Gluten Free Dairy Free Frittata


We have 12 backyard chickens and I love to find meals that I can use the eggs the girls are working hard to lay. We have grown to love frittatas! Which is just a fancy name for an Italian dish made with eggs and veggies.

None of our frittatas are created with the same ingredients. It usually depends on what meat and veggies I have in the house.

Frittatas are very simple to make! They work best for us in our cast iron skillet.

  • Cook your meat of choice. I usually do a pound of breakfast sausage and chopped up bacon. If you are left with a lot of grease from your meat, you are going to want to drain some of that. A little is fine and gives your veggies great flavor.
  • Add in your veggies and some olive oil. I use whatever I have on hand. A couple bags of frozen veggies, leftover corn from last night, mushrooms. You get the picture. You know what your family likes! I love it when it has some great colors.
  • Crack your eggs into a glass pyrex dish and add about a half cup of dairy free milk. We always have almond milk on hand. Whisk that all together then add about 1cup of dairy free cheese.
  • Pour your egg/milk/cheese mixture over your meat and veggies. Use a spatula to spread it out evenly. Top with a little dairy free cheese and bake your frittata in the oven until your eggs look puffy and cooked. Ours takes about 25 minutes at 350 degrees.

Nutritional yeast adds flavor, tapioca starch gives it the texture, garlic powder, and liquid smoke combine with salt to add even more flavor, and water adds to coconut milk to create the creamy, saucy mixture we all know and love.

The base of this tofu curry recipe is pretty mild. If you love Thai food, you know: it can be very spicy. We love the heat over here, but more of a medium level. Because were always cooking for a 4 year old too, we generally keep our base curry recipe mild and then add hot sauce at the table. Here are some notes about the heat in this tofu red curry:

  • Use hot sauce to taste! The 1 teaspoon hot sauce in this recipe adds a mild amount of heat. If youd like medium, double it. For very spicy, use as much as youd like! As we mentioned, its nice to do this in your bowl vs the entire pan: but its up to you.

  • Sambal oelek, an Indonesian chili sauce made of chili peppers, garlic, ginger and lime. It has a chunky texture and little to no sugar.

  • Garlic chili sauce, similar to Sriracha with a chunkier texture, made with chilies and lots of garlic. It tastes a little brighter than Sriracha and has more nuance.

  • Find medium shrimp . Medium shrimp is our favorite, because its bite-sized and distributes well with the veggies. Large works too! Medium is labeled as 41 to 50 count, and Large as 31 to 40 count .
  • Use tail on or peeled. Tail on looks nice, but you do have to remove the tails with your hands as you eat them! Peeled is nice, especially when serving kids.
  • Fresh or frozen. Both have essentially the same freshness because most shrimp are immediately flash frozen. Just make sure to thaw the shrimp in advance.
