Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.

How To Store Almond Flour Bread

Like any other bread, youll want to wrap this almond flour bread for storage, so that it doesnt dry out.

Ive kept it on the counter for 3 or 4 days with no problem. It did get a little hard toward the end. Id expect the same thing if I bought wheat bread at the store.

TIP: Dont wrap this low carb bread in plastic wrap or a plastic bag. It will trap moisture and ruin the texture. If it gets a little damp or gummy with time, you can pop it in the toaster to fix that, but usually thats only an issue if storing in plastic.

To get a few extra days out of it, you can store this low carb gluten-free bread in the fridge for up to 1 week. Just wrap it in parchment paper, not plastic.

Another important recipe note is the type of loaf pan. Youll want to use a 7 x 3-inch loaf pan, anything larger and your loaf will be a little flat, which is still usable but not ideal for sandwiches. This type of loaf pan is also a must for many grain-free bread recipes, otherwise, the cooking time will need to be adjusted.

    Which Low Carb Flour To Use For Keto Pumpkin Bread

    The first dilemma when baking keto pumpkin bread is deciding which flour to use.

    The moisture from the pumpkin makes coconut flour seem like the logical choice. After all, it needs a lot of moisture and a little goes a long way. But its very dense.

    And almond flour makes a good crumble, but you want your low carb pumpkin bread to be moist and soft, not crumbly.

    Thats why youre going to use both! When the two mix together, the texture is perfect.

    While the coconut flour is an absolute must in this paleo pumpkin bread recipe, you can trade out the almond flour if you have an allergy .

    Sunflower seed flour is a great substitute. In some recipes, the strong flavor takes over and makes it a poor choice, but thats not the case here.

    What Other Flours Can I Use In This Pizza Crust Recipe

    I have tested this gluten-free pizza crust recipe with Bob’s Red Mill 1-to-1 Gluten Free Flour Blend. It works incredible in this recipe and it’s my other go-to flour blend.

    If you want to mix your own blend for this pizza combine 1 cup white rice flour, ¾ cup brown rice flour, ¼ cup tapioca starch.

    I haven’t tried this gluten-free pizza dough recipe with other flour blends. If you do, please come back and let me know which gluten-free flour blend you used.

    We’ve used this gluten-free pizza recipe several times just this month, and we’ve started passing the recipe on to friends and family member to show them how easy making your own pizza at home can be.

    We usually par-bake a couple of extra gluten-free pizza crusts and store them the in the freezer for super busy nights when we need to make dinner quickly.

    This 5 minute bread literally blew my mind! Wanna know why? Well for starters, it is super easy to make! Only a few ingredients. Throw it in a blender . Then bake in the oven. And after it comes out??? Well, thats when the really good stuff starts happening! Like devouring slice after slice:) This bread is so incredibly soft on the inside and has a moist texture like a loaf of homemade sandwich bread.

    Back when I used to eat wheat, once a week my family would buy homemade loaves of bread from a local baker. It was heavenly and filled with whole grains and amazing yeasty flavor. The texture of this bread reminds me of those soft loaves of bread. So, I thought I would share the yumminess. Enjoy!

    Mixing The Ingredients And Kneading The Dough

    First, mix the yeast and sugar with some warm water to activate the yeast. After 5 10 minutes, it will become bubbly and frothy, which means that the yeast is active. If theres no bubbles and/or foam formation, youll know that its inactive and you should open a new yeast package.

    Next up, prepare the psyllium gel by mixing the psyllium husk with some water. The gel will begin to form within seconds.

    Then:

  • Add the potato starch, brown rice flour, buckwheat flour,
  • and salt to a bowl,
  • and mix thoroughly to combine.
  • Make a well in the middle and add the yeast mixture,
  • the psyllium gel, and
  • the apple cider vinegar.
  • Now, we come to the mixing and kneading stage theres really no right or wrong way to knead gluten free bread, as you dont have to go though the stretching motions youd typically use to build up the elasticity in a gluten-containing wheat bread.

    Once the wet and the dry ingredients are combined, I tend to squeeze the dough through my fingers until smooth and homogeneous. After a few minutes youll notice the dough coming away from the sides and it will be easy to form it into a rough ball.

    While it wont have the same super-stretchy elasticity of a gluten-containing wheat dough, theres enough elasticity there that you can stretch portions of it without them breaking off.

    Once you complete one 360 degree rotation of the dough, you should be left with a ball of dough. Flip it seam side down and rotate in place to seal the seams.

    How To Make Low Carb Bread With Almond Flour

    This almond bread recipe is super easy! Just a few easy steps:

    • Prep. Preheat the oven and line a loaf pan with parchment paper.
    • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
    • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

    TIP: Mix well here to create air bubbles! This will help your bread rise.

    • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

    TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

    Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

    Why Was My Gluten Free Bread Dense

    For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.

    If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two. Mixing it twice will always cause the bread to be denser.

    Are you scooping your measuring cup into the flour? Or spooning the flours into the cups then leveling? You should always spoon then level.

    Otherwise you’ll end up with more flour then you want which causes the bread to be dense.

    Are you storing your flours in the freezer or refrigerator? If flours are stored that way they loose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

    How To Make Sure Your Low Carb Bread Recipe Is Done

    The only really challenging part about this low carb bread recipe is knowing when its done. It will look done before it actually is! And if you take it out too soon, it will fall and worse, it will be gummy inside.

    Here are 2 ways to test for doneness:

  • The toothpick test. Insert a toothpick and check if it comes out clean. But, note that this bread will pass the toothpick test before its fully done. So, check with a toothpick and then continue baking for at least 10 more minutes.
  • The crust test. Another way to tell is that the top should get very hard and crusty. Yes, this low carb bread creates a hard crust! I actually love that, and its an important marker of the bread being done.
  • Oven temperatures vary, so it might take a little experimentation in yours if its not done the first time. But in general, err on the side of more time and not less. You can always cover the top if it starts to burn, though Ive never had to do that.
