Gluten Free Bread Crumbs

Don’t throw away that stale bread or the ends of the loaf. They make great gluten free bread crumbs and you won’t waste any bread.

I typically keep a container or zip lock bag of stale bread or ends in my freezer for when I need gluten free bread crumbs.

If you don’t need any bread crumbs you can also use the stale and leftover bread to make gluten free croutons.

Any type of non-sweet gluten free bread works. White, whole grain, rye … any. And it’s okay to mix and match.

There are two methods to making bread crumbs. They involve the same steps but in different orders.

You can either cut up your bread, place it in a food processor and then bake it to remove the moisture, and then process it again OR you can cut the bread, bake it to remove the moisture, and then process it in a food processor.

I like to the the first one, process then bake. I find that if I bake the bread and then process it, the gluten free bread crumbs turn out too fine.

If you need really fine bread crumbs you can always process the amount you need when you are ready to use them.

What Kind Of Bread To Use

Any.

Honestly, you can make them with store bought bread or homemade, with Italian bread or French baguette.

You can even use your favorite gluten-free bread.

You can use up that lone hamburger bun , the broken hot dog buns, an old dinner roll that was forgotten in the bread box, or that bit of leftover French bread you didn’t manage to eat before it got hard. And of course, the heels .

There is such a wide variety of breads available that you’ll run out time before you run out of bread options.

It really doesn’t matter if you buy your bread at the grocery store or make it at home, there is NEVER a good reason to throw out leftover bread that has gone stale.

Okay, mold.

Mold is a good reason.

If your bread molds, toss it. Blech.

You can combine different types of bread, use different seasonings to match your meal and mood, and even create your own customized breadcrumb recipe that everyone raves about.

BUT do not use old bread rejects that no one liked.

That loaf of bread that turned out gummy and kind of gross? Toss it to the birds. The new’ recipe that your spouse asked you to please never ever make again . the birds, please. Yucky bread will make yucky crumbs.

Oh, you thought breadcrumbs were just ordinary?

Bwahahaha!

MAYBE if you’re just using regular bread crumbs from the store, but you’re going to make fresh crumbs and discover why home cooks around the world have been using them to elevate their cooking.

Gluten Free Italian Breadcrumbs

Bread crumbs are one of those things that are nice to have. I dont like buying packaged or processed foods, however. Or at least I try to minimize it. And, of course, I like them to be gluten-free. I think everyone should know how to make gluten-free breadcrumbs!

So when I need breadcrumbs, I like to make them from scratch. They are actually quite simple to make and are way tastier and healthier than the ones youd buy in a store.

What Kinds Of Breadcrumbs Can I Use

ANY kind! As long as they are plain and unseasoned.

I used regular plain bread crumbs for this Italian Bread Crumbs recipe. But you can use panko, whole wheat, or even gluten-free store-bought breadcrumbs or low carb breadcrumbs. Anything works for this!

You can also make this recipe using homemade breadcrumbs if youre feeling a little extra 🙂

Making Breadcrumbs Without A Food Processor

Enjoy homemade bread crumbs in no time by using alternative kitchen equipment. Although using a food processor is the most efficient way, there are many different options!

For fresh or stale cubed bread, use a blender, spice grinder, or coffee grinder to make your bread crumbs. Process and pulse in smaller amounts and then transfer to a baking sheet.

Wipe down the inside of the spice grinder or coffee grinder thoroughly first. Otherwise, your bread crumbs may end up tasting a little more like oregano and coffee than you hoped.

If you are using dry, toasted bread to make breadcrumbs, you have a few more options most of which you probably have on hand in your kitchen. Ideally, the bread would sit out for a couple of days and then be toasted before using one of these methods.

  • Rolling pin with bread placed inside ziplock bag.
  • Cheese box grater
  • Mallet with bread placed inside ziplock bag.
  • Heavy pot with bread placed inside ziplock bag.

What Type Of Bread Should I Use

Fred Meyer

When making this recipe, use any bread that is gluten-free, either one type or a mixture. This applies if you are making breadcrumbs that arent gluten-free as well.

Frozen, stale, gluten-free bread failures and heels all work well. So dont throw away anything!

If you know you will be making the recipe in a few days, you can also let the bread sit out so it hardens. After processing the bread, the crumbs will take a shorter time to toast and dry out in the oven.

    How To Make Gluten

    Italian Breadcrumbs (Gluten Free)

Obviously, if you dont need or want these breadcrumbs to be gluten-free that is ok! You can make this with ANY bread!

I tested out a few different methods and Ill take you through what worked and what didnt work as well!

    I tried 3 methods:

    Lets go through each one.

Method 1 was baking whole bread slices.

The theory behind baking is, of course, to dry out the bread slices. I found this method to leave the most moisture in the bread.

It feels crunchy when you take it out of the oven, but once you add it to the food processor and create the crumbs, you can really feel the moisture.

Method 2 was to toast the bread. I had the same result as the oven.

Method 3 was to tear the bread into chunks to create more surface area to dry out and bake them. This method turned out to have the best result.

Try making larger triangles by slicing each round into 6 or 8 pieces rather than 12. Then add a slice of ham and a slice of cheese to the top of the triangle before rolling it from base to tip.

Space the triangles farther apart from one another on the baking sheet. The cheese will melt onto the baking tray a bit. Just let it set a few moments after baking and before serving.

Tips For Gluten Free Yeast Breads

Americas Test Kitchen is my most reliable source for the chemistry of baking and understanding why things work, or dont work, with gluten free flour. I trust them and use that knowledge when Im in the kitchen.

  • No single gluten free flour can mimic all the properties of wheat flour. A precise combination of individual flours and starches will always give the best results.
  • Xanthan gum and psyllium husk powder are important binders used in yeast bread recipes. This recipe uses xanthan gum only.
  • Psyllium husk powder has a high viscosity so is able to bind water more effectively than xanthan gum. It creates a sturdy network with the proteins in gluten free flours and adds a wheat flavour to baking that works well in yeast breads.
  • Egg helps with structure in gluten free baking so sometimes there is egg in a recipe where you wouldnt expect it.
  • Resting time is important to allow the completion of the structure of gluten free baked goods. If you taste your dinner rolls right out of the oven they may be gummy or undercooked. Wait and taste again! Thats how youll learn how many minutes they should rest.

How To Store Gluten Free Breadcrumbs

    Gillian

Place completely cooled breadcrumbs in a glass container or a zip lock bag in a cool, dry place. If you aren’t going to use them within a month or so, place them in the freezer.

If you store them in the freezer make sure you bring them to room temperature before you use them.

Why do bread crumbs need to be at room temperature to use?

Like many things you’d bake with or coat with, when you freeze them you pull the moisture out of them. The same goes for gluten free flours, almond flour, and coconut flour.

You need to bring them to room temperature so they have time to defrost and pull moisture back in – otherwise the absorb too much moisture from the other ingredients.

    How To Make Keto Breadcrumbs

First, we gather up our ingredients: almond flour, hemp hearts, Italian Seasoning, and an egg.

Next, we throw it all in a food processor and blend super convenient, right?

This will yield enough to fill 2 baking sheets. So the next step is to split the mixture into 2 equal parts. Roll them out between 2 sheets of parchment paper that have been sprayed with your choice of a safe, keto spray .

Dont worry about them looking pretty or having nice edges since you are going to obliterate those edges anyway.

Then its time to bake! The breadcrumb sheets dont take long and should come out looking golden and crispy.

Finally, allow the sheets to fully cool, break them up into large chunks, then stick them back into the food processor and pulse until you reach breadcrumb texture!

    Easy peasy.
