  • To make this recipe super simple, I used canned marinara sauce. My favorite is Hunts but you can use any brand you want for this recipe!
  • Ricotta and cottage cheese: The cheese layer of my lasagna recipe uses a combination of ricotta and cottage cheese. Depending on your preferences, you can use both cheese or just one. If you want to use only ricotta or only cottage cheese, just double the amount in the recipe.
  • Gluten free lasagna noodles: Grab a box of noodles for your pasta. I love using oven ready noodles to make meal prep easier.
  • Parmesan and mozzarella cheese: Increase the cheesiness of your lasagna with the help of two kinds of shredded cheese.
  • Seasoning: Up the flavor of your gluten free pasta with the help of Italian seasoning, salt, and pepper.

If you ask most people what their favorite cuisine is, I would venture to guess that quite a few of those answers would be Italian. My husband and I are not an exception. We very much enjoy Italian food, especially the staples of pizza, spaghetti, and lasagna.

For a while, lasagna was not on my dinner rotation list, however, one of my wonderful friends and college roommate sent me this recipe for smaller lasagna for two, and I quickly made room for it in my dinner planning sessions. The reasons it was absent for so long was for two reasons: it involves more time to prepare than spaghetti and gluten free lasagna noodles are hard to find.

The former issue was solved by the easy, but yummy recipe and the latter solved by these noodles I found at my local neighborhood Wal-mart for around $4. I especially appreciate that they are oven ready because it saves on the commodity I have the least of time.

Because these are oven ready, you simply skip the instructions to cook them before layering all your ingredients. They will cook in the oven with the rest of the lasagna.

I keep the recipe shared above as is except that I do layer all the ingredients sauce, noodles, cheese mixture, sauce, noodles, cheese mixture, etc, instead of just one layer of each as the original recipe instructs.

Can I Store Leftover Gluten

Yes, you can! Just wait until the leftovers have cooled down. Transfer the leftovers into resealable containers or zip locks bags to help keep them fresh.

If you want a crispy cheesy top, place the microwaved lasagna under the broiler for 5 minutes. Everything going into the lasagna is cooked.

Tips For Making Gluten

  • I use olive oil cooking spray to grease my baking dish.
  • I also spray the foil to keep it from sticking to the top cheese layer.
  • Make sure to squeeze and drain the excess water out of the cooked chopped spinach.
  • Ground turkey can be used in place of the ground beef.
  • Cottage cheese can be used in place of the ricotta cheese.
  • If you dont have Italian Seasoning, make your own: 2 teaspoons dried basil, 2 ½ teaspoons dried oregano, ½ teaspoon dried sage, ½ teaspoon dried thyme, ¼ teaspoon dried marjoram, ¼ teaspoon dried rosemary.
  • Make sure to cover the lasagna pasta sheets completely with pasta sauce.
  • If the lasagna noodles are puffing up after baking for 40 minutes, take a knife and poke a few holes in the top and flatten with a spatula. Sprinkle more cheese over the top and bake for the final 20 minutes.
  • You can always use more cheese on top and broil the top for a few minutes to get it nice, browned, and bubbly.

Vegetarian Baked Gluten Free Lasagna Roll Ups

INGREDIENTS

  • 2 pkgs Italpasta Gluten Free Lasagne
  • 3 large zucchinis washed and sliced thin lengthwise
  • 2-3 tbsp Italpasta Extra Virgin Olive Oil

For the sauce:

  • 2 tbsp Italpasta Extra Virgin Olive Oil
  • 4 garlic cloves minced + 1 large onion finely chopped
  • 1 red bell pepper seeds removed, finely chopped
  • 1 ½ lbs white mushrooms cleaned and chopped
  • ½ cup white wine
  • ½ tsp crushed red pepper flakes + 1 tsp dried oregano + ½ tsp fresh thyme
  • 1 28 oz can Italpasta Whole or Diced Tomatoes, with juices + ¼ cup Italpasta tomato paste
  • · ¼ cup fresh basil chopped
  • · Salt and pepper to taste

For the filling

  • 1 ¼ lb ricotta cheese + 6 oz goat cheese

How To Make The Best Instant Pot Lasagna

Your family will love this easy lasagna recipe.

1. Turn the pressure cooker to the Sauté setting. Let it heat up for a couple of minutes. Then add a teaspoon of olive oil and the beef or sausage.

While the meat is cooking, break it up with a wooden spoon or oven-safe spoon.

2. Add seasoning, garlic, salt, and diced onion and sauté for 3-5 minutes or until the meat is no longer pink.

3. Remove the browned meat from the pressure cooker using a slotted spoon. Turn the Instant Pot off.

4. Add a cup of water into the inner pot to scrape off any browned bits of meat with a spoon or spatula.

5. Then, place the trivet with handles inside the pot.

6. Next, in a medium bowl, mix together the ricotta cheese, egg, seasoning, garlic powder, and grated cheese.

7. Mix together your favorite pasta sauce, seasoning, and parsley flakes in another bowl.

8. In a 7×3-inch springform pan thats been coated with cooking spray, start layering your lasagna no-boil noodles with a thin layer of sauce.

10. Spread half the cheese mixture. Then sprinkle with half the meat mixture.

12. Repeat layers to the top of the pan. Then cover the top of the springform pan with aluminum foil.

13. Place the lasagna pan on an aluminum foil sling or handle to easily lower and lift the lasagna pan out of Instant Pot without burning your hands.
