Be sure to wrap any unused bread in plastic wrap and store it on your countertop.

Simply heat a leftover slice of the bread in your toaster to help it become soft and doughy again. This bread will last for several days wrapped and, again, will taste best when slightly warmed.

This bread will freeze well too. Slice it as desired before freezing, and remove desired slices when ready. Defrost the slices of bread in your fridge overnight and dont forget to lightly toast or heat it in your microwave or stovetop before eating.

Gluten Free Butterscotch Blondies Recipe

Makes 16 brownies. Prep time 15 minutes cook time 25-28 minutes

Preheat oven to 350°F. Spray and line an 8 x 8-inch baking pan with parchment paper.

In a light-bottomed saucepan, melt butter over medium high heat. Wait for it to bubble, crackle and foam. It will quickly darken in color and become fragrant. Immediately pour into a heat-safe bowl and let cool for 5 minutes.

Into the butter, add the sugars and whisk until mostly dissolved. Add both eggs and continue to whisk until mixture is shiny and viscous. Donât skip this step! Itâs what will give the blondies their shiny, crackly top.

In a separate bowl, stir together both flours, baking powder and salt. Add dry ingredients to the butter mixture along with the butterscotch chips, rolled oats and chopped pecans. Stir until combined. Mixture will be thick.

Evenly spread mixture into prepared pan. Bake for 25â28 minutes until top is golden and the sides just begin to pull away from the pan. While warm, top generously with flaky sea salt if using. Let cool completely before slicing.

If you have read my site for long you probably know that I have mixed feelings on gluten free flour blends. I love the idea and convenience of them. I love the thought of having just one flour to replace regular all purpose flour in baking. A one product fits all baking needs really does sound wonderful, but it is not as easy as it sounds. It is actually a difficult task.

In the five years that I have been gluten free I have tried many gluten free blends. Both homemade ones and premade ones. Some were good. Others were terrible. Most though worked well in some things, but not so great in other things. For most blends, I have found what may work well in a pancake wont work so well in a cookie. And what works in a gluten free bread may not work so well in a cake or muffin. It really is hard to find a one size fits all product when it comes to gluten free baking. Blends work okay in most things, but not all things.

This is why most of my recipes call for individual gluten free flours and not a blend.

Many people love the old blend. If you are one of them, dont worry, they still sell it. But I was not one of those that loved the old flour blend.

You may be wondering why I am talking about loving this blend when I mentioned above that I am usually not a big fan of blends. Well this new blend of Bobs Red Mill is different. Totally different in my opinion.

What Should I Make

Remember, with both our Gluten Free All Purpose and Gluten Free 1-to-1 Baking Flour, you can use your existing recipes with just a few changes! If you use the Gluten Free All Purpose, youll need to add Xanthan Gum to your flour before mixing but if you use our Gluten Free 1-to-1 Baking Flour you can just sub it in, cup for cup!

Very fluffy and light paleo biscuits with a great texture. ½ Cup Boxed Coconut Milk, Unsweetened Almond Milk or other Milk of your choice Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a non-stick mat. Combine the almond flour, tapioca flour, coconut flour, baking powder, baking soda, and salt in a mixing bowl.
