Tips For Making The Best Monster Cookies
- Use creamy peanut butter, not natural peanut butter. Natural peanut butter is too oily. I used Jiff creamy peanut butter.
- Dont skip the step for softening your butter. Take the butter out of the refrigerator and allow it to soften on the counter for 30 minutes up to an hour. Your butter is soft enough when you touch the butter and can see your fingerprint in the butter.
- I use a greased ice cream scoop to make these extra-large cookies. I use coconut oil cooking spray to grease the ice cream scoop. If you want to make smaller cookies, use a greased cookie scoop and bake the cookies for 10-12 minutes.
- I prefer using parchment paper when baking cookies.
- I like baking these cookies on an extra-large baking sheet.
- Top the flattened cookie balls with the back of the ice cream scoop and top with a few extra M& Ms and chocolate chips before baking them.
- Bake the cookies on the middle rack.

Flourless Chocolate Mudslide Cookies

Thanks to Enjoy Life for sponsoring these flourless chocolate cookies recipe as part of our ongoing partnership.
At a gluten-free bakery sometime over the past few years, I tried a cookie called a Mudslide Cookie. It was so rich and chocolatey and sweet that it quickly became my favorite gluten-free chocolate cookie and I knew Id have to recreate it at home.
It just doesnt get more chocolatey than these flourless cookies, so theyre perfect for a self-proclaimed chocoholic like me!
I had never had a chocolate cookie quite like the mudslide cookies, so I went searching online and found many recipes for flourless chocolate cookies that looked similar but not exactly the same as the shiny, rich ones Id had.
Then I combined a few recipes, and tried these a few times, making changes until I made a cookie that I like even better than the ones I remembered. These are the best gluten-free chocolate flourless cookies!
Whether you call these mudslide cookies or flourless chocolate cookies, I think youll love them!
All those lumps and bumps make it seem like these have nuts, but they dont! By using a variety of chocolate sizes, I was able to achieve that bumpy look while still keeping them free of nuts.
Quick Oats And Rolled Oats
There are a few differences between quick oats and rolled oats . Rolled oats are rolled into flakes, have more texture, and cook for 10-15 minutes. Quick oats are cut into smaller pieces, rolled thinner, and cook in 3-5 minutes.
If you only have old-fashioned rolled oats, you can pulse the old-fashioned oats in a food processor a few times to make quick oats.

Can I Freeze The Cookie Dough
Yes, freezing cookie dough is so easy! The best way to freeze this cookie dough is to freeze portions out of the dough on a baking sheet just like you are making cookies. Then place them in the freezer to flash freeze them for 10 minutes.
Once the cookies are flash-frozen , place the cookie dough balls into a freezer bag. Frozen raw cookie dough can actually last 3 months in the freezer.
You do not need to thaw the cookie dough before you bake them. You may need to bake the cookies for an extra minute or two, so please watch your cookies.
