Make your own gluten free pancake mix to have on hand for quick and easy breakfasts. This mix produces amazing fluffy gluten free pancakes!

This recipe for gluten free pancake mix is basically the dry ingredients from my popular recipe for gluten free pancakes. I mix this up frequently to have on hand for quick breakfast or even dinner.

Ive also brought this mix with us when camping or staying at hotels with a kitchen in the suite. When traveling with this mix, I usually just store the dry mix in a zip lock bag and then mix the wet ingredients up ahead of time and keep the wet ingredients in a mason jar.

Once the dry mix is mixed with the wet ingredients, it produces the most amazing thick and fluffy gluten free pancakes. Theres seriously nothing better than hot pancakes covered in butter and maple syrup!

You may be wondering why make my own gluten free pancake mix when I can easily buy it at the store. Because honestly, dont really buy pre-made mixes anymore.

I love my pancakes and its cheaper for me to make it myself. Plus, I have complete control over the ingredients used. Homemade really is better even when it comes to cakes, brownies, and muffins.

I use my own flour mix which is made up of brown rice flour, white rice flour, tapioca flour, and arrowroot. So, if you have a nightshade sensitivity or potato allergy, this is a great mix for you!

What Kind Of Flour To Use For Gluten

Gluten-free flour is typically made with a blend of rice flour, tapioca starch, and potato starch and if you choose a good quality gluten-free all-purpose flour, your end product wont taste any different from a traditional recipe!

Both Bobs Red Mill and King Arthur Flour make wonderful gluten-free all-purpose flour.

How Long Can You Store Homemade Pancake Mix

This Homemade Pancake Mix can be stored for up to a month in an airtight storage container. We love to make a big batch of this and then use it throughout the month.

I like to think of it as similar to the shake style pancake mix that they sell at the store. Its as easy as that, you can easily measure it out to make the pancakes.

If you want to make 1 batch of pancakes about 6-8 pancakes, then you would use 1 cup of mix or this full recipe. If you were to make several batches of it though and store it together, it would be 1 cup of mix to make a batch of pancakes.

Tips For Making The Best Fluffy Gluten

  • Adjust pan heat for your stove or griddle. Depending on the heat and size of your burner, you may need to adjust the heat so the pancakes cook slowly. If you notice the crust getting dark too quickly before the center finishes cooking, reduce the heat or use a smaller burner. On my high-power gas stove, I use my two lowest heat burners for pancakes and set the heat to medium-low.
  • Take care not to overmix the batter. Mix the batter just until there are no more flour or egg white streaks and no longer. There should still be plenty of lumps remaining. Overmixing the batter will lead to dense and gummy pancakes.
  • Let the batter rest before cooking. This will allow the flours to soak up the moisture, the baking soda to start activating, and the batter to thicken.
  • Use a trigger ice cream scoop for perfectly round pancakes. If you want perfectly round uniformly-sized pancakes, I recommend using trigger ice cream scoop. Most are exactly ¼ cup and the trigger will push out all the batter in perfectly round circles!
  • Customize with favorite mix-ins. These classic plain pancakes can be customized to your liking! Lightly fold in ½ cup chocolate chips, 1 cup fresh or frozen blueberries, 2 tablespoons sprinkles, or other favorite add-ins to the batter at the very end.

Make The Pancake Batter

  • 1Add the flours, tapioca starch, baking powder, salt and xantham gum to a large mixing bowl.
  • 2Whisk the dry ingredients well and make sure there are no clumps in the mixture.
  • 3Create a well in the center of your dry ingredients.
  • 4Put your coconut oil in a small, microwave-safe bowl and heat it in the microwave for 10-second intervals until it completely melts.
  • 5Add the milk, water, eggs, melted coconut oil, honey, vanilla and almond extract into the well of your dry ingredients.
  • 6Using your whisk, beat all the ingredients together until your batter is silky and smooth. Do not over mix.Advertisement

    How To Make Dairy Free Pancakes

  • Whisk together the dry ingredients the flour, baking powder and salt.
  • Add in the eggs, honey, and 1/2 cup of water and mix well.
  • Add another 1/2 cup of water and mix again.
  • Lastly, add the remaining 1/2 cup water and mix until the batter is smooth and even.
  • Grease the skillet or griddle with coconut oil or avocado oil. Try to avoid using vegetable oil or canola oil.
  • Cook over medium low heat. I love this stove top cast iron griddle!
  • Once the edges of the pancake looks set, no longer runny, and you see bubbles formed on the top, flip that bad boy over and cook for a few more minutes until both sides are golden brown.
  • Serve these fluffy pancakes warm with real maple syrup, berries, coconut whip cream, granola, nut butter, or anything else your heart desires!
  • Can I Make This Recipe Using Other Gluten Free Flours Like Buckwheat Flour Or Coconut Flour

    Theres a big difference between gluten free flour and a *singular* type gluten free flour. When I say gluten free flour, I mean a BLEND of gluten free flours, not just one singular flour.

    Most gluten free flour you buy in the supermarket typically contains a blend of rice flour, potato flour, maize flour, tapioca flour AND buckwheat flour. Thats a lot of different flours!

    In gluten free self-raising flour, theres usually even a little baking powder and xanthan gum in it too.

    So to replace it with just one specific type of flour thats not going to cut it at all. Definitely go for a gluten free flour blend.

    How To Make Easy Gluten

    • I always like to start by mixing my liquid ingredients first. In a large bowl whisk the egg , granulated sugar, pure vanilla extract, and the vegetable oil together.
    • Add the gluten-free flour, xanthan gum , gluten-free baking powder, and salt to the egg mixture and mix until fully combined.
    • Stir in milk and mix until smooth. For thinner pancakes stir in 1 to 2 tablespoons of milk.
    • Scoop the batter into a ¼ cup measuring cup and pour the batter onto a greased griddle or pan for each pancake.
    • Cook the pancakes until the batter starts to bubble a little and the pancakes start to puff. Flip/turn over the pancakes and cook the pancakes until they are golden brown.
    • Top with butter, syrup or favorite topping. Enjoy!
    • These pancakes can be frozen and reheated in the microwave. To freeze the pancakes, allow them to completely cool and place them on a parchment lined baking sheet and flash freeze them for 10 minutes. Flash freezing them keeps them from sticking together. Once the pancakes are flash frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or air-tight container.

    You can 100% premix the dry ingredients ahead of time and double or even triple the dry ingredients to store at a later time.

    Tips For Making Gluten Free Pancakes

  • I use a well seasoned cast iron skillet to make my pancakes. If you do not have a cast iron skillet then a non stick pan will work well too.
  • Grease the pan a little in between every batch of pancakes to make them easier to turn, you donât want them swimming in fat or you will end up frying your gluten free pancakes!
  • Donât expect them to show air bubbles like regular pancakes, they will make some but the batter is not exactly the same as regular pancakes, they also take a little longer to cook.
  • Make sure the baking powder you use is not old or your pancakes will not rise.
  • To prep ahead you can measure out your dry ingredients ahead of time and put them into ziplock bags to create your own gluten free pancakes mix that is ready to go in the morning when your children are getting ready for school.
  • Make the pancakes dairy free by using your favorite dairy free milk, I like to use unsweetened soy milk but any non dairy milk will work.
  • Serve them warm from the pan! This is the best way to eat them.
  • How To Make Gluten Free Pancakes

    Always follow the recipe first when making easy gluten-free pancakes. Don’t work with substitutions until you know how the recipe works.

    Once your batter is ready, heat your pan or electric griddle. I received an electric griddle last year and it’s been my best friend since.

  • Add all dry ingredient to a large mixing bowl.
  • Whisk until combine.
  • Add the wet ingredients.
  • Stir just until combined. Some lumps will remain.
  • Ladle ¼ cup of pancake batter onto your hot griddle, or pan: measure out about ¼ cup of gluten-free pancake batter onto your hot oil-pan or electric griddle. Use the back of the measuring cup to help spread the batter some.
  • Cook for 2-3 minutes, or until bubbles form around the edges. When the edges are golden brown and the bubbles are popping up through the center of the pancake, use your spatula and take a peak to see if they are brown to your liking. Then flip the gluten-free pancake and cook for another 5 minutes or so. Always check for doneness before you remove your pancake from the pan or griddle.
  • This gluten free pancakes recipe is super simple to make. If you find that your pancake batter is too thick to spread, most likely you added too much flour or your buttermilk was too thick.

    Simply add water a tablespoon at a time until you get the desired consistency.

    Can I Make This Recipe Without Xanthan Gum

    Youll see xanthan gum in a lot of my recipes as its an essential ingredient in gluten free baking. There isnt any required for this recipe as gluten-free self-raising flour usually has a little added anyway.

    If you want to make this a xanthan gum free recipe, just use a gluten-free plain flour blend and add an extra 1/2 tsp of baking powder instead.

    Tips For The Perfect Gluten

    • After mixing up the pancake batter, allow it to rest for 10 minutes. This allows the mixture to hydrate and thicken up a little and almost always results in better pancakes.
    • Dont go overboard on the oil for each pancake. It can make the edges of the pancakes brown excessively and become very crisp, though theyre still perfectly edible! You just want enough oil to lightly coat the base of the pan, reapplying the oil in between each pancake.
    • Keep the heat low. As these are thicker pancakes, if your heat is too high, the underside will brown too much before the top is ready to flip. It needs to be just hot enough so that it sizzles gently as your pour it in.
    • Use a quarter measuring cup to ladle the pancake batter into the hot pan. Using a measuring cup ensures all your pancakes come out the exact same size plus, a quarter cup of batter is the perfect amount for a 5 inch pancake.
    • Use a neutral flavoured oil. Vegetable or rapeseed oil are my first choices, closely followed by a light olive oil. Extra virgin olive oil is a little too flavour intense for pancakes!
