What Gluten Free Flour Do You Use For Drop Sugar Cookies

I tested this recipe with my gluten free flour blend.

You can certainly use another gluten free flour, but you may need a little less flour depending on the absorption rate.

I’ve discovered that both Bob’s Red Mill’s 1 to 1 gluten free flour and Ryze’s Blue Bag Gluten Free Flour need a little less gluten free flour than what I use in my recipes.

You can always add more flour but you can’t take it away.

So do yourself a favor and if you are using any gluten free flour than mine, start with 1 cup of gluten free flour.

Bake a single cookie to test how it spreads.If it comes out too thin and crispy, add more flour to get a thicker cookie.

Are These Cookies Actually The Best

YES .

Actually, there are a lot of gluten-free cookie recipes out there that make the same claim, and some of those ‘other’ cookies are probably super tasty too. The more the merrier in my opinion.

And if we’re being honest, it’s all subjective. We have some REALLY strong preferences and opinions regarding this classic cookie. Just do a quick chocolate chip cookie Google search, click on the cookie recipes that pop up, scroll down to the bottom of the post where people leave their comments, and you will see herds of cookie addicts liberally deconstructing the cookie that the poor food blogger fell off the face of the earth to develop.

Some like their cookies super chewy, some like their cookies super crispy, some want both the crispy edge and the chewy center , some like their cookies more cake-like, some like them thick, some like them thin…you get the point.

And that doesn’t even include those who are begging to know if the cookie can be altered in some way to make them vegan, paleo, dairy-free, nut-free, egg-free, ALL the allergens-free. Chocolate chip cookie lovers can be a tough crowd. Especially gluten-free chocolate chip cookie lovers. Like me .

So you’ll have to do your baking homework and determine your ‘best’ cookie. If you are team gluten-free-chewy-chocolate-chip-cookie-with-an-ever-so-slightly-crisp-edge, well then my friend, you have come to the right place.

What Makes Perfect Gluten Free Chocolate Chip Cookies

In my opinion, what makes a perfect chocolate chip cookie is a really thick cookie, kind of cake-like, or bakery style. But, it has to also be really soft. Think Levain Bakery style cookies.

And unlike most chocolate chip cookie recipes, I dont load up on the chocolate chips . I actually like a little less chocolate in my CCCs, I think because I like to taste the brown sugary goodness of the cookie itself with a hit of chocolate every now and then. But if youre all about the chocolate in a chocolate chip cookie, by all means add more!

To Make Buttercream Frosting:

Beat the butter. Place the softened butter in a mixing bowl and use an electric mixer to beat it for 90 seconds, or until itâs fluffy.

Add the remaining ingredients. Slowly beat in 2 cups of powdered sugar, then the extracts. Taste and add more powdered sugar a cup at a time. If the frosting is too thick, add a tablespoon of milk or heavy cream.

Color the frosting. Decide how many colors you want and divide the frosting into bowls accordingly. Color each bowl of frosting with a small amount of gel food coloring.

Scoop the frosting into piping bags fitted with small round tips or spread the frosting onto the cookies. Add sprinkles immediately after frosting so they stick, then let the frosting harden for several hours or overnight.

Give The Dough A Rest

After you mix the dough altogether its important to give it a 30-minute rest. This gives the gluten-free flour time to hydrate and really makes a difference. Its key for non-gritty gluten-free cookies!

Luckily just a room temperature 30-minute rest will do and no overnight-in-the-fridge chill is needed. So you can still have chocolate chip cookies shortly after a craving strikes!

What Do You Use Instead Of Butter To Make Gluten Free Drop Sugar Cookies Vegan

Instead of the butter, use your favorite vegan butter or palm shortening.

I’ve found best results when I use half vegan butter and half palm shorting .

The reason I like using half vegan butter and half palm shortening is that sometimes vegan butter can make the cookies have a “fake butter” taste.

The vegan butter can also melt too quickly, resulting in oily cookies.

The palm shortening melts slower, helping the cookie to spread not to much and not too little, but just the right amount.

The palm shortening is also unflavored, and when combined with the vegan butter I feel like I get the perfect taste.

The Best Chewy Gluten

I dont like to throw the term Best Recipe around casually. But when I want to really get across that Ive tested and tried and adapted a recipe a bunch until I got it PERFECT, then I feel justified in calling it the Best gluten-free chocolate chip cookies ever!

Thats a whole lot of gluten-free cookies eaten for testing purposes so that I could share the best gluten-free cookies!

Back when I used to be able to eat gluten, I worked for years to find a homemade chocolate chip cookie recipe that I loved that reminded me of my favorite mall cookies.

I grew up loving the old Mrs. Fields chocolate chip cookies. My favorite thing to get at the mall was one of the huge cookies that they sold back in the 1980s. They were the perfect chewy cookie and were about as big as my head as a child! Over the years, the cookie size and quality has gone down, but I did still love those cookies.

I also liked the famed New York Times cookie recipe that was going around about 8-10 years ago pretty well. Just when I finally had a recipe for cookies that I loved, I got diagnosed with celiac and had to start all over with my recipe testing.

Ugh, how am I going to make gf chocolate chip cookies? I had to get trying!

Heres what I wanted in a gluten-free chocolate chip cookie:

  • Lots of chocolate no chance of having a bite without chocolate in it.
  • No gritty texture or weird feeling in mouth from too many starches or gums.

    Easy Gluten

    I like to bake these gluten free shortbread cookies with Bob’s Red Mill 1-1 Gluten Free Baking Flour. This is the one in the light blue bag.

    I have found that my baked goods come out how I like them with this blend, which includes a small amount of xanthan gum which is helpful in gluten free baking.

    Thick And Chewy Classic Gluten

    I need to preface this one with a quick PSA: not all oats are gluten-free.

    Although oats dont contain gluten, theyre usually processed in large factories where flour, other grains, and wheat are present.

    So, if you have a severe gluten allergy, be sure to get gluten-free oats that are processed in separate factories and free from cross-contamination.

    That said, if you have Celiac disease, oats are usually a bad idea.

    This is because they contain a specific protein called avenin, which is like gluten and intolerable for people with Celiac.

    Ok, that wasnt too quick, but its important to know these things, right?

    Once you have the proper oats, this recipe is like any other. Youll use white sugar for sweetness and brown for its chew.

    Make them with chocolate or raisins, or maybe even both!

    Blondies are basically a form of dessert bar, and are similar to brownies.

    The main difference is that blondies do not use cocoa powder for coloring . Lets just call them blonde brownies, shall we?

    The usual ingredients in traditional blondies also include flour, butter, eggs and baking powder. Brown sugar is also often used instead of white sugar. Add-ins such as chocolate chips or nuts are also common.

    How To Make Gluten Free Chocolate Chip Cookie Bars

    When youve gathered all your gluten free ingredients, its time to get baking! Start by whisking together your flour, cornstarch, baking powder, and salt in a medium bowl. Set the dry ingredients aside and beat together the butter and sugars until theyre light and fluffy. Then, add the eggs and vanilla and beat until theyre well combined.

    Next, add the dry ingredients to the butter mixture. Beat until the ingredients are well combined. The batter should be smooth and creamy, not thick like traditional chocolate chip cookie dough.

    After you have your cookie bar batter ready, its time to add in the most important ingredient the chocolate! For my gluten free chocolate chip cookie bars, I added semi-sweet chocolate chips to the batter.

    How To Make Gluten Free Shortbread Cookies

  • Cream together butter and sugar in a large mixing bowl. Be sure not to overmix as you don’t want to incorporate too much air into the mixture.
  • Add vanilla extract to the butter mixture and stir until combined.
  • Sift together salt and gluten free flour blend.
  • Gradually add the flour mixture to the butter mixture until combined.
  • Roll the dough out between two pieces of parchment paper, and cut out circles with a cookie cutter.
  • Place the cut outs onto a prepared baking sheet and poke three rows of holes into the cookies with a fork.
  • Freeze the cut outs on the pan as directed in the recipe below.
  • Bake the chilled cookies in the oven as directed until the edges of the cookies are slightly brown and the tops are no longer shiny.
  • Cool the cookies on the pan before moving to a cooling rack. Cool completely before serving.
