Dealing With Sticky Fathead Dough

If all else fails and the dough is too sticky for you, there are three tricks that can help:

  • Chilling the dough in the fridge will work wonders to make it more manageable. A good amount of chill time is 20 to 30 minutes.
  • Use oiled hands to work with the fathead dough. This will help avoid sticking to your fingers.
  • If the cheese solidifies too quickly, you may need to reheat a little to soften it, then try kneading again.
  • How I Make The Crust

    The Personal Pan Pizza recipe in Trim Healthy Table is basically a stove-top version of the WWBB for One recipe . While my version was inspired by the THT recipe, Ive made a few changes.

    I whip the egg whites with xanthan gum with a hand blender like in the original recipe. But, instead of adding THM Baking Blend, I use oat fiber. It works just as well and is nut-free and fat-free.

    I still add the Greek yogurt and whey protein, but I also add ground psyllium husk and gelatin for a more authentic, chewier crust. I add a little fast rising yeast, too, for a better rise and more authentic flavor. Oh, and a little apple cider vinegar, too, also for better rise.

    The pizza batter will resemble a thick pancake batter . I pour/scoop mine into a hot cast iron skillet and gently spread the batter in the pan with the back of a spoon. I then put the pan into my preheated 450* oven for 2-3 minutes until the top of the crust is firm.

    Can You Eat Gluten

    You can eat gluten-free pizza dough on keto, but not just any gluten-free pizza. More specifically, the gluten-free pizza recipe must be extremely low in carbohydrates to be considered keto-friendly.

    Just because an item is labeled as gluten-free doesn’t necessarily mean that it’s ok to consume on a keto diet. Sometimes gluten-free pizzas have just as many carbohydrates, if not more, than a traditional pizza.

    While following a ketogenic diet, most individuals try to stay between 20 and 50 grams of carbohydrates to achieve and remain in ketosis. Still, some gluten free pizzas have more than 20 grams of carbohydrates in a single slice.

    Can I Eat Pizza On Keto

    Because tradition pizza crust is high in carbs, many think pizza is a no-no on a low-carb diet. While some may choose to eat pizza without the crust, this recipe gives you a more fulfilling option.

    You will need to be careful about the toppings you put on your pizza. Some toppings can significantly increase the number of carbs. Because of this, I devoted a later section to low-carb topping suggestions.

    Low In Protein And Healthy Fats

    Reducing the intake of carbohydrates is just as important to the keto diet as consuming moderate to high proteins and high fats. This means that the amount of fats in a meal should outweigh the amount of carbohydrates.

    The Dominos gluten-free pepperoni pizza contains 8.5 grams of fat in comparison to 15 grams of carbs. Not only is this fat-to-carb ratio is less than ideal for a keto diet, but it is also important to note the quality of the fats.

    Pepperoni and other commercially prepared processed meats and cheeses are high in trans fats. Trans fats have been associated with increasing the risk of heart disease, so you should especially be wary of what processed foods you consume if you are following a keto diet for health reasons.

    It is important to consume high-fat foods while on keto because fats are more filling than carbs. If a majority of the calories from a meal come from carbohydrates, the consumer will need to eat more in order to feel full or satiated.

    Oven Time For Fathead Pizza Crust

    The oven time for this Fathead pizza crust will vary depending on how thinly you roll it out. I did find that it cooks a bit more quickly than the original.

    I like my low carb pizza crust very thin, so it only took about eight minutes for mine, but you can adjust the thickness to your liking. Just watch it in the oven, and poke more holes in the top if it starts to bubble up.

    How To Make A Keto

    Ingredients

    • 1 tbsp. Freshly Chopped Basil

    Directions

  • In a blender, add in Psyllium Husk Powder, Parmesan Cheese, Italian Seasoning, and Eggs.
  • Blend together for 30 seconds.
  • Heat olive oil in a pan. Once hot, put the mixture and spread out into a circle shape. Cook both sides on medium high heat for 30-60 seconds or until the edges turn slightly brown.
  • Add the tomato sauce on top of the pizza crust and spread.
  • Add mozzarella cheese.
  • Put the pizza into the oven to broil. Once the cheese began to bubble, remove pizza from the oven.
  • Serve with some freshly chopped basil on top. Enjoy!

    • Food processor A food processor can make fathead dough so much easier! Avoids the mess of kneading by hand.
    • Double boiler An alternative for melting the cheeses, if you dont want to use the microwave.
    • Rolling pin Though you can use your hands, youll get the most even cooking if you roll out your keto pizza crust. And if you like it thin and crispy, this is a must!
    • Pizza pan You can cook the crust on a basic pizza pan, but this one has a perforated surface to help the crust crisp up. Place parchment paper over it to prevent sticking.
    • Pizza stone and pizza peel A pizza stone creates a crispier exterior to the crust. For a fathead pizza recipe, youll still want to use parchment paper on top, so it wont stick. The pizza peel allows you to place the crust onto the stone and remove when its done.

    Another Way To Make The Crust

    For a thicker crust Fuel-Pull pizza, you can use a tweaked version of my Perfect Keto Bagels recipe! The two slices on the plate come to only 4.2g fat but is 32g protein! And heres how I turned the bagel dough into FP pizza crust dough:

    • I left out the fat . This did make it a little dry so, if having as an S pizza, you can leave in the fat.
    • I subbed gelatin powder for half of the xanthan gum .
    • I used the optional quick rise yeast.
    • I added a little more water so 14 TBS total for a whole recipe.
    • Everything else was the same . You could also add nutritional yeast, garlic powder, Italian seasoning, etc, if you like.

    So after letting the dough rest for 10 min, I wet my hands and pressed the dough into pizza shape . Then I parbaked at 350* for about 12min . Then I put on my sauce and toppings and baked for about another 10 or so minutes at 450*.

    Tips And Tricks For The Best Keto Pizza Crusts

    • PLEASE ensure you use spices with it, and top it generously- This recipe is based off eggs and grain-free flour, so you really need to mask up any possibility of an egg-y taste. My personal favorites are a generous topping of pizza sauce or mixing a blend of salt, pepper, and mixed herbs through the batter for a flavorful flatbread.then top with cheese, antipasto or anything, really!
    • Before you freeze them, use a skewer or fork and poke little holes over the top and cover with baking paper between each one. This helps with even cooking once thawed, along with avoiding them sticking to one another.

    Quest Thin Crust

    From the same company that brought you those delicious quest protein bars, Quest also has a low-carb pizza option. Half the pizza has 6 grams of net carbs. Meaning, for an entire pizza, it’s only 12 grams of net carbohydrates.

    Realgood

    Realgood offers a few low carb pizza crusts, but their lowest carb option is the chicken crust. An entire 7-inch Realgood pepperoni has only 8 grams of net carbs.

    If you’ve never tried a chicken crust, don’t knock it till you try it!

    Can You Make This Low

    While this pizza crust is simple and easy to make whenever you have that pizza craving, sometimes its nice to have it ready to go.

    To make this crust ahead of time, simply follow the instructions through step 7. Dont add the toppings and do the second baking.

    Instead, allow it to cool completely on a cooling rack. This step is very important and will keep your crust from getting soggy.

    After the crust has completely cooled, put it in an airtight container or wrap it up well with plastic wrap. An extra large plastic zip bag meant for pies would work for this as well. Refrigerate for up to three days, or freeze for up to three months.

    To use the made-ahead crusts, defrost the crust if it is frozen. Next, preheat the oven to 350ºFahrenheit.

    Place the crust on a cookie sheet or pizza pan, then add your favorite toppings. Bake until the cheese melts. This usually takes about 5-8 minutes.

    Can You Eat Pizza On A Keto Diet

    Just because I listed a few famous pizzas that you shouldn’t eat on keto doesn’t mean there aren’t any.

    In fact, not only can you find many keto-friendly options at some big local chain restaurants now, but there are some frozen options and great keto recipes you can use to get that fix.

    Maybe you’re at a party, and they didn’t purchase any keto-friendly items you may be wondering if you can eat the toppings off the pizza. I have great news, most of the carbs are in the crust and a bit in the pizza sauce/ tomato sauce, so yes, you can keep it low carb by only eating the toppings.

    Just don’t do the opposite and eat the crust without everything else, that’s a no-no. Cheese on keto is perfectly acceptable, and it’s a great way to get some much-needed calcium on keto as well, even things like Velveeta are ok in moderation.

    I love adding low-carb veggies like mushrooms, spinach, or olives. For even more protein, throw on some pepperoni, bacon, or even cooked sausage.

    One thing to keep in mind is that the crust definitely has a mild chicken taste. After all, its just chicken, cheese, and an egg. Thats why I like to choose toppings that go well with chicken which, thankfully, is most toppings out there!

    For example, if you love barbeque chicken pizza, try drizzling keto-friendly BBQ sauce over your slices. Or maybe you want to add a little keto ranch with some bacon.

    You could also replace the tomato sauce with a white sauce, pesto spread, or even olive oil. Top with arugula and roasted garlic for a delicious combination.
