    If you have celiac disease, any gluten-free food sharing a fryer with gluten-containing food is not considered gluten-free or celiac-safe. So if gluten-free food shares a fryer with not gluten-free food, it is not safe for people with celiac.

    However, the story might be different if you have non-celiac gluten-sensitivity. People with non-celiac gluten-sensitivity have a wide range of varying gluten-exposure tolerance levels.

    So some people with non-celiac gluten-sensitivity might be fine with french fries sharing a fryer and some may not.

    A few questions that I frequently receive while presenting at conferences are if French fries are gluten free and how to ensure that there is no cross contact with other foods that contain gluten and other allergens.

    I’d like to share with you some ideas and questions that you can ask restaurant staff while ordering your meals. These will help to ensure that your French fries are gluten free and that no cross contact mistakes are made.

    From a French fry standpoint, potatoes are naturally gluten free. That being said, food preparation techniques in restaurants and fast food chains can impact if the French fries remain gluten free.

    Cross-contact occurs in two primary instances. First, when menu items such as French fries are prepared in the same frying oil as other foods containing common allergens. And second, when microbes or food particles are transferred from one food to another by using the same knife, cutting board, pots, pans or other utensils without washing the surfaces or tools in between uses.

    To avoid cross-contact, the restaurant should use a dedicated fryer for French fries to be gluten free. Ensuring a dedicated fryer is extremely important for those with gluten, wheat, dairy, fish and shellfish allergies so no cross contact from fried foods such as cheese sticks, breaded calamari and battered fish occurs.

    P.F. Chang’s is another favorite fast casual go-to restaurant for those who eat gluten-free, and many gluten-free diners have had good success ordering off the chain’s dedicated gluten-free menu.

    The choices include a wide variety of appetizers, gluten-free egg drop soup, a noodle dish, plenty of entree options and even vegetarian options. You even can order a great dessert, P.F. Chang’s excellent GF flourless chocolate dome.

    Gluten-free options at P.F. Chang’s include:

    • Chang’s chicken lettuce wraps
    • Pad Thai
    • Chocolate souffle

    All of P.F. Chang’s gluten-free dishes are served on a special plate with the chain’s logo so that you know you’re getting a safe meal. The restaurant also uses gluten-free soy sauce in its GF creations.

    Before you were diagnosed with celiac disease, running out to grab a quick bite to eat where someone else had to do the cooking and cleaning up was a luxury you may not have fully appreciated. Now that you have some idea of the hazards of eating gluten, you may feel too frightened to leave the confines of your own gluten-free kitchen.

    A study of Canadians living with celiac disease reported that more than half of the families with celiac members reported that they avoided restaurants all or most of the time, despite the fact that four out of five people generally report that going out to eat at a restaurant is a better way to use their leisure time than cooking and cleaning up!

    Living gluten free is not about living in a bubble though, so I urge you to put your fears on the shelf of your gluten-free flour cupboard and close the door!

    Since most celiacs surveyed have indicated that their quality of life would be improved if there were more gluten-free choices at restaurants, it is imperative that you learn how to successfully navigate the restaurant world as a celiac wanting to live a better life.
