Can I Use A Bundt Pan To Make This Gluten Free Angel Food Cake

I don’t suggest using a bundt pan for this recipe. An angel food cake pan is inexpensive and totally worth having. You will need to run a knife around the edge of the pan to get the cake to release. Using a bundt pan with it’s intricate edges makes that really hard .

I prefer a two piece angel food cake pan. They cost a bit more, but I think it’s worth it to spend more for a pan that makes getting your cake out really easy! For the two piece pan you can run a knife around the edges to release the sides and then run a knife along the bottom of your cake to get the second piece off. You are left with a nice clean edge and no fighting to get your cake out of the pan.

Can I Buy Gluten

If youd love to enjoy angel food cake while still avoiding gluten in your diet, you only really have two options: make it yourself from scratch or buy a mix.

Ive only been able to find one brand of gluten-free angel food cake mix and that is from the Kinnikinnick brand. This cake mix contains sugar, potato starch, white rice flour, cream of tartar, and salt.

Luckily, this brand tests for gluten, dairy, tree nuts, peanuts, and soy, so its a good option for you on a gluten-free diet, and also great if you avoid dairy.

Freeze A Plain Angel Food Cake

When you have baked or bought an angel food cake, but you dont need it right away, you can freeze it for up to 6 months. Wrap the cake completely in two layers of plastic wrap or foil, making sure that it is completely covered.

Then slide it into a heavy-duty freezer bag. If you have a large enough rigid container, go ahead and place the bag in that as well to protect the cake from being crushed in the freezer.

While you can freeze a whole cake, you shouldnt thaw and re-freeze the cake. Therefore, only use this method if you are going to serve and eat the whole cake at one time.

Using Leftover Egg Yolks

Now that you have your eggs separated, what do you do with the yolk? It seems wasteful to throw all of that goodness away.

One option is to freeze the egg yolks for a later use. If you are planning on freezing, its important to note they do thicken when frozen.

To keep this from happening, beat the yolks until they are completely smooth with salt before freezing. For every four egg yolks, add 1/8 teaspoon of salt.

Store the yolks in either an airtight freezer bag or in ice cube trays and label with the date. Egg yolks can be frozen for up to one year. When you are ready to use, thaw overnight in the refrigerator or run bag under cold water until thawed.

How To Cool Gluten Free Angel Food Cake

You’ll want to cool your gluten free angel food cake upside down. Yep, you read that right! The egg whites are what gives the cake its structure and the egg whites aren’t completely set until they’re cool. If you don’t cool it upside down the cake could collapse.

Many angel food cake pans come with feet around the edges to easily cool upside down. If yours doesn’t, you can invert the center ring onto the neck of a bottle for the same effect.

Tips For Making Gluten Free Angel Food Cake

Angel food cake really is a finicky recipe. You’ll want to follow the instructions exactly and not substitute any ingredients.

If gluten free angel food cake is underdone, it will collapse. It’s better to overcook your angel food cake than pull it out of the oven too soon.

I don’t recommend using liquid egg whites because not all liquid egg whites are the same. After the eggs are broken and separated, the whites go through pasteurization which changes the consistency of the egg whites. Some people have good luck with some brands, while others don’t.

When whipping the eggs, keep whipping them until stiff peaks form. Don’t overbeat them.

Don’t grease the angel food cake pan. After this gluten free angel food cake bakes, let it cool for 10 minutes in the pan, then invert the pan onto a plate. As the cake coils, it will shrink away from the pan and settle onto the plate.

How To Make Easy Gluten Free Angel Food Cake

  • First the dry ingredients gluten free flour, cornstarch, sugar, baking powder, and salt are sifted together a couple times to keep the cake light and airy instead of dense. This is especially important when using gluten free flour, which has a tendency to be heavier.
  • Next the egg whites are beaten with cream of tartar and extracts. Once they are foamy, gradually add the sugar, a couple tablespoons at a time. This gives time for the sugar to absorb into the egg whites and to not become grainy. Beat until all the sugar has been incorporated and stiff, glossy peaks form.
  • Now the gluten free flour mixture gets folded into egg whites, a few tablespoons at a time until it is all gently mixed.
  • Spoon the batter into an UNGREASED angel food cake tube pan and smooth the top with a rubber spatula.
  • Bake the cake on the LOWER-MIDDLE rack for 50-55 minutes, or until the top is golden brown and the cake springs back when pressed.
  • After the cake is finished baking, invert the cake pan onto the counter cool completely before serving, at least 2 to 3 hours.

    I have found that the best way to measure all-purpose gluten-free flour is to use the spoon & level method. It is always best to use a dry measuring cup to measure flour, not glass measuring cups used for liquid.

    Use a spoon to scoop the flour out of the bag into a measuring cup. After spooning the flour into a measuring cup, use the back of a knife to level the flour off of the measuring cup. I do this over a bowl to catch the flour.

    Please do not use a measuring cup to scoop the flour directly out of the bag or you could get more flour than the recipe calls for.

    Keep that food processor out cuz youll need it for making the strawberry powder. Dump two whole bags of freeze dried strawberries into the same bowl of your food processor and give it a good whirl until the strawberries are pulverized into a powder. Divide the powder equally into two bowls. Youll use half for the cake and the other half for the frosting.

    Defrosting Angel Food Cake

    You can defrost your slices of angel food cake by placing the amount you want in the refrigerator before you head out in the morning. Or, if you are in a hurry, you can unwrap it and pop it in the microwave for about 30 seconds.

    Either way, you should eat the cake right away, rather than trying to save it for more than a few hours after defrosting. Thawed angel food cake is likely to become dry and crumbly after defrosting. The sooner you eat it, the better it will be.

    This is an interesting question Apparently the purists say that Angel Food Cake requires nothing extra to make it rise. However, the very old Good Housekeeping Cook Book from which this recipe was de-glutened was very clear in adding a small amount of baking powder. For that reason, I have never made it without and thus, it is included as one of the required ingredients.

    If you are Coeliac, be sure your baking powder is certified gluten free.

    My Inspiration For Making A Gluten Free Angel Food Cake

    Angel Food Cake holds a sentimental place in my nostalgic memory. It is a trip into my childhood, most often associated with Christmas and the need to use up excess egg whites. My mother was a keen baker of all things cake But when Angel Cake was created, the excitement for me was elevated.

    Memories of the slightly sticky, bouncy, pillowy, marshmallowy texture the sweet white vanilla sponge and the big doughnut tin remain strong. A few years ago , I set about creating a perfect gluten free replica.

    The need to use egg whites after Christmas appears to have followed me into adulthood. The use of egg yolks for Christmas recipes means that the cake is usually created in January at GFHQ.

    Using the original recipe from my mothers Good Housekeeping Cook Book as a template, this recipe stays as true to the original as possible. It simply replaces wheat flour with a carefully balanced and blended combination of easily available gluten free alternatives. It smells and tastes exactly as I remember.

    How To Tell When The Cake Is Done

    Typically, you would insert a toothpick into a cake to see if its done, but this isnt the case with a porous cake like angel food cake. So how do you know?

    When your angel food cake is done, it will spring back when lightly touched. You should not see any type of indentation left from your finger if you do, throw it back in the oven to bake a little longer. The outside should also be a beautiful golden color. Once you have the color and the spring you know its time to dig in.

    Another way to test your made from scratch cake is by using a thermometer. When inserted in the center it should read at least 205 degrees Fahrenheit to keep it from collapsing.

    How Should I Store My Angel Food Cake

    Gluten free angel food cake can dry out really easily, so I suggest as soon as the cake cools you either wrap it in plastic wrap or cut it into pieces and store it in a sealed bag or container.

    The cake can be left out on the countertop for a couple of days, but then after that it needs to go in the refrigerator to be stored up to a week. To freeze the cake, wrap the pieces in tinfoil and then place in a sealed bag or container and freeze for up to a month.
