Gluten Free Corn Dog Muffins

GLUTEN FREE CORN MUFFINS RECIPE

Corn Dogs = yummy! I have seen a couple Gluten Free corn dog recipes that were more traditional but this recipe caught my eye. The only change to make it Gluten Free was to use Gluten Free corn mix.

What you need:GF Corn muffin mix 3 hot dogs

How to Make it:Heat oven to 400 degrees. Spray mini-muffin pan with cooking oil. Mix corn muffin mix as directed. I followed the directions to make 6 regular size muffins and it was perfect to make 16 mini-muffins. Cut hot dogs into small 1 inch pieces . Fill muffin tins half full with corn mix and place hot dog in the center.

Bake at 400 for 9 minutes. Serve with the dip of your choice.

Tips:Do not overfill the tins, once you put in the hot dog the corn mix will be the right height. Cut off the rounded ends of the hot dogs so the pieces will stand up better. You could easily increase this recipe to meet your needs.

Our family has always called this side dish corn casserole, but other families call it corn pudding, corn souffle, creamed corn casserole, or corn spoon bread.

Whatever its called, corn casserole is a delicious addition to any feast from Thanksgiving to Christmas and Easter. Its the perfect side dish to turkey, chicken or ham, though my son would eat it as his entire holiday meal, if allowed.

How To Make These Breakfast Muffins

These muffins are made very easily in a single bowl. Just combine one of my recommended all purpose gluten free flour blends, cornmeal, baking powder, and salt, and whisk to combine well. Then, add the few tablespoons of shortening and crumble it into the dry ingredients.

The shredded cheese is then added to the dry ingredients and everything is tossed together. That way, the shredded cheese doesnt stick together and its evenly distributed throughout the muffin batter.

Add the wet ingredients , and mix to combine. Here, you could replace some of the cheese with crumbled cooked bacon pieces, for an even heartier muffin.

Like we described above, you can either make full corn muffins by filling the prepared wells of your muffin tin nearly full, or you can fill the wells only about 1/4 of the way full. Then, top with a whole egg.

I like to make 8 or 9 full muffins, and 3 or 4 egg-topped muffins. Not all of my children like the whole egg on top . They are so, so wrong, though. Haters gonna hate!

Additional Ingredients And Mix

Like most boxed mixes, youll need to provide a few extra ingredients to bring it all together. Typically, those ingredients are eggs, milk, butter or oil, and occasionally water. A few mixes require a little extra, like canned corn.

After you find the mix that you like best, you can begin to play with the ingredients and mix-ins to further customize your cornbread. Consider substituting full-fat yogurt, sour cream, or buttermilk for the milk. Add cheese, freshly sliced jalapenos, or diced bell peppers to the mix.   • Butter – you can substitute vegan butter if you are dairy free.

How To Make Your Own Cornmeal:

You can make your own cornmeal from popcorn. Put the popcorn in a blender or a coffee grinder and blend until the popcorn is ground. Then pour through a wire strainer over a large bowl. You can tap the side of the strainer to help shake it through.

Any large pieces of popcorn can be added back to the blender or grinder along with more popcorn to repeat the process.

This simple gluten free corn muffin recipe makes a sweet, easy breakfast or even serve it as a side with chili or your favorite barbecue.

I feel like corn muffins are one of those recipes that everyone loves and nobody thinks to make. I always make corn bread but decided one night that gluten free corn muffins needed their chance to shine.

I often make corn bread when we have things like ribs or chili for dinner and then we usually eat the leftover gluten free corn bread for breakfast the next day. I figured since wed be eating it for breakfast, a gluten corn muffin recipe would be the way to go.

And Im so glad I made that decision. It had been so long since I had had corn muffins that I had forgotten how much I love them. Theres just something so simple and delicious about them.

My 4-year-old pretty much fell in love with them too. She could not get enough and has been asking for more corn muffins ever since.

Luckily for me , these corn muffins are a cinch to make, you can make a big double batch, and they freeze really well. You can defrost them at room temperature or you can defrost them quickly in a warm oven or toaster oven.

I also make my gluten free corn muffin recipe dairy free since my daughter is lactose intolerant. I use unsweetened coconut milk but if you dont need a dairy free version, you can use your milk of choice.
