One of the foodie joys I miss most by not eating wheat is the crisp, golden, flaky, melt-in-the-mouth bite of real puff pastry. Whilst Im not about to claim that the following recipe comes close to the original, it does make a crisp, flavoursome alternative that makes a crunchy base for a tart or a handsome topping for a pie. Its good with sweet or savoury flavours. I use half white vegetable fat and half butter for my taste, but you can substitute the butter for a vegetable based block margarine if youre dairy free or vegan butter or margarine adds colour as well as flavour so using all white fat will give a different result. Tapioca flour is often part of a gluten-free blend but adding a little extra to the mix helps give a more stretchy texture to the dough which helps in the layering process.
I remember that rough puff pastry was one of the first fancy pastries I made at school, and Ive been making it ever since. A favourite because it starts off as one hell of a messy mixture, but by the end of all the rolling and folding, you end up with a silky smooth, perfect block of pastry. Even with wheat flour, the rise isnt perfect, but its a lot easier to work the fat into gluten-free flour using the rough puff method than with any other method I have tried. It does take a bit of time, but if you fancy the challenge, why not give it a go?

Snow Days Pizza Bites
A new brand on the gluten-free pizza roll scene is called Snow Days and its bright blue packaging caught my eye at Sprouts the other day. Like Feel Good Foods, Im impressed by the clean ingredients list .
The crust is grain free and made from cassava flour. All Snow Days Pizza Bites are USDA Certified Organic. They contain grass-fed mozzarella and no preservatives or artificial ingredients.
I cooked the pizza rolls in my airfryer for 5 minutes at 400º, and they werent quite cooked through so I added another 3 minutes and they were perfect.
I noticed they are stuffed with more filling, more than found in the Feel Good Foods pizza rolls, however, the flavor was different. It wasnt as cheesy and only contained mozzarella cheese vs. a three-cheese blend like Feel Good Foods Three Cheese Bites.
The crust was really tasty, but a different texture than Feel Good Foods Snack Bites. Not as flaky and thicker. Its good, but different.
Overall, Snow Days offers a great gluten-free pizza rolls option and I recommend you try it for yourself.

Can I Freeze Gluten Free Puff Pastry
Yes, you can freeze gluten free puff pastry dough. It’s best to finish rolling it out into a 15X12 rectangle before you freeze it.
After you roll it out, roll the dough up with the parchment or wax paper and place it in a zip lock back and place it in the freezer.
When you’re ready to use it, let it sit at room temperature for 30 minutes before you unroll it.
If you unroll it when it’s still cold, it will crack.
This gluten free puff pastry recipe makes one 15×12, Â¼-inch-thick sheet of puff pastry dough. It weighs approximately 22 ounces.
If you’re making a recipe that uses a store-bought puff pastry dough simply weigh out the amount you need.
- I haven’t tried a dairy-free butter in this recipe. When I do, I will update this post.
- You can substitute the potato starch or the tapioca starch with arrowroot starch, but not both at the same time.
- You can use salted or unsalted butter, but if you use salted butter you’ll need to omit the salt.
- You can use heavy cream instead of egg for the “egg wash”.
This rough gluten free puff pastry was designed to be an easier version of traditional puff pastry.
I’ve minimized the steps and ingredients as much as possible, while still delivering a delicious, flaky, buttery puff pastry dough. This recipe also works great for gluten free puff pastry sheets.

Tip 1 Use Frozen Pastry Within 24hrs Of Buying
This ones really simple, although you might think it kind of weird. Tip number one is to use your pastry when its fresh. Now, I can hear you saying, Stacey, its frozen. That kind of defeats the purpose.. And while I hear you, and I totally get it, trust me on this one.
When you buy a packet of frozen pastry from the shelf in your supermarket, who knows how long its been sitting there for. Then you take it home and whack it in your freezer. How long are you going to leave it there for until you might decide to use it? So my hot tip is to use your pastry within 24 hours of getting it home. I know, thats short but when I started doing this, it made the biggest difference to not only the usability, but the end product. My sausage rolls and pastry cases were lighter, they were flakier, and overall, it was much easier to work with.

Feel Good Foods Snack Bites
I was thrilled to discover that Feel Good Foods makes gluten-free pizza rolls, which the brand refers to as snack bites. Feel Good Foods has a reputation for making craveable frozen snack foods that are hard to find once you go gluten free, including potstickers, perogies, mozzarella sticks and egg rolls.
I stumbled upon Feel Good Foods snack bites at my local Walmart. In fact, Walmart was well stocked with the Three Cheese Snack Bites, Chicken Sausage Snack Bites, and the Uncured Pepperoni Snack Bites.
The crust is made from a combination of cauliflower, rice flour, tapioca starch, rice starch and brown rice flour. Its flaky and holds together well.
The filling for the Three Cheese Snack Bites includes mozzarella, provolone and romano, which are all flavorful cheeses and add immense flavor.
The ingredient list is clean, and it contains no nitrates, additives, coloring or any weird, unrecognizable ingredients.
I cooked the snack bites in my airfryer for about 6-8 minutes at 400 degrees and they came out with a flaky crust and hot filling. These definitely pass the gluten-free pizza roll taste test in my house delish!

Watch Your Gf Puff Pastry Doughs Temperature
If you can make gluten free pie crust, then you can make gluten free puff pastry. And you can make pie crust. I promise. There are a few basic principles to keep in mind whenever youre making any pastry of any kind. Gluten free or not.
Everything should be kept coldbut not rock solid cold. That is especially true when it comes to puff pastry, as opposed to, say, gluten free biscuits. The larger the piece of butter youre working with, the warmer it can be without causing problems. Let me explain.
Puff pastry is made by creating a simple pie crust, and wrapping it around a packet made entirely of 1 whole cup of butter. Once the large packet of butter is wrapped in the pie crust, its rolled out into a rectangle. The first turn is simply the first time the dough-wrapped butter packet is rolled out into a rectangle and folded in thirds.

Earth Grown Vegetable Potstickers
If you are having a hard time finding Feel Good Foods potstickers, check your local Aldi to see if they have any Earth Grown Potstickers in stock! Make sure they are the vegetable potstickers, as this is the only variety that is gluten-free.
These vegan gluten-free potstickers are sold exclusively at Aldi stores and can be found in the freezer section if they are in stock. They are certified gluten-free and vegan. Only some Aldi stores carry this product, so call ahead of time to see if your Aldi does.
What Is An Accidentally Gluten
An accidentally gluten-free product is one which is outside of the free from aisle , but doesnt contain gluten, or have a may contain warning for wheat, gluten etc.
According to Coeliac UK, that makes them safe for us to eat! And it expands our choice to so much more than just the free from aisles. They dont have to be labelled as gluten-free, to be gluten-free!

A Note On The Ingredient Ratios
If you look at a range of regular pie crust recipes , youll notice that they often follow a 3-2-1 rule for the flour:butter:water ratio.
However, because gluten free flours absorb more moisture than wheat flour, a gluten free pie crust recipe requires a 3-2-slightly-more-than-1 rule, where you need to add more water than you would in a wheat-based recipe.
The best ratio for the gluten free flour blends Ive tested for this recipe is 3:2:1.2, though it might be different for other gluten free flour blend compositions.
Side Note: Dry Dough And Long Kneading Time
When you make the pie dough, likelihood is that it will feel very dry counterintuitively so. Youll definitely be tempted to add more water. But resist that temptation!! Adding more water will make your baked pie crust tough, whereas were trying to achieve perfectly crisp, tender perfection.
Instead, just keep kneading. The dough will come together, promise.
You see, because youre keeping all the ingredients cold and the butter pieces relatively large, the dough is initially kept together only by the added water. This is why it will look very dry and crumbly at first.
But as you knead, the heat of your hands will melt small portions of the butter, which helps bring the dough together. And yes, this might take as long as 5 minutes. Trust in the process. Youll get the most perfect flaky pie crust out of it.

Where To Buy Puff Pastry Sheets
Puff Pastry sheets have long been used in European kitchens. As is mentioned in history, the pastry was created by the Spanish Domingo Hernández de Maceras and published in 1607.
Maceras was the head cook at the University of Salamanca, and in his publication, the book Libro del Arte De Cozina, , he described the first recipe to make puff pastry sheets. Consequently, puff pastry sheets seem to have had extensive use in Spain by the beginning of the 17th century with some Arab or Moorish influences, historians say.
The Spanish published recipe contradicts the version that puff pastry was a French creation as the first publication mentioning puff pastry in France was published by François Pierre La Varenne in the book Pastissier François in 1653. Thats 46 years after the Spanish book was published.
A possible reason why puff pastry sheets are associated with France is that they resemble the croissant texture and buttery flavor, with visible airy layers.
