When all TJs sold was their gluten free white sandwich bread, I didnt include it in this best-of gluten free bread list. All 3 of my children agreed that it just was not very good.

The loaves were so tiny that it was actually quite expensive in the end. But theyve since come out with a sliced gluten free Italian bread that is really good. So its included as a bonus entry.

I count 12 generous slices in a loaf, each of which is the size and shape of what I remember sandwich bread to be. The slices have a tender interior thats soft without being gummy at all.

It toasts well, too. And the end pieces are full-sized, which is why I counted them among the 12 slices.

A Note About The Dough

This dough is wet and sticky. After youve beaten it, it will look almost like buttercream frosting. There is no way you could knead this dough without having to add TUNS of extra flour, which would inevitably ruin the breads texture.

After the first rise, brush a spatula with oil or coat it with cooking spray. Youll fold the dough gently using the spatula and pour it into a prepared loaf pan. It wont pour into the pan like a cake batter, youll need to use your oiled spatula to guide it into the pan. Then you can use your spatula to smooth the top. You may need to re-oil your spatula a few times during this process.

Cover the dough and let is go through its second rise. When youre ready to bake it, you can sprinkle on some extra flour to the get the artisan bread look.

Baking The Bread In A Pullman Loaf Pan

I had always wanted to try making it in a Pullman loaf pan. That was the only way to see if I could get those perfect, no-dome slices that are truly made for sandwiches.

Baking in a Pullman pan also tends to make softer bread. The moisture in the bread is trapped inside the pan during baking, and the bread absorbs it as it bakes.

The photo below is a loaf baked in a 2 pound Pullman loaf pan. The photo above is the bread rising in a 1-pound Pullman loaf pan.

You can make a 1-pound Pullman loaf, or a 2-pound Pullman loaf. The baking time is nearly the same, as the pans are much longer but also considerably more narrow.

This recipe was created by a man named Tom Van Deman, and he provided it, selflessly, to everyone who asked without asking for recognition or attribution. For a time, it was sold as a gluten free bread mix called Toms Celiac Light Bread.

I first got the recipe from Tom in either 2004 or 2005 when I was part of an early celiac message board. At the time I had been ordering expensive, spongy gluten free bread from Canada that looked good but tasted bad. I was desperate.

Back then, there was essentially no good gluten free bread for sale that was any goodor affordable. Today, thankfully, we have lots of packaged gluten free bread options. But fresh is always better.

I could not believe that Toms recipe worked even when my measurements seemed a tiny bit off. I used it for my kids school lunches and for french toast. I practically used it for a pillow at night and had sweet, sweet dreams. ?

Toms Bread is actually quite easy to make, freezes beautifully, and can be sliced as thin as you like. When its freshly made, you dont need to toast it.

If you dont plan to eat it all in a day or two, slice the whole loaf, then freeze it in a freezer-safe package. To defrost, just toast a couple slices and itll come back to life.

If what you really want is a no-nonsense white sliced bread that wont steal the show from your sandwich filling, this loaf fits the bill. Why Isnt My Bread Rising

There are 2 possibilities from my experience. The first is that your yeast is dead or that the water you used was too warm or too cool.

The second is that youre not allowing the bread to rise in a warm enough place. During the summer, it works fine on the counter if its covered. However, during the cooler months, I like to let my bread rise in the oven right next to the oven light. It gives off just enough warmth to help the bread rise.

How To Make This Versatile Gluten Free Bread Recipe

How To Make The BEST Gluten-free Bread ð?â

This recipe is a batter bread recipe much like our gluten free white sandwich bread recipe from our flagship gluten free cookbook. But its more old school than that recipe.

All you really need to do to make this bread is combine all the dry ingredients except for the yeast, and whisk them together. Then, add the yeast and whisk to combine . Add the wet ingredients, and beat really well.

The dough isnt just a batter. Its a very wet batter. I remember that I used to roll it out and shape it into a rectangle in a sheet pan to make something resembling gluten free pizza. But its so soft that I simply cant picture how I did it successfully. I think I used a ton of garbanzo bean flour to shape it?

For many years, to ensure reliable results in baking, Ive measured nearly every ingredient by weightincluding water, for which 1 fluid ounce equals 1 weighted ounce. I do measure the ingredients in this recipe by weight, but I made it successfully for so long without weighing a single thing. So clearly its not essential!

You do need to include all of the ingredients as listed, or at least an acceptable substitute as outlined in the Ingredients and Substitutions section below. You do need to beat the batter/dough well, allow it to rise fully , and slice it in the center so it doesnt explode in a million different directions as it rises.
