Some scientists believe that the increased occurrence of gluten intolerance is in part caused by the consumption of genetic hybridization and/or manipulation of ancient wheat species, and that the gluten sensitivity is created by agricultural science.

    Additionally, scientists are looking for ways to genetically modify grains so that they can be eaten by those with gluten sensitivity. The study below is relevant to you because it demonstrates why this approach is most likely unsafe to say the least.

    A new study published in the journal Clinical Nutrition investigated to determine whether their was a difference between ancient wheat and modern strains of wheat in patients with celiac disease. The findings of the study might surprise you. You can read the conclusion of the study below:

    Ancient strains of wheat, although previously suggested to be low or devoid of coeliac toxicity, should be tested for immunogenicity using gluten-specific T-cell lines from multiple coeliac patients rather than gluten-specific clones to assess their potential toxicity.     According to this research study NO. The rumors being spread around state that whole grain, organic, sprouted grains are safe. I have had a number of patients attempt to eat organic sprouted bread products and end up being very sick. My advice is to avoid them. The nutritional qualities of grains are relatively poor. Contrary to popular belief, they are not necessary for a healthy diet and the nutrients found within wheat can also be found in multiple other foods.

    This is not the first study analyzing the safety of ancient forms of wheat in patients with celiac disease. Two additional studies were conducted last year on ancient wheat and specifically Kamut and Einkorn. Both found that the grains were toxic to celiacs.

    Bottom line If you are gluten sensitive, you should avoid these products despite the rumors that they are safe.

    If you follow me you know that I eat mostly paleo-ish . The one thing I miss the most is bread. Growing up, when I went out to eat, I couldnt wait for the bread basket to come out.     In 2011 we saw a demand for a different type of gluten free product so we created our Ancient Grains Gluten Free Flour. Our Ancient Grains Flour is different because we wanted a flour that first tastes as close to All Purpose Flour as you can get and secondly a flour that is as wholesome and nutritious as Whole Wheat Flour. By 2013 we perfected the recipe and now all of our Flour and Bake Mixes are based off this original Ancient Grain recipe that incorporates grains from our farm.

    Our flours donât include simple carbohydrates like others. We chose to use complex carbohydrates by using 5 whole grains including flax seed from our farm. The reason to choose whole grain complex carbs is because they are packed with more nutrients, are higher in fiber, and digest slower keeping you full longer. The addition of flax seed to our flour adds many of the health benefits from the Omega 3 fatty acids as well as increased fiber.

    The Effects Of Whole Grain No Starch

    Whole grain flour, especially without added starch, creates heavier gluten free bread. If, the added nutrition and lack of refined starch are worth it to you, then, by all means, use whole grain flours in your baking.

    The dry ingredients in this recipe contain over 57% whole grains. Usually, I suggest adding no more than 10% whole grains to a gluten free bread recipe. Therefore, expect a heavier bread.

    Ancient grains are not light but are lighter than whole grains. Most gluten free bread recipes contain approximately 50 60% starch such as cornstarch, potato starch, and tapioca flour. These starches lighten gluten free dough.
