoria sandwich recipe can also be used as a base to make other gluten and dairy-free cakes by simply adding other flavours.

Gluten-free Victoria sponge cake is a recipe that has been requested so many times Ive lost count. Its so simple Ive never shared it, despite making it all the time.

Its very easy to make these simple gluten-free sponge cakes dairy-free as well. Especially since any good jam sponge is simple with minimal ingredients just as this one is.

I use it as the basis of most of my gluten-free, dairy-free sponge cakes, flavouring each in any way that I like. If youre interested to know more about that then head to my post called The Secret To Great Gluten-Free Cakes

What Causes A Gluten

You might see cracks if your temperature is too high, or your cake is placed in the oven too high. The heat of baking activates the baking powder and causes it to release carbon dioxide, which forms bubbles and raises the cake.

If your oven is too hot, that process is sped up. Make sure to place your cake in the center, and regularly check your ovenâs temperature.

Another reason is if you are at a high altitude. If you are baking this gluten-free vanilla cake at a high altitude consider cutting the baking powder in half.

The first tricky thing is that the recipe calls for dairy free milk and apple cider vinegar instead of buttermilk.

I’ve always made my own “buttermilk” instead of purchasing it.

All you need to do is add the vinegar to your milk and let it sit for a few minutes.

Since there really isn’t a dairy-free buttermilk on the market, this makes it easy to make my red velvet cake dairy free or vegan.

If you handle dairy, you can also use regular milk with the same results.

The vinegar is essential to getting your cake to rise, and it will rise a lot. Almost double!

The vinegar reacts with the baking soda and cocoa powder, just like those volcanos you made in grade school.

Except for making a volcano and a mess, you get a slice of dairy free red velvet cake.

What Ingredients Do You Need For Carrot Cake

There’s a printable recipe card below with the method, but for the shopping list you’ll need:

  • 250ml sunflower oil
  • 1 tsp cinnamon
  • 80 g walnuts, chopped or ground into chunks in a pestle and mortar

The use of sunflower oil makes this dairy free – you can also use vegetable oil which works just as well.

The spices give a lovely delicate flavour which is warming but not overpowering.

I have used both the FREEE and Asda plain gluten free flours to make this cake before and they both work well.

If you’re in the US, you’ll want to use an All Purpose Gluten Free Flour with no raising agents.

How To Bake A Perfect Gluten

Mixing

There are two important steps to this recipe: how you cream the butter, shortening, and sugar and how you add the dry and wet ingredients.

Lets talk about creaming the butter, shortening and sugar. Combine the three ingredients in the bowl of a stand mixer. Then you beat the ingredients for five minutes. How serious am I about five minutes? Very serious. In fact, Id love it if you used a timer.

During this time, the mixture goes from a thick paste to a light, white and fluffy mixture. Since a thin layer of butter and shortening always clings to the side and bottom of the bowl, stop the mixer at least once during the five minutes and scrape the bowl.

I know this step seems long and putzy but, trust me, its worth it. #dontskipitplease

After beating the butter, shortening, and sugar, add the egg whites one at a time. Again, dont rush this. If mixed correctly, the batter should look like fluffy frostingwhich is what weve basically made here.

Up next, the flour, sour cream, and milk. Add 1/3 of the flour and allow it to mix into the batter. Then add the sour cream. Let it mix into the batter. Once youve added the sour cream, alternate between adding the milk and the remaining flour.

Is this putzy? Yes! It is! But its worth it.

Baking

Bake the cakes in a preheated oven until a cake tester inserted in the center of the cake comes out clean. A few damp crumbs might stick to the cake tester or toothpick but you shouldnt see any wet batter.

How To Make Vegan Red Velvet Cake

To make a vegan gluten free red velvet cake, simply swap the egg in the recipe with a little egg replacer.

My go-to is Bob’s Red Mill’s Egg Replacer, but I also have had great results with a flax egg.

I know many people swear by Ener-G egg replacer. Use your favorite vegan egg replacer!

Because this recipe uses whole eggs I’ve had no problems substituting a egg replacer.

The Best Dairy Free Cream Cheese Frosting

Making dairy free cream cheese frosting is actually really simple and it tastes just as good as the real deal!

To make the cream cheese frosting for this cake I used:

  • 220g dairy free cream cheese
  • 50g dairy free spread
  • 55g icing sugar
  • 1 tsp vanilla extract

If you’re not dairy free, you can use a normal full fat cream cheese and unsalted butter.

Just use these in the same quantities and it will work just as well.

Do Not Make Substitutes

I designed this recipe specifically around the ingredients and amounts listed. If you make any substitutes at all, the recipe is different and I cant guarantee the results. Any small change, even if its swapping one flour for another, can cause terrible results. And definitely do not use almond flour, coconut flour or any other kind of flour expecting ideal results. All of those flours work very differently in this recipe.

Pro Tip For Measuring Gluten

I have found that the best way to measure gluten-free flour is to use the spoon & level method. It is always best to use a dry measuring cup to measure flour, not glass measuring cups used for liquid.

Use a spoon to scoop the flour out of the bag into a measuring cup. After spooning the flour into a measuring cup, use the back of a knife to level the flour off of the measuring cup.

Please do not use a measuring cup to scoop the flour directly out of the bag or you could get more flour than the recipe calls for.

Now, Id be remiss if I didnt mention that the chocolate buttercream frosting is equally impressive. Like lick the bowl impressive. Its also vegan, dairy-free and paleo, depending on how you make it.

Ive separated that recipe into its own post, so that you can easily search for it and use on other cake or cupcake recipes in the future. But together, Im not kidding when I say that this is by far the best paleo chocolate cake recipe out there. It may even be the best chocolate cake recipe. Period.

Can I Make This Using The Creaming Method

Of course I prefer to use the all-in-one method for these as I find its always a safe bet with a simple sponge like this.

But of course, youre more than welcome to cream the sugar and softened butter together, then add the eggs and mix, THEN add the flour and mix once more.

It works perfect both ways so its totally up to you!

Tips For Baking Gluten

  • Line the bottoms of the cake pans with parchment paper. Trace the bottoms of the cake pans with a pencil and cut out with scissors to have it fit perfectly!
  • Use gluten-free cooking spray to grease the cake pans. I like coconut oil cooking spray.
  • Allow the cakes to cool in the pans for 10 minutes and then finish cooling on a cooling rack.
  • Allow the cakes to completely cool before your frost it.
