  • If you dont have baking soda on hand, baking powder works great too. I tested many batches and they were just fine.
  • To warm the milk, set it in a warm spot by the oven while its heating.
  • When flattening, dip the fork in sugar between pressing the cookie to keep them from sticking.
  • Recipe can easily be cut in half or doubled.
  • If youre allergic to nuts, try using sunbutter instead.

Recommended Equipment: I love using this silpat or parchment paper to line my baking sheets. And this tablespoon trigger cookie scoop helps keep the cookies uniform when scooping.

A Note On Properly Measuring Ingredients:

Like with all recipes, its really crucial that you properly measuring your ingredients. Weighing your ingredients will give you the most accurate results.

A slight difference in method can drastically change how much of an ingredient youre using and ultimately the result of your cookies. Take for instance the below photo.

The top cookie is properly measured ingredients. The second cookie below , uses actually MORE flour here. This is because the flour has been scooped. I highly recommend you weigh your ingredients, but if youre using cups, please spoon and level rather than scoop.

Do I Need To Chill The Cookie Dough

No! Unlike most peanut butter recipes that call for chilling the dough before baking which keeps the dough from spreading too much, this recipe doesnt require you to chill the dough, making for one less step and cookies in minutes. BUT, if the temperatures are warm in your kitchen, above 80 degrees, you may consider rolling the balls and letting them chill in the refrigerator for 30 minutes before baking. My kitchen was a cool 74 with the air on.

Vegan Chocolate Chip Cookies Without Coconut Oil Or Applesauce

One of the keys to this perfect recipe is using melted vegan butter. By using melted butter you do not need to cream the dairy-free butter with the two sugars. You get to simply mix the sugar into the hot melted butter, as well as the vegan cream cheese. This creates a perfectly thick liquidy mixture to mix into your gluten-free flour without needing to add any other liquid, like non-dairy milk. Bake The Vegan Gingerbread Cookies

  • Place the cookies on the baking tray with 1-inch space between them .
  • Then bake in the oven for 8 minutes, until the edges are just beginning to brown. Then remove and allow to cool completely on a cooling rack before decorating.

The time will vary based on your oven and the size/thickness of the cookies, so adjust accordingly. If you prefer crisper vegan gingerbread, bake for an extra two minutes.

  • Once the gluten-free gingerbread cookies have cooled, prepare the glaze by mixing the powdered sugar/Erythritol and water into a pipeable paste. Adjust the amount of water to get the correct consistency.

There are some challenges when you have food allergies to contend with, but thankfully, baking sugar cookies isnt one of them! These gluten free vegan sugar cookies taste exactly like regular cookies and are very easy to make.

Using a few good substitutes results in absolutely delicious vegan sugar cookies that hold their shape very well and have a delicious buttery flavor.

The gluten free and dairy free dough needs to be chilled for at least two hours. If you are really in a rush, you can just put the dough in the freezer for one hour.

Place the chilled dough on your rolling surface. If you havent rolled gluten free dough before, it can be a bit sticky, so you want to make sure you have enough flour on the rolling pin and on the rolling surface.

Roll the dough out until its about ¼ inch thick. Then youre ready to cut out your cookies!

Make-ahead: You can prepare the paleo gingerbread cookie dough in advance and store it, tightly wrapped, in the refrigerator overnight. Leave it out on the counter for 5-10 minutes before continuing. You may also be able to freeze the dough, though I havent tried. Instead, I recommend freezing the un-decorated cookies and defrosting them in time to decorate and enjoy.

Store: Once the glaze has dried, store the vegan cookies in a cookie tin in a cool place for 2-3 weeks.

Freeze: I recommend storing the cookies before adding the glaze. Flash freeze on a baking tray before transferring to an airtight container/Ziplock bag and store for 4-6 months! Allow them to thaw at room temperature before optionally glazing and enjoying these paleo gingerbread cookies.
