  • Prepare your ice cream scoops in advance and place them in the fridge. This will help keep them nice and frozen solid when you wrap them in your mochi dough.
  • Mochi dough should be cooled down, but also fresh. Dont make this too much in advance or it risks getting dried out and will tear as you try to wrap your dough. Make the dough when your ice cream scoops are frozen.
  • The dough will be sticky so use a lot of cornstarch. When it comes time to rolling the mochi dough out, generously cover your parchment paper, the dough, and your rolling pin with cornstarch. Use a sifter to avoid clumps.
  • Use plastic wrap to contain the mochi ice cream balls as they refreeze. It will help the seam stay together and keep it in a round shape. Plus, any ice cream leaks will be contained while it freezes.
  • Work as close as possible to your freezer, and take out only one ice cream ball at a time. They melt faster because of the heat of your hands.
  • If you have them, use plastic latex gloves. They will help insulate the ice cream from your body heat.
  • When it comes time to eat the mochi ice cream, let it come to room temperature. I found that 7 to 8 minutes usually does the trick. After that little bit of anticipation, the mochi dough is pillowy soft and has the bouncy chew that you expect from a mochi ice cream.

How To Make Mochi Ice Cream At Home

  • Take rice flour, salt, sugar, water, food colour and vanilla in a bowl and mix well to a paste.
  • Wrap the bowl with a plastic wrap leaving a small gap.
  • Microwave for 1 min. Remove it and give a mix.
  • Pop it back in microwave and cook for 30 more seconds. Mix again and cook for 30 more seconds if it is too runny.
  • Now remove it from microwave. The mixture will be so sticky. Now keep mixing using a spatula for at least 2 minutes.
  • Dust a work surface with some potato starch. Transfer the mochi mixture to the potato starch and dust it all over it.
  • Now roll this using a rolling pin till thin and smooth.
  • Cut it in big squares.
  • Now lets fill the mochi. Take a square and place a scoop of icecream in it.
  • Wrap it from all sides and use a plastic wrap to tighten and seal the edges.
  • Store the mochi icecream balls in freezer wrapped in plastic wrap.
  • Place the mochi ball in freezer till serving.
  • Serve when needed.

    With this style, the dough is made by repeatedly pounding steamed sticky rice, called mochigome, with other ingredients. The continual pounding helps develop a perfectly smooth, soft, elastic, and chewy texture.

    But with my lazy cooks version, this vegan and gluten-free treat is actually very simple to make!

    Rather than steaming and pounding rice, you can use a glutinous sweet to quicken the process.

    After mixing all of the ingredients together, you simply microwave the wet mixture for a few minutes until it thickens, roll it out, cut it, and eat it!

    4. Divide the dough into 3 to 4 equal parts and flatten each one into a circular shape. You can easily stretch the dough using your hands.

    5. Scoop out red bean paste and place it in the centre of mochi wrapper.

    6. Pinch the four corners of the mochi wrapper, and then pinch the remaining corners together. Serve and enjoy!

    Mochi is usually made of rice cakes and they are digestible food since it contains the key component that is starch. But the preparation process makes rice cakes harder to digest. It is observed that mochi becomes sticky when cold. Also, it is not dissolved in hot water with ease.
