Even though it might sound odd, but you could definitely enjoy this recipe as both gluten-free and dairy-free. First, use vegan cheese, instead of the regular version.

Replace milk with almond or soy milk.

Also, use Earth Balance butter sticks, and unsweetened almond milk. I think it is worth a try, and the flavors will still be pretty delicious!

Gluten Free Flour Or Oat Flour

We make a gluten free roux for the cheese sauce in this recipe. Classily a roux is made with all purpose flour and butter. For this recipe we have tested the two flours below. Both flours work to make a roux, but we do prefer the oat flour!

  • 1:1 gluten free flour
  • oat flour if you are going to use oat flour and have a serious gluten allergy, be sure you buy a brand that is certified gluten free.

You can also make your own oat flour by blending oats in a food processor. Again, be sure your oats are certified gluten free.

What Gluten Free Thickener Should I Use

I know a lot of mac and cheese recipes use some blend of cream, eggs, and cheese and just stir it together and toss it in the oven and thats finesorta. But my version is going to require that you make a roux or white sauce first and that means youll need a thickener.

In my original baked macaroni and cheese I use flour of course but here I recommend an all purpose gluten free flour blend with xanthan gum in it. I LOVE King Arthurs Measure for Measure Gluten Free Flour blend. It works like a champ. You should be able to buy it just about anywhere these days or online as well.

How To Make Gluten Free Mac And Cheese

  • Prepare the noodles. Bring a large pot of salted water to a boil and add noodles. Cook the noodles until they are al dente.
  • Make a roux. To make a roux you add butter to a large pot over medium/high heat. When the butter has melted add the oat flour and whisk the two ingredients together until a paste forms. Slowly add the milk to the mixture and whisk constantly so the milk doesnt burn and so the ingredients combine and thicken. Add the salt, pepper, garlic, and mix.
  • Add the cheese. When the milk mixture is thick, remove the pot from the heat and add the cheese. Stir the cheese into the milk until the cheese is melted.
  • Combine the noodles + cheese sauce. Finally, stir the noodles into the cheese sauce until all the noodles are covered in cheese sauce.
  • Serve. Serve with fresh cracked pepper and enjoy.

    We Are Dairy Free Can I Use A Different Milk Or Cheese

    You can! I havent tested this particular recipe as dairy free but lots of people have made my other mac and cheese recipes with almond and soy milk and it has been just fabulous.

    You wont need to adjust any measurements or the cook time.

    As for cheese youre on your own there. Ive never tested with anything other than the real deal.

    Tips To Avoid Mushy Pasta:

    Mushy pasta can ruin a meal faster than anything. Here are my best tips to avoid mushy pasta:

    • Cook the macaroni a minute less than the package says so that the pasta is very al dente. This way it gets some moisture from the cheese sauce and doesn’t get mushy.
    • After cooking, drain the pasta in a colander. Rinse the pasta well in cold water to halt the cooking process to avoid mushy pasta

    Step 3: Pourthe cheese sauce into the pasta and mix well to coat all of the gluten free macaroni.

    Step 4: In a small bowl, add your gluten free panko and topping ingredients and mix well. See below for fun topping ideas if you want to try something fun.

    Step 5: Add the gluten free macaroni and cheese mixture to an 8×8 baking dish. I love using a casserole dish because it won’t get scraped up by serving utensils. Use a spoon to spread it all out.

    Step 6: Sprinkle your topping over the mac n cheese. Cover the whole top.

    Step 7: Bake for 15-20 minutes until it is hot and bubbly.

    Gluten Free Kraft Mac And Cheese

    Kraft now makes a gluten free Kraft mac and cheese and they are receiving mixed reviews. Some people feel that it’s the equivalent of traditional kraft boxed mac and cheese, while others disagree.

    More and more stores are now carrying gluten free Kraft mac and cheese, making it a quick and easy option.

    We prefer our homemade gluten free mac and cheese and feel it’s just as quick to make as the gluten free Kraft mac and cheese.

    While most cheese is gluten free, it is always a good idea to check the ingredients of any cheese you want to purchase. Look for words like wheat starch or modified food starch, which is usually made from corn but a label will tell you if it is derived from wheat. My kids like these gluten free cheese brands:

    • Tillamook – You can buy the block of cheese and shred it or buy pre-shredded cheese.
    • Trader Joe’s also sells block and pre-shredded cheese.

    Vegan cheeses are more at risk of containing wheat flour and gluten so check the labels. Our favorite vegan cheese is VioLife brand and these are gluten free. Kite Hill and Daiya vegan cheeses are also dairy-free.

    • Always salt your water before cooking your pasta and taste your white sauce for seasoning after adding the cheese. If it needs more salt, add it.
    • Choose cheeses with flavor. Sometimes when people tell me their mac and cheese was bland its because they chose plain cheeses with no flavor punch. We love sharp cheddar and swiss and it works great. Avoid subtle cheeses like mozzarella and colby jack on their own. You wont get much flavor from them. You can also check out this cheese list for ideas.
    • Always grate your own cheese to avoid the additives in bagged. When in doubt buy a block of cheese and grate your own. It will melt better and wont have any powdered anti-caking cellulose in it which could make your sauce lumpy or split.
    • When making your white sauce, keep the heat low, be patient and stir like the dickens. Once your butter and flour come together in the skillet , add the milk and turn the heat to medium low and stand there and stir . Dont go feed the dog or make a snack for the kids or your white sauce may get too hot and may split or look a little grainy. If that happens, dont worry. Just use it anyway. Your texture will be a little off, but the flavor will still be fine.

    Pro tip: If you dont want to bake your mac and cheese, skip it or just stick it under the broiler for 4 or 5 minutes to brown the top. It will be ultra creamy!

    Verdict: Trader Joes Gluten Free Mac & Cheese was pretty similar to Joes Diner Mac n Cheese. The main differences are the rotini pasta, less shredded cheese on top, and a gluten-free tag.

    I found the pasta to be a bit tougher and in some parts crispier because it was exposed in the oven. The cheese tastes similar as well with a bit of a powdery aftertaste although no chunks. Unless you need or want a gluten-free mac and cheese, I wouldnt spend extra for this.

    If you use my new favorite brand of gluten free macaroni, which you see in the image above, you can refrigerate the boiled pasta before adding it to the cheese sauce of your choice. The brand is Rummo, and their gluten free pasta is a cut above.

    Amazon does carry some Rummo brand gluten free pasta, but they dont often carry the elbow macaroni. Ive hunted it down, but from sources I consider too expensive for me to recommend in good conscience.

    I also regularly use Barilla gluten free elbow pasta , and theyre great, too. But Rummo actually cooks al dente and isnt hard even when its cold. Thats just a gluten free miracle.

    Im not going to say that there can only be one, but I will say there is a huge difference between baked macaroni and cheese and a stovetop version.

    Baked gf macaroni and cheese is more like a casserole, and it calls for eggs. You generally start the recipe on the stovetop, but then you transfer it to a baking dish to finish.

    You can easily make this type of recipe ahead of time, freeze or refrigerate it, and then bake it when youre ready.

    But the three macaroni and cheese recipe varieties I present below are designed for stovetop-only preparation. Theyll all egg-free, and each gluten free mac and cheese sauce must be made right before serving.

    You can boil the pasta ahead of time, toss it with some olive oil, then cover it and keep it at room temperature for hours , but once youve joined cheese-gluten free mac, you should eat it ASAP for best results.

    How To Make This Gluten Free Mac And Cheese Recipe:

    Fill the saucepan with filtered water and bring to a boil. Add the macaroni and oil and cook for about 8 minutes, stirring occasionally.

    You want the pasta al dente soft, but with a little bit of bite to it. The oil helps to keep the gluten free pasta from sticking together.

    While the pasta is cooking, melt the butter in the skillet over medium low heat.

    Once its melted, sprinkle the rice flour on top of the butter and whisk vigorously to combine. Cook for 1 minute while whisking.

    Add the milk to the butter mixture and whisk well to combine. Continue whisking as it cooks and thickens, about 8 minutes.

    Add the salt to the sauce and stir well to combine. Add more salt to taste if needed.

    Drain the pasta and add it to a large mixing bowl. Pour the sauce over the pasta and add the cheddar cheese. Gently stir everything to combine.

    Pour the mac and cheese into a well greased 9×13 baking dish.

    Sprinkle the Parmesan cheese on top of the macaroni and bake at 375 for 20 minutes, or until the cheese is melted and bubbly.

    Best Tips For This Gluten Free Macaroni And Cheese

    • Dont forget to thoroughly rinse pasta after cooking to keep it from over-cooking AND to remove the excess starch. Thats the best way to prepare gluten-free pasta.
    • For those needing vegetarian , simply omit the prosciutto from this recipe, itll still be amazing.

    I struggle with eating meat at times , but I dont have any problem eating things like deli meat, prosciutto, salami, sausage, etc. I love it all. // So odd I know.

    Is Your Gluten Free Mac And Cheese Recipe Low Fodmap

    Yes! If youre not vegan, you can easily use low FODMAP forms of dairy for everything so use lactose free milk, regular butter is low FODMAP and so is regular hard cheese like cheddar and parmesan.

    If youre low FODMAP AND vegan, this recipe can STILL be made low FODMAP. As far as I can see, the Applewood smoky vegan cheese doesnt contain any high FODMAP ingredients, so thats an amazing start.

    According to Monash University, the following milk alternatives can be low FODMAP in certain portion sizes. So pick one of these to use instead of milk!

    • Soy milk made from hulled soy beans
    • Coconut UHT milk
    • Soy milk made from hulled soy beans

    A lot of gluten free breadcrumbs in packets can contain flavours that could potential be high FODMAP in larger serving sizes like gram flour or chickpea flour. So sometimes, it might be better to make your own from low FODMAP bread if youre in the important elimination phase of the diet!

    Best Cheese For Mac And Cheese

    I love cheddar and parmesan, but there are plenty of others to choose from.

    Smoked gouda, brie, gruyere, fontina, cream cheese or goat cheese melt terrifically and add modern flavor profiles.

    What I wouldnt use is pre-shredded cheese because the additives that are added keep it from melting and the mac and cheese will most likely be gritty.

    Feta is too dry and crumbly. It wont melt smoothly and will leave clumps of cheese. So thats not good.
