This amazing potato salad without mayonnaise is a crowd pleaser for any occasion. This recipe is an adaptation of classic German potato salad without onion. Instead of onion, this recipe uses celery to get that great crunch.

I use the Instant Pot to make this potato salad super easy to make, but you can also just boil your potatoes until you can stick a fork through them.

When it comes to choosing potatoes for potato salad, I prefer yellow or red potatoes. Russet potatoes just have a different texture. For this recipe, I used fingerling potatoes.

I wish I could take credit for inventing the idea of potato salad without mayonnaise, but as it turns out Germany beat met to it very many years ago. German potato salad is best known for no mayo.

One of my good friends hallmark dishes is German potato salad, which if you have never had it before, has onion in it.

Since Im allergic to onion too, I came up with my own adaptation using celery instead, and voila, a great side dish for any occasion.

The celery gives the potato salad a nice crunch like it would have if it had raw onion in it. This is simple chopped raw celery, which makes this recipe even easier to put together.

  • Olive oil will swap for the avocado oil if that is what you have. Avoid vegetable/canola oils. I purchase avocado oil from Costco.
  • Almond or cashew milks should swap for the coconut milk if that is what you have. If you are following an anti-inflammatory type diet, coconut milk would be the best option over a nut milk. I promise this doesnt turn out tasting like coconut! If you tolerate dairy, raw milk/cream works too.
  • You can leave the raw honey out if you are sugar free. Organic pure cane sugar or coconut sugar would work too. The hint of sweet makes it really taste like Miracle Whip if that is what you are used to. Without the sweet it tastes more like a Hellmanns type mayo and is really yummy too!
