There’s not much involved in making the best-ever vegan pancakes. All you need to do is mix your dry ingredients in a bowl, then grab another bowl and whisk your wet ingredients together. I love saving time in the kitchen and really love when I can double or triple a recipe to save some for later. This often means freezing leftovers, but in the case of pancakes, you can save yourself time by making your own dry pancake mix!

The main time saver for me in making pancake mix is that I can blend lots of oat flour at once . Pre-blended oat flour makes for quick, easy pancakes more often than not!

Ive done a full write-up of my favorite gluten and dairy-free pancake mixes. Sometimes I like to have the convenience of a done-for-you product in my pantry, and other times Ill make my own.

Its nice to be able to control the amount of sugar and make sure all the ingredients are dairy-free, which is something Im not always able to do with boxed mixes.

What Does Each Ingredient Do In Pancakes

In gluten free, top 8 allergy free pancakes, your essential ingredients are the gluten free flour blend, rising agent, liquid ingredient, and egg substitute. The gluten free flour blend is the foundation for flavor, texture, and density. Your liquid ingredient is what creates the batter and allows it to flow and cook. Pancakes can be stored in the refrigerator or freezer with these easy instructions. You can even double the batch, saving some to store for later.

  • Refrigerator: Leftovers can be stored in the refrigerator for up to 7 days, in a covered container.
  • Freezer: Vegan gluten free pancakes will last for up to 2 3 months in the freezer. To freeze, let cool completely and store in sealed freezer safe containers or ziploc bags, removing as much as possible before sealing. You may want to separate each pancake with a piece of parchment paper.
  • Reheat: To reheat, place on a baking sheet in a single layer and cover with foil, place in a preheated oven set to 350 degrees for 10 15 minutes, or until warmed through. Alternatively, microwave, covered, using 30 60 second intervals until warmed through .

If you have a pantry full of corn meal, it is really easy to make your own corn flour from it. They are basically the same thing. One is just more finely ground than the other.

All you need to be able to do this yourself is a blender.

I have a Blendtec and it makes flour from coarse cornmeal in less than a minute.

All you need to do is:

  • Add the corn meal to the blender
  • Blend on high until it looks fine
  • Sieve

Use the finely sieved part as your flour, and save the courser bits left inside the sieve for another recipe, like cornbread.

You can use the same method to make flour from other things like oats or quinoa too.

Tips For The Best Pancakes Ever:

  • Make sure your baking powder or baking soda is FRESH! If its not, you wont get fluffy pancakes.
  • Let your batter rest for 10 minutes to thicken up and let all the dry ingredients absorb the liquid.
  • The first pancake is never as pretty as the rest. Dont let it get ya down!
  • If youre unsure about the flavor, do a tiny test pancake first, and adjust from there if needed.

How To Make Milk Free Pancakes

Great news! Cows milk is a 1:1 substitute for dairy free milk. In a recipe, when the developer calls for milk of choice, use your favorite dairy free milk. The only time this works differently is if the author calls for buttermilk, skim milk, or whole milk.

  • Preheat your griddle according to manufacturers instructions.
  • In a medium bowl, mash the banana until creamy, a few lumps of banana is ok.
  • Next, add the milk, vanilla, mix well.
  • Add the gluten-free flour, almond meal, flax meal, baking powder, optional cinnamon and salt, and mix until combined .
  • To make uniform pancakes, use a ¼ cup measuring cup to scoop up and pour the batter onto the preheated griddle.
  • Cook until golden on each side, about 2 3 minutes per side.

If any of your gluten free recipes come out gummy, there are a few things to look at. If youre gluten free only, you probably have a gluten free pseudograin thats causing gumminess. Cassava flour for example can get quite gummy. If youre also egg free, your egg substitute may be to blame. Gumminess is usually a sign that theres too much of something.

How To Make The Best Vegan Pancakes

Basically, I reduced my gingerbread pancake recipe to its most essential formula, then I traded almond milk for cows milk and olive oil for the butter. I was concerned that Id be able to taste olive oil in the finished product, but I really cant! Coconut oil works just as well, but it solidifies on contact with cold ingredients, so olive oil is just the easier choice.

I tried a buttermilk version as well, with almond milk combined with a tablespoon of vinegar and lesser amounts of baking soda and baking powder. Even with the vinegar to react with the baking soda, the pancakes tasted terribly bitter. Im still mystified. I scratched the buttermilk idea and carried on with one tablespoon baking powder as the leavener, which works great.

Then I tried omitted the eggs completely, surprisingly without any ill effects. Just to be sure, I tried a version with flaxseed to make up for the egg, but it didnt make any difference. The batter gets nice and bubbly thanks to the baking powder, then it fluffs up on contact with the hot cooking surface like flatbreads typically do.

Without that eggy flavor, the remaining ingredients get to shine through. As such, this vegan pancake recipe produces remarkably delicious pancakes.

Simple Mills Pancake & Waffle Mix

Simple Mills focuses on creating grain-free cookies, crackers, baking mixes, and frostingsmost of which are also vegan.   • Let the batter rise for at least 5 minutes. The baking powder needs a few minutes to do its job. And yes, the amount of baking powder required is indeed 1 ½ Tablespoons. It sounds like a lot, but its necessary, and is the key to super fluffy pancakes.
  • Dont turn the heat too high! Medium heat will do it.
  • Dont flip them too quickly. It will take about 5 minutes for the bottom to cook through. Look for the edges to be cooked, and a few bubbles to form in the batter. Then flip and finish cooking.
  • Having a good frying pan makes all the differencethis one is excellent, and worth the price. Pancakes dont stick to it, and they get perfectly golden brown.
