Next add 6 cups chicken broth. Well be adding aromatics like carrots, shallots, and celery to the pot next, which you usually add to a whole chicken and water to make chicken stock. But, since were only simmering for 30 minutes, vs a couple hours, I like using broth instead of water to get tons of flavor really fast.
Next add those aforementioned aromatics: 1 cup each carrots and celery, 1 chopped shallot or onion, plus 1/2 teaspoon each dried thyme and dried parsley, 2 bay leaves, 2 cloves minced garlic, salt, and pepper.
Bring the broth to a boil then place a lid on top, turn the heat down, and then simmer until the chicken is fall apart tender, 30 minutes. Then STOP! Before you drain the pasta, reserve a cup of the pasta water. I usually use tongs to lift the pasta out of the water rather than drain it into the colander. This way I always have as much pasta water as I need and I dont risk forgetting to set some aside.
Next, immediately add the pasta to your warmed sauce in a skillet. Dont rinse the pasta first, dont toss it with oil. Straight into the warm sauce. I usually get the sauce warmed before cooking the pasta since it cooks so quickly, then turn the sauce down to low while the pasta cooks.
Last, toss the pasta with the sauce and add in a splash of the pasta water. The starches in the pasta water will help the sauce hold onto the pasta for more flavor in every bite!
Make The Gluten Free Egg Noodles
While the beef is cooking, make the gluten free, homestyle egg noodles.
Add Bobs Red Mill Gluten-Free 1-to-1 Baking Flour into a large bowl then make a well in the center. To the well, add whole eggs whisked with egg yolk, salt, and water then use a fork to gradually incorporate the flour into the eggs. Once all the flour is wet, use your fingers to press the dough together then turn out onto a heavily floured work surface and press and knead to bring the dough together into a ball.
The dough shouldnt be sticky but if its crumbly, work up to 1 additional Tablespoon water into the dough.
Slice the dough in half then roll each half as thin as you can, keeping the countertop and dough well floured so the rolling pin doesnt stick. Next use a pizza cutter to slice the dough into noodles approximately 2-1/2 x 1/2 absolutely NO need to be precise here!!
Scrape the noodles up off the counter with a bench scraper or spatula then toss with extra flour to ensure they dont stick together. Place the noodles into a covered dish then refrigerate until ready to use.

Storing Your Egg Noodles
We all love to open the freezer and see something delicious on hand on a hectic night. And what else to have than a tasty bowl of egg noodles. Make an extra batch while cooking the next time and store them. You can use zip-lock bags for this purpose and freeze the noodles for up to 3 months for convenience.
It is best to eat the egg noodles right away, as they dont last long in the refrigerator. You may thaw them with the help of a low power microwave. It is also perfectly acceptable to let the noodles soften naturally.
You can even put the noodles straight into boiling water without thawing. It will only take an additional 10 minutes while cooking. The sauce you prepare, along with the recipe, can also be frozen along with the noodles.
Along with freezing, you can store your egg noodles for later use by drying them. You may put them in airtight boxes, bags, or containers once theyre dry and keep for about a month.
But Does It Taste Like Pasta
Simple answer: YES.
Longer answer: I havent eaten actual pasta in so long I didnt feel like Im a good person to judge this. So Ive used my parents as taste-testers , and they tried just the plain, cooked gluten free pasta. No other flavours to mask the inherent pasta flavour.
And the verdict: They couldnt tell the difference. It tastes, feels and looks like pasta. Its actually darn good pasta, if I do say so myself.

It doesnt require that much extra time to make your own fresh pasta, and this dough is incredibly easy to work with. Use a knife or pizza cutter to cut the pasta into any shapes you like linguini, fettuccini, lasagna, or even bow-tie pasta!
Ive had such success with this recipe that Ive made it over and over again. Ive recently been testing it with other flour blends and ingredients variations, and have come up with two distinct and incredible tasty homemade gluten free pastas recipes. The first recipe I posted was made using just starches this cooked pasta has the taste and texture similar to that of rice stick noodles youll find in the Asian section of your grocery store. The second variation is more similar to the texture and flavor of regular pasta noodles. But both are equally tasty!
Both however contain eggs, so if you are allergic to eggs unfortunately this isnt the recipe for you. There is no way to get around including eggs, and there is no substitute for them. With so few ingredients, eggs provide texture, binding, moisture and most importantly flavor, to create a pasta that tastes as close to the real thing as you can get.

Meanwhile make the gluten free egg noodles. I am telling you youre going to flip for these chewy noodles which are a dead ringer for their gluten-filled frozen counterparts!
Start by whisking together 3 whole large eggs plus 1 extra egg yolk with 1 teaspoon salt and 1 Tablespoon water in a small bowl.
Add 2 cups gluten-free flour blend with xanthan gum to a large bowl then make a well in the center and pour in the egg mixture. Using a fork, whisk while gradually adding flour from the outside until a stiff dough has formed.
As I mentioned, Lincoln loved this dish and even got in on the noodle-making action! Until he swatted the bowl and got flour everywhere. Game over.
Scoop the dough onto a heavily floured surface then knead for a few minutes until it comes together in a ball. Cut the dough ball in half then use a rolling pin to roll each half into a rectangular sheet as thin as you can get it. Add flour and flip/rotate the sheet a few times during the rolling process to make sure its not sticking.
Next, use a pizza cutter to cut the dough sheet into 2-1/2 x 1/2 noodles.
Toss the noodles with extra flour so theyre completely coated and wont stick to each other then place in a container.

After the noodles are cooked add the chicken back in plus 1/2 cup frozen peas and 1 cup milk shaken in a jar with 2 Tablespoons gluten-free flour then cook until the mixture is thick and bubbly, 4-5 minutes.

Yes, I believe that you need a food processor to make this recipe for gluten free egg noodles properly. Even a miniature food processor will work .
When I say this, I know that many of you dont have a food processor and will attempt to make this recipe with a bowl and a spoon. This isnt a prohibition against trying!
I try to require as little special equipment as possible in my recipes, since I want everyone to join in the fun. But I will say that, if you dont follow the recipe as written, your results are far from guaranteed.
Its not uncommon for readers to make adjustments to a recipe, often assuming theyre insignificant and find that the recipe hasnt worked as described. You are free to do so, but its not fair to leave a comment saying that you followed the recipe to a T and it didnt work at all.
If you dont use a food processor here, your ingredients are unlikely to be combined properly. That means your dough wont be like mine.
The same goes for using ingredient substitutions. Recipes are like scientific formulas, and I try to build in resilience, but every formula has its limits.
Can I Store Gluten
You can easily prepare your gluten-free egg noodles, cook them, and then store them for later.
If you are not using them right away, though, we recommend you cook them for 90 sec, completely dry them off, and then store them in the fridge until you are ready to use them. We don’t recommend leaving the fresh gluten-free egg noodles in the refrigerator for longer than 24 hours as they will begin to lose their freshness soon after this.
You can also dry the noodles out before you cook them if you aren’t planning on using them for a few weeks. In this case, you won’t be cooking them. After preparing the noodles, leave them on a large baking sheet on the side of the kitchen for at least 24 hours. Keep them covered throughout the drying process.
You will cook dry gluten-free egg noodles the same way you cook any other pasta, just add them to boiling, salted water, and drain before serving!
