The reason I love this new bread recipe so much is it boils down to control. I can control the ingredients that go into this recipe with sorghum flour, and I realize that baking gluten free bread isn’t really that hard. I was able to make this gluten free, dairy-free, soy-free, and corn-free!

My secret to making the gluten free bread flour mix is to use more starch than what I normally use. It keeps the bread fluffy and light. If you have been looking for that perfect sandwich bread, this is it!

What Bread Machines Are Best For Gluten Free Bread

There are several great brands of gluten free bread machines that have a gluten free setting. My friend, Jane, who wrote The Gluten Free Bread Machine Cookbook, likes to recommend the Cuisinart CBK-200 machine. I have an old Breadman Pro, but I do not think they even make it any longer. Many in my gluten free FB group like this Hamilton Beach model.

Do I Need A Dutch Oven To Bake Bread

While not totally necessary, Im a big fan of baking bread in a Dutch oven with a heavy lid. I love the way a Dutch oven produces a high and steady heat. The heavy lid keeps the moisture inside during the first 20 minutes of the bake, allowing the bread to spring up or rise further while cooking.

If you do not have a Dutch oven, no worries? You can make beautiful bread in a large cast iron skillet with another skillet underneath with water to create the steam needed. Do not use glass as it can shatter at high temperatures.

The hardest part about making gluten-free banana bread is smelling it wafting through your house and needing to wait to cut into it! I recommend waiting at least an hour before cutting into it, so that it doesnt break apart while its still warm. After its cooled off, its less likely to fall apart while cutting into it.

Baking The Gluten Free Bread

Once proofed and doubled in volume:

  • turn the bread out onto a piece of baking/greaseproof paper ,
  • score the dough with a sharp knife or a bread lame,
  • transfer the dough into the hot skillet,
  • place the skillet/Dutch oven/combo cooker in the oven,
  • pour hot water into the bottom baking tray,
  • add 3 4 ice cubes around the bread , and
  • close the oven door.
  • Bake the dough with steam at 480 ºF for 20 minutes, then remove the tray with water, reduce the oven temperature to 450 ºF and bake for a further 40 50 minutes.

    For this experiment, I decided to bake a couple of mini loaves by simply replacing the starches and flours in my recipe with a store-bought GF flour mix .

    A Word About Buckwheat Flour

    I have found that if I grind my own buckwheat flour from hulled buckwheat grouts, I get a much lighter and better tasting flour. Its super simple to do. Just grind the groats in a food processor until you get a nice flour, about 2 minutes.

    Store-bought buckwheat flour will have a darker appearance and will have a stronger flavor. If thats what you have, it will still be absolutely delicious.

    How To Freeze Homemade Gluten Free Bread

    Before freezing, allow your freshly baked loaf to cool to room temperature and then slice.

    Place your slices in an airtight container. I found containers at Ikea that are the perfect size, but I also store the slices in a freezer-safe Zip-loc bag , with a slight slant on them so its easy to pull pieces apart.

    You can reheat the frozen bread in a toaster or in a microwave with it wrapped in a tea cloth or paper towel. Start by reheating 30 seconds, and then 10 seconds at a time until warm.

    What Else Do I Need To Make Gluten Free Bread

    active dry yeast gives bread the airy, light texture we all love plus a bit of a nutty flavor. Dormant yeast cells in active dry yeast need to be proofed before baking by dissolving the yeast in warm water and then allowing it to bloom. Adding a bit of honey or sugar helps feed the yeast. A thin layer of fuzzy bubbles should form at the top of the liquid after about 10 minutes, and this is how you know that the yeast is still alive. If it doesnt bloom, your yeast has probably expired.

    1 tbsp honey... to feed the yeast. You can use 1 tablespoon sugar instead if you want to keep the bread 100% vegan.

    psyllium husk acts sort of like a gluten substitute and gives the dough elasticity and flexibility. Use ground whole husk not the fine powder. Do not leave out the crucial ingredient.

    saltbecause salt is life and is the best flavor enhancer.

    olive oil just a titch. I love the flavor it gives and it adds a bit of moisture. You can leave it out if you prefer.

    Yes. This gf pancake recipe works with buttermilk, dairy-free buttermilk , milk, or dairy-free milk.

    I like to use buttermilk or a dairy-free buttermilk to make these gf pancakes because it makes them thicker but you can make gluten free dairy free pancakes using dairy free milk or my mock-buttermilk.

    While baking bread and watching the yeast work its magic as the dough miraculously doubles in size is usually very therapeutic for me, there are days when Ive either: run out of yeast or dont have the time or patience to wait for the bread dough to rise.

    For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.

    If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two. Mixing it twice will always cause the bread to be denser.

    Are you scooping your measuring cup into the flour? Or spooning the flours into the cups then leveling? You should always spoon then level.

    Otherwise you’ll end up with more flour then you want which causes the bread to be dense.

    Are you storing your flours in the freezer or refrigerator? If flours are stored that way they loose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.
