Tips For Measuring Gluten
The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.
Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.
Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.
How To Choose A Healthy Bread
To choose a healthy bread, look for brands that have:
- 100% whole-grain or sprouted flours listed as the first ingredient, with limited other ingredients
- 3â5 grams of fiber and 3â6 grams of protein per slice
- No added sweeteners
One of the best ways to ensure that youâre choosing a healthy bread is to make it yourself. This way, you can control the ingredients. Hundreds of recipes for homemade breads are available online to suit most every dietary need.
Keep in mind that while the breads on this list are healthier than other varieties, bread is generally not as nutritious as other whole foods.
Fruits, vegetables, legumes, nuts, and seeds, as well as whole grains that have not been milled into flour, typically pack more fiber and beneficial nutrients than bread.

A Note On Measurements
While Ive included the volume measurements in the recipe card below, if at all possible : USE METRIC GRAM MEASUREMENTS IF YOU CAN.
Theyre much more precise and produce more reliably delicious results. This is true for pretty much all of baking a kitchen scale will invariably give better results than cups and tablespoons.
Barely Bread 100% Grain
Thompson gave this one top honors on the nutrition front. “It’s a Paleo bread, so there’s no grain, making it a little different from the others,” she explains. Unlike many gluten-free breads, the first ingredients on the label are eggs, unsweetened applesauce, and almond flournot just a straight-up starch. There’s even some apple cider vinegar in there.

Tips For Making Gluten
Here are my tips that work with this gluten-free bread recipe. See blow for my gluten free bread machine recipe.
Don’t substitute anything unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.
Ingredients at room temperature work best. You can always run your eggs under warm water for a couple minutes to bring the temperature up.
Read the recipe instruction and get all ingredients out before you start.
Use dry active yeast or quick yeast.
If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.
Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.
Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.
Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

How Long To Bake Gluten
This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.
You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.
Does Rye Bread Have Gluten Is Sourdough Gluten Free
They dont have the fluffiness of a standard white loaf or the bounce of a wheat-based wholemeal bread, but this isnt down to a lack of gluten.
In reality many sourdoughs are baked using wheat, so you need to look specifically for a loaf made with a gluten free grain.
And if youre looking for gluten free rye bread, prepare to be disappointed. This grain is unsuitable for anyone following a gluten free diet.

Best Gluten Free Flour For The Bread Machine
There are so many good gluten free flour blends and I have tried a few when I was developing my recipe. Most didn’t perform the way I wanted to I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.
This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.
Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.
Step 4: Pour the whisked dry ingredients on top of the wet ingredients.
Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.
Step 6: This is what the batter looks like after the bread machine mixes the bread dough. You will see how wet this batter is compared to normal bread dough. This is what you want.
At this point, when the mixing has stopped, you can try to remove the paddle with the long tongs I linked below, or you can remove it when the bread is baked.
