How To Make Healthier Lemon Bars
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Lightly grease an 8×8 or 9×9 baking dish.
- Step 2: Add the crust ingredients to a food processor or blender and pulse until the mixture is combined. Pour the crust mixture into the baking dish and spread evenly with a spatula.
- Step 3: Bake the crust for about 10-12 minutes, until lightly golden around the edges.
- Step 4: Meanwhile, add the filling ingredients to a medium bowl. Whisk or mix on low with a hand mixer until combined.
- Step 5: Once the crust is baked, take it out of the oven and pour the filling over the crust. Lower the oven temperature to 325 degrees Fahrenheit.
- Step 6: Bake for about 25-28 minutes or until the center is set. The center should not move if you jiggle the pan.
- Step 7: Let cool completely and refrigerate for at least 4 hours before serving. For best results, let cool in the fridge overnight. Optional: sprinkle powdered sugar over the tops of the bars before serving.

What Exactly Is Tigernut Flour And Whats The Best Way To Use It
If youve gone gluten-free, then you know just how many variations of four are out there almond flour, arrowroot flour, coconut flour, cassava flour, just to name a few. But what about tigernut flour? This might be a new one.
Lets start off by saying that a tigernut isnt actually a nut like the name implies. Its a small root vegetable that grows in the Mediterranean and North Africa that is naturally gluten-free, AIP-, and Paleo-friendly, offering those with nut allergies a safe flour alternative. Yet, it has a subtle nutty flavor!
This grain-free flour has become a trend in the natural foods space and is beginning to make its way to store shelves across the U.S. more regularly. So even if you havent spotted it out in the wild just yet, just you wait! In the meantime, I find it online here.
Tip: I highly recommend sifting Tigernut flour before measuring it in cups, I like to do this in a large mixing bowl using a fine-mesh sieve or flour sifter. Ingredients For Healthier Lemon Bars
Lemons: Use fresh lemons in this recipe for best results. It takes about 4 medium sized lemons to get ½ cup of fresh lemon juice.
Coconut Milk: We use full fat canned coconut milk for a creamy dairy free lemon filling.
Eggs: Youll need four eggs for this recipe. Three are for the lemon curd filling and one for the crust.
Honey: These lemon bars are sweetened with honey. You could try to use maple syrup instead but the flavor may change slightly.
Arrowroot Starch: Used to thicken the lemon filling.
Rolled Oats: Make sure the oats are certified gluten free if you follow a gluten free diet.
Almond Flour: The almond flour is blended with the gluten free oats for the base of the crust.
Coconut Oil: Melt the coconut oil before adding to the other ingredients.
Salt: For added depth of flavor in the crust.

Easy Dairy Free Recipe Swaps
- Swap dairy milk with any plant based milk. Soy milk has about the same amount of protein as cow and goat milk. Other options are almond milk, cashew milk, coconut milk, flax milk, hemp milk, oat milk , macadamia milk, and pea milk. Or try making your own using this easy 1-milk dairy-free milk recipe.
- Swap cheese with plant-based cheese. If you havent tried plant-based cheese in awhile, there are some pretty tasty ones available. I really like Miyokos Creamery and Kite Hill dairy-free cheeses.
- Swap butter with a dairy-free alternative. Extra-virgin olive oil and avocado are two of my favorite heart healthy butter swaps. I also like Melt Organic and Earth Balance Organic spreads.
- Swap yogurt with plant-based yogurt. You have a lot of options when it comes to choosing a plant-based yogurt these days. Choose from coconut milk, cashew milk , and soy milk versions.
- Swap dairy ice cream with plant-based ice cream or sorbet. Ice cream lovers rejoice! You dont have to give up your favorite treat! Choose from coconut milk and oat milk versions available in your grocery store. As always, read lables. Just because a prodcut is diary-free, it doesnt automatically mean its gluten-free too!

Whip The Eggs To Bring Lift And Structure To The Cake
Youll whip 8 large eggs to double volume, which should take you about 5 minutes of whipping.
What are you looking for?Great question.
The eggs will start getting foamy, then gradually increase in foaminess and volume, while also lightening in color.
As long as the eggs are completely whipped, light yellow in color, and very foamy, youve got what you need to lift this cake.
Youll slowly add about of the egg foam to the melted chocolate, then stir it all together until it becomes mostly homogenous.
Add about half of the remaining egg foam, stir again to combine, then add the last bit of the eggs.
Once all of the eggs are in, you should have a smooth chocolatey batter which will go right into your prepared pan.
Once all of the batter is in, pour hot water into the outer pan, about halfway up the side of the inside pan. This is your water bath, and the steam from the bath will help lift the cake evenly.
Allow the cake to cool completely, then refrigerate until completely chilled.
We have enjoyed this dairy free gluten free cake with many toppings, my favorite of which is ice cream. The texture of the cake is most comparable, in my opinion, to a mix between cheesecake and a brownie.
Its truly the best of both of those dessert worlds.
