If you cut pop tarts in the size of 2.5 x 4 inch rectangles, you can add 2 tsp tops of your favorite jam. May it be strawberry, blueberry, sour cherry, peach. Whatever you have on hand. A quick note though: When you make vegan pop tarts with jam filling, make sure not to over-fill them. Due to their sugar content and to the high temperature in the oven, the jam will be boiling and will pop the tarts open if you add too much. Poking holes on the top helps, but not necessarily. How Do You Make Gluten

This recipe is not a super quick oneit takes a bit of prep, so it might be a good idea to double the batch and save some for later. Plan at least 90 minutes for the complete recipe. To keep it simple, were using pre-prepared pie crusts, rather than homemade. If you have a favorite gluten-free pie crust recipe, feel free to use that instead.

The first thing you want to do is make the berry chia jam, then preheat the oven and line a baking sheet with parchment paper and roll out the pastry and cut into 12 rectangles. Then spread a bit of peanut butter and jam on 6 of the rectangles and cover with the remaining 6 rectangles and seal edges with a fork. Bake in the oven for 25-30 minutes and place on a cooling rack and allow to cool. Make the glaze while cooling and frost as directed after they are cool . Serve with boiled eggs and cantaloupe and store in the fridge or freezer until ready to eat! Youll love them!

What Type Of Jam Is Best For Making Homemade Pop Tarts

Pop tarts have a lot of sugar, especially the store bought kind, but honestly even the homemade version is a bit over the top. You don’t want such sickeningly sweet pop tarts that make your teeth ache when you bite into them do you?! No way!!

In my homemade pop tart baking escapades over the years I have tried just about every type of jam and jelly available at the grocery. My absolute favorite jam to use is actually a sugar free, seedless jam.

I find that sugar free seedless jam stays in place when I’m stuffing and sealing the pop tarts, it’s less likely to become super liquid and ooze out of the dough when baking, and it helps to cut through the sweetness of the icing.

How To Make Homemade Gluten

TO MAKE THE GLUTEN-FREE PASTRY DOUGH

  • Chop the butter into small chunks and place in a small bowl. Put the butter, shortening, and water into the freezer for about 5 minutes or until really cold.
  • Add the gluten-free flour, sugar, and salt in a large bowl and stir to combine the ingredients.
  • Add the butter and shortening to the flour mixture and mix until the butter and shortening are incorporated into the flour. I use my stand-up mixer with the paddle attachment, but you can use a hand mixer or a pastry cutter.
  • Add in the eggs, water and apple cider vinegar and mix until the dough starts to form and all the ingredients are combined. The dough will be sticky.
  • Shape the dough into a ball, wrap in plastic wrap and refrigerate for at least 45 minutes.

TO ASSEMBLE THE PASTRIES

  • Preheat your oven to 350°F.
  • Unwrap the dough ball, cut the dough ball in half and place the half onto parchment paper lightly floured with gluten-free flour.
  • Shape the dough half into a rectangle. Lightly flour the pastry with gluten-free flour, and using a rolling pin, roll out the dough to about ¼-inch thick.
  • Using a pizza cutter, cut the dough into a 9-inch by 8-inch rectangle.
  • Cut out the dough into 3-inch by 4-inch rectangles. I used a ruler as a guide.
  • Place the dough rectangles onto a parchment-lined baking sheet.
  • Repeat the steps with the other half of the dough ball to make 8 more rectangles. These will be the tops of the pastries. You will have 16 rectangles in total .

How Do You Serve Gluten

Our yummy breakfast pastry is tasty at room temperature but even more delectable when warmed slightly. Simply serve right out if the oven, toast them in the toaster or pop them in the microwave for 15 seconds.
