What Is The Best Gluten
If you are interested in buying a bread machine to use for making gluten-free bread, here are a few things to consider.
1. Gluten-free dough needs a lot of mixing. Bread machines are designed for mixing and kneading gluten-containing dough which is much thicker and way more elastic than gluten-free dough.
Most bread machines have one paddle that is used for mixing. My Breadman machine has one paddle and often I mix the bread ingredients in my KitchenAid mixer and then add the dough to the bread machine for rising and baking.
Some machines have two paddles and do a better job of mixing. Iâm pretty sure Zojirushi bread machines all have two paddles. I donât know if other brands do too. Expect to pay more for a two-paddle machine, but it might be worth it if you donât have to use your mixer first.
2. Gluten-free dough only needs one rise. Gluten-containing doughs rise, are punched down, and rise again, maybe even three times. Thatâs not necessary for gluten-free breads. A machine with a gluten-free cycle will likely eliminate the unnecessary rises.
3. A gluten-free setting doesnât mean it will make great gluten-free bread. It takes a lot more than that to get a good loaf of gluten-free bread. A good recipe or mix is much more important.
Recipes and mixes vary greatly and you will often find that instructions given for mixing time, rise time, and bake time vary from one recipe/mix to another and may never match the gluten-free cycle times.
Best Bargain: Bobs Red Mill Gluten Free Hearty Whole Grain Bread
Because it requires special ingredients, gluten-free bread mixes tend to be expensive, but this mix from Bobâs Red Mill is quite affordable. Each 16-ounce bag makes one loaf of gluten-free bread. The mix includes a variety of grains and seeds that produces a complex, whole-grain bread with more flavor than a typical loaf of white bread.
While traditional cornbread includes a lot of cornmeal, it also includes wheat flour, so itâs not usually gluten-free. This mix eliminates the wheat, creating a tasty cornbread that can be baked in a cast iron skillet, in a square pan, or in a muffin tin. Itâs simple to make, tooâjust add milk, egg, and oil, stir to combine, and bake. This 15-ounce box makes one pan of cornbread or 12 corn muffins.
Brazilian cheese bread isnât something that needs to be adapted to be gluten-freeâthe recipe never had gluten originally. Instead, these little bread balls are made with tapioca flour and no wheat at all. While this mix is designed for making cheese bread, it doesnât actually include cheese in the mix. While sharp cheese is preferred, you can add your own favorite, or you can leave it out for delicious, cheese-free rolls.

What If My Bread Machine Does Not Have A Gluten
If your bread machine does not have a gluten-free setting, you will want the setting that only has one mixing cycle . Gluten-free bread does not need a second rise.
If you dont have a feature with only one mixing cycle, try to see if you can override the pre-programmed settings for a 20-minute mix cycle, 1-hour rise cycle, and 1 hour-bake cycle.
You can also check out your bread machines manufacturer website to see if they have a gluten-free setting suggestion for their bread machine. Some bread machine makers have instructions for a gluten-free bread setting for their older models.
Two Things You Must Buy To Make This Bread:
1) A Bread Machine with a gluten-free setting and that bakes up to 2lb loaves.
Gluten-free yeast breads do not handle two rises well at all. They need extra mixing time, and only one rise cycle. You need to make sure to get a bread machine with a gluten-free setting as it is programmed for this method. I know of three bread machines brands that have models with a gluten-free setting.
Some have commented that this bread overflowed in their bread machine. This recipe is scaled for a bread machine that accomodates 2 lb. loaves. If youre is smaller, with room for 1 lb. loaves only, then this will overflow.
The older bread machine that I have and have used for years in making this bread is . I have had mine for many years now, and for over a year I used it weekly. It has worked perfectly for me. Another, very similar model is available with free shipping with Amazon Prime, Cuisinart CBK-100 2-Pound Programmable Breadmaker.
There are, Im sure, other models available, but hopefully this gives you a starting place. Just remember to make sure to get one that says it does 2 lb. loaves and has good reviews in regards to mixing well and not burning.
2) Maninis brand Gluten-free Multi-Purpose Flour
Right now, you can find Maninis flour and bread mixes for sale at natural food markets all over the Pacific Northwest, or buy directly from the Maninis website. You can search to see if it is available near you here. Or like I said, you can if thats easier.

You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.
Pro Tip For Measuring Flour
The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

The Path To My Gluten Free Bread Machine Recipe
I am truly proud of this gluten free bread machine recipe. Why? Because it makes the best gluten free sandwich I have EVER eaten. It also makes incredible toast. And it is the loaf that has seriously pushed the boundaries of gluten free breadmaking at GFHQ to a whole new level of simplicity and most importantly, to normality. THIS bread looks, tastes and feels like REAL bread. And it also stays fresh and soft for several days. Does your usual gluten free loaf do all that?
I have worked on two recipes to support my readers. The oat-based version and a version free from oats and corn for those who are intolerant.

What Bread Is Naturally Gluten Free
Only bread made with gluten-free flours and grains is gluten free. Bread made with wheat, barley, spelt, or rye contains gluten. Some ancient grains such as einkorn contain less gluten than modern wheat varieties, but breads made with those grains still contain gluten. Only breads with non-gluten flours, such as buckwheat, sorghum, amaranth, teff, and brown rice, are gluten free.
Pro Tips For Making Gluten
- I usually store the leftover bread in an airtight container, once its completely cooled. It may be kept on the counter .
- It is also best not to slice the bread before you store it, so just store the left-over portion of the loaf.
- I like to reheat my bread the next day because the gluten-free bread is best when warm.

The Best Gfv Bread Machine Loaf
Its fun to see the differences between the loaves that contain more yeast and water. The loaf in the middle is clearly too dry.
Please note that the addition of plant-milk really did improve the flavour of this bread recipe. Although, in a pinch, it could be made with just water and still be pretty good.
And, even though the loaf on the right looks like it would be the best, it wasnt my personal favourite. It contained a little more water and felt slightly gummy and was a tad under-baked. This was the only loaf that was set on the whole wheat setting , as opposed to only being baked in the bread machine.
The loaf on the left was the winner in my opinion. It had just enough hydration, wasnt gummy at all, tasted amazing and baked up beautifully every single time I tested it!
