Duncan Hines Gf Vanilla Creme Cake

Per 1/16 package : 210 calories, 9 g fat , 150 mg sodium, 32 g carbs , 2 g protein

Not That!: Like we said before, “gluten-free” should not be synonymous with “healthy.” This is the perfect example of that. Duncan Hines’ cake mix is gluten-free, but that doesn’t erase the negatives of stuffing a cake full of shortening, sugar, inflammatory carrageenan, artificial flavor, and artificial dyes Yellow 5 and Yellow 6.

Tru Roots Ancient Grain Pasta Made From Quinoa Amaranth Brown Rice And Corn

Gluten Free Pasta Recipes that don

Ingredients: Organic Brown Rice, Organic Quinoa, Organic Amaranth, Organic Corn

Again, we find another gluten-free pasta that is mealy in texture, this one was almost sandy. Flavor is inconspicuous when eaten cooked without sauce, almost not even like regular pasta or anything at all, really. It does, however, works very well with a hearty sauce, since the simple flavor of the pasta really makes the sauce stand out. In fact, the sauce takes over so much that even the mealy texture was minimized. I kept thinking as I was eating it, This is the gluten-free pasta for finicky kids. If you have little ones who cant eat gluten and are picky eaters, this inoffensive-in-every-way spaghetti might be the brand for you.

Which Gluten Free Flour Is Most Like Wheat Flour

While there are many gluten free flours that work well in baking, the one closest to wheat flour is sorghum.

Sorghum contains a protein called amylopectin which closely resembles the structure of wheat flour. It actually behaves similarly to wheat when mixed with other ingredients.

This makes it an excellent choice for replicating bread or cookies because they will have the same texture and mouthfeel as their wheat flour counterparts.

Gluten Free Pasta Ingredients

The ingredients list is as short as it is simple:

  • gluten free flour
  • xanthan gum
  • eggs

Thats all there is to it. The gluten free flour blend I use is an Aldi brand thats available in the UK . It contains rice, potato and maize flour, like most of the gluten free blends out there. Nothing special, the kind of stuff you should be able to find in pretty much any grocery store, nowadays.

The xanthan gum has the job of making the gluten free pasta dough more flexible it takes the place of gluten. Without it, the dough can crumble and crack, and you really really cant use a substitute for this.

The eggs bind the dough together: the egg yolks give the pasta its richness, the egg whites add even more elasticity.

Theres no salt, no oil, no water and no other strange ingredients in this gluten free pasta recipe. Three simple ingredients, thats it.

Per 2 oz : 200 calories, 1 g fat , 0 mg sodium, 44 g carbs , 4 g protein

Not That!: Besides corn and rice flour, there are a couple of nasty ingredients lurking in this gluten-free spaghetti: mono- and diglycerides. These man-made additives often contain the same artery-clogging trans fats that the FDA decided to ban in June 2018. The only reason these ingredients are allowed in your food is because the FDA reviewed evidence and concluded that we don’t consume enough of them to count as hazardous however, that “evidence” hasn’t been updated since 1975.

Rustichella Dabruzzo Buckwheat Tortiglioni

This buckwheat flavor might be the most assertive of the three. Working against it wont result in anything delicious, but creatively working with it will. You could certainly go soba-style and use some Japanese pantry ingredients to make a cold noodle salad with sesame, scallion, edamame, and furikake. Or you could go the Northern Italian route. Buckwheat pasta is a popular winter dish in that region, where its served with rich cream sauces and pungent vegetableslike cabbage, kale, mushrooms, and onionsthat play off buckwheats deep and earthy flavor.

Rolling Out The Gluten Free Pasta Dough

The amount of ingredients in the recipe below makes 4 nests of tagliatelle-like gluten free pasta, so well cut the dough into four evenly sized pieces. If you want to be extra precise, feel free to weigh the pieces to get them to the same weight.

Wrapping the three pieces of dough we wont use immediately in cling film ensures they dont dry out trying to roll out dried out pasta dough is a nightmare and, trust me, you will want to avoid it.

Now, Ive rolled out the pasta dough with a pasta machine its handy, quick and it doesnt make your hands tired. Plus, you feel like a total pasta making badass, and thats a helluva feeling. But if you dont have a pasta machine, you can easily follow the exactly same procedure with a good ol rollin pin and a bit of elbow grease.

First, well flatten the piece of gluten free pasta dough a bit and flour it generously on both sides. Well then pass the flattened piece through the pasta machine, starting on the widest setting. Well stay on this setting for a few minutes, so get comfy.

Now, different pasta machines can have different widest settings. What Im trying to say is that the widest setting can produce pasta sheets of different thicknesses. In my case, the widest setting gives pasta sheets about 2 mm thick, which is actually quite thin compared to some other machines. Moral of this side-story: get to know your pasta machine.

To see what I mean, check out this picture:

Fold the dough like a book or letter like this:
